Provided by sandycon

Number Of Ingredients 12

10 ounces butter, soft, plus more for the pan
1 3/4 cups all-purpose flour, plus more for the pan
1/2 teaspoon baking powder
1/4 teaspoon kosher salt
1 cup sugar
5 large eggs
Zest of one lemon, finely grated
1 teaspoon pure almond extract
2 cups almond flour or almond meal
1 cup semisweet chocolate chips
1/2 cup sliced blanched almonds, lightly toasted
Confectioners' sugar, for dusting

Steps:

  • Arrange a rack in the center of the oven, and heat to 350°F. Butter and flour the bottom and sides of a springform pan. Sift together the all-purpose flour, baking powder, and salt. Cream the butter and sugar in a mixer at medium-high speed until light and fluffy, about 2 minutes. Beat in the eggs, one at a time. Beat in the lemon zest and almond extract, then raise the speed to high and beat the batter until very light, a minute or more. At low speed, mix in half of the sifted flour mixture, beating just until it is incorporated; beat in half the almond flour. Beat briefly at medium speed to a smooth batter, then, again on low speed, mix in the chocolate chips, just until evenly distributed. Pour the batter into the prepared pan and spread it to an even layer. Sprinkle the almonds over the top. Bake the trot for 45 minutes, rotating the pan about halfway through the baking time. The cake is done when the top is golden brown and a knife inserted in the center comes out clean. Cool the cake in the pan for about 10 minutes on a wire rack. Run a knife around the edge of the cake, open the sprint and remove the side ring. Cool the cake completely before serving. Cut the cake in wedges and dust with confectioners' sugar or serve with whipped cream, ice cream or zabaglione.

Time 1h20m

Yield 8 servings

Number Of Ingredients 11

1 1/4 cups blanched, sliced almonds
12 tablespoons unsalted butter, diced, plus more for greasing
8 ounces bittersweet chocolate, chopped
2 tablespoons breadcrumbs
3/4 cup granulated sugar
3 large eggs, separated, plus 3 egg yolks
Grated zest of 1 orange
1 tablespoon dark rum
1/2 teaspoon salt
Confectioners' sugar, for garnish
Whipped cream, for garnish (optional)

Steps:

  • Preheat the oven to 350 degrees. Toast the almonds on a baking sheet until lightly golden, 6 to 7 minutes. Cool slightly, then pulse in a food processor until finely ground, but not pasty.
  • Melt 12 tablespoons butter and the chocolate in a heatproof bowl set over a saucepan of simmering water (do not let the bowl touch the water). Stir until the chocolate is smooth, then remove from the heat and cool slightly. Grease the bottom and sides of a 9-inch springform pan with butter and coat with the breadcrumbs, tapping out the excess.
  • Set aside 2 tablespoons granulated sugar. Combine the 6 egg yolks and the remaining sugar in a stand mixer and beat with the paddle attachment on medium-high until thick and pale, about 3 minutes. Add the orange zest, rum and salt, then beat in the melted chocolate until smooth. Mix in the ground almonds until just combined.
  • In a clean bowl, beat the 3 egg whites with a mixer until foamy. Gradually beat in the reserved 2 tablespoons granulated sugar on high speed until almost stiff. Stir one-third of the whites into the chocolate batter, then gently fold in the rest. Spread the batter in the prepared pan and bake until the top is firm and cracked (a toothpick inserted into the cake will be fudgy), 35 to 40 minutes. Cool on a rack 10 minutes, then run a knife around the edge of the pan and remove the ring. Serve warm or at room temperature. Garnish with confectioners' sugar and whipped cream, if desired.

Valuable Tips for Making Almond Torta with Chocolate Chips Recipe

Valuable Tips for Making Almond Torta with Chocolate Chips Recipe

Almond torta with chocolate chips is a delicious and indulgent dessert that can be enjoyed any time of the year. This recipe combines the nutty flavor of almonds with the richness of chocolate chips to create a dessert that is sure to please. However, making this dessert can be a bit daunting, especially if you’re new to baking. In this article, we will provide some valuable tips for making almond torta with chocolate chips recipe that will help you create a perfect dessert every time.

1. Use Quality Ingredients

The quality of the ingredients you use can greatly affect the final taste and texture of your almond torta with chocolate chips recipe. Using high-quality almonds and chocolate chips will ensure that your dessert tastes great and has the desired texture. Invest in good quality chocolate chips that are made from real cocoa butter and have a high percentage of cocoa solids. Using fresh, high-quality almonds will also add to the flavor of your torta.

2. Use a Food Processor or Blender to Grind Almonds

To get the best texture for your almond torta, it's important to grind the almonds finely. Using a food processor or blender to grind the almonds will ensure that they are ground uniformly and will give you the desired texture for your torta. Be sure to pulse the almonds gently in your food processor or blender, as over-processing can result in almond flour, which may not give you the desired texture for your torta.

3. Use a Springform Pan

Springform pans are ideal for baking tortas as they have a removable base. This makes it easy to remove the torta from the pan without damaging it. Springform pans also have a tight seal that prevents batter from leaking out, making it easier for you to bake the perfect torta.

4. Preheat Your Oven

Preheating your oven is important as it allows your torta to cook evenly. Make sure that your oven is preheated to the correct temperature before placing your torta in it. If your oven is too cold, your torta may be undercooked and if it’s too hot, it may burn the edges of the torta.

5. Line Your Pan with Parchment Paper

Lining your pan with parchment paper will make it easier to remove your torta from the pan. Simply line the bottom of your springform pan with parchment paper, and your torta will come out easily without any damage. This is especially important if you’re using a new recipe, as it can be hard to predict how your torta will turn out.

6. Use a Light Hand When Mixing

It's important to mix your batter well, but it’s equally important to use a light hand when mixing. Over-mixing can result in a dense and tough torta, so use a light hand when mixing the batter. Mix the ingredients until they are just combined, and then stop. This will help you get the desired texture for your torta.

7. Add Chocolate Chips to Batter

Adding chocolate chips to batter will add a rich and delicious flavor to your almond torta. Be sure to add the chocolate chips after you’ve mixed the batter so that they are evenly distributed. You can also add a few extra chocolate chips on top of the batter before baking, to make your torta look more attractive.

8. Don’t Over-bake Your Torta

Over-baking your torta can result in a dry and tough dessert that no one will enjoy. When baking almond torta with chocolate chips, it's important to keep an eye on the time and remove it from the oven as soon as it's ready. A good rule of thumb is to check your torta 5-10 minutes before the recommended baking time, as every oven is different.

9. Let Your Torta Cool Completely

Letting your torta cool completely is important as it will help it set properly. Once your torta is baked, remove it from the oven and let it cool in the pan for about 10 minutes. Then, remove the torta from the pan and let it cool completely on a wire rack. This will help you get the desired texture for your torta.

10. Serve with Vanilla Ice Cream or Whipped Cream

Finally, serve your almond torta with chocolate chips with vanilla ice cream or whipped cream for a delicious and indulgent dessert that everyone will enjoy. The cool and creamy texture of ice cream or whipped cream goes perfectly with the rich flavor of almond torta with chocolate chips.

Conclusion

Almond torta with chocolate chips is a delicious dessert that is perfect for any occasion. By using these valuable tips, you can make a perfect almond torta with chocolate chips recipe every time. Remember to use quality ingredients, grind your almonds well, use a springform pan, preheat your oven, line your pan with parchment paper, use a light hand when mixing, add chocolate chips to your batter, don't over-bake your torta, let it cool completely, and serve it with vanilla ice cream or whipped cream.
