PEACH PIE WITH ALMOND CRUMBLE TOPPING

Categories     dessert

Number Of Ingredients 12

Sweet dough for 1 crust pie
1 cup all-purpose bleached flour
3 tablespoons sugar
1/4 teaspoon freshly grated nutmeg
1/2 cup sliced almonds
6 tablespoons unsalted butter, melted
3 pounds firm, ripe, yellow fleshed free stone peaches, about 8 or 9 medium peaches
1/2 cup sugar
2 tablespoons all-purpose bleached flour
1/2 teaspoon almond extract
1/8 teaspoon freshly grated nutmeg
2 tablespoons cold unsalted butter

Steps:

  • To make topping: Combine flour, sugar and nutmeg in a mixing bowl; stir well to mix and stir in sliced almonds. Stir in butter evenly. Set aside for 5 minutes, then, using your fingertips, break the mixture into 1/4 to 1/2-inch crumbs. Set aside again while you prepare the filling.
  • Preheat oven to 400 degrees and set racks at middle level. Roll out bottom crust and arrange in 9-inch Pyrex plate.
  • To make filling: Peel the peaches by cutting a cross in the blossom end of each and dropping them three at a time into a pan of boiling water. Remove after 20 or 30 seconds with a slotted spoon or skimmer and drop them into a bowl of ice water. If the peaches are ripe, the skin will slip off easily. If it does not, remove the skin with a sharp stainless steel paring knife. (If you peel it with a knife, include an extra peach for what you have peeled away.) Hold each peeled peach gently in your left hand over a mixing bowl (if you are left handed reverse.) With a stainless steel paring knife make a cut through to the pit, from stem to blossom end. Make another cut about 3/4-inch to the right of the first one along the outside of the peach. Angle the knife blade back so the cuts meet at the pit. Twist the knife blade upward slightly as a wedge of peach will fall into the bowl. Continue in the same manner around the peach, cutting it into 8 to 10 wedges. Discard the pit and repeat with remaining peaches. Add remaining ingredients, except the butter, to the peaches and stir gently with a rubber spatula to combine. Pour filling into the prepared pastry shell and smooth. Dot with the butter.
  • Scatter the crumb topping evenly over the filling. Place pie on the bottom rack of the oven and bake for 15 minutes. Lower the temperature to 350 degrees and move pie to the middle rack. Bake another 30 minutes, or until the crust and crumble are a deep golden and the juices are just beginning to bubble up. Cool the pie on a rack and serve warm or room temperature.

ALMOND CAKE WITH PEACHES AND CREAM

Almond Cake With Peaches and Cream image

This tender, golden cake, adapted from Lindsey Shere's "Chez Panisse Desserts," walks the line between dense and light, with a fine, moist crumb and deep marzipan flavor that comes from a combination of homemade almond paste and a touch of almond extract. Easily made in a food processor, it's a versatile cake that you can dress up any way you like. Here, it's topped with peaches and cream, but it's just as good with berries, nectarines, plums or poached pears. Or leave it plain for a more restrained dessert or afternoon snack. You can vary the nuts for the paste here, too. Substitute unsalted roasted almonds for a toasty, earthy flavor; hazelnuts for woodsy notes; and pistachios plus a dash of orange blossom water for a heady, floral notes. This cake will keep for up to two days well wrapped at room temperature or five days in the fridge.

Time 1h30m

Yield 10 to 12 servings

Number Of Ingredients 12

1 1/4 cups/280 grams softened unsalted butter, plus more for the pan
1 cup/128 grams all-purpose flour, plus more for the pan
1 packed cup/125 grams almond flour or sliced, blanched almonds
1 cup/125 grams confectioners' sugar, plus more for serving
6 large eggs plus 1 egg white, at room temperature
1/2 teaspoon almond extract
1/2 teaspoon fine sea salt
1 1/4 cups/250 grams granulated sugar
2 teaspoons vanilla extract
1 1/2 teaspoon baking powder
Sliced peaches, for serving
Whipped crème fraîche or whipped cream, for serving

Steps:

  • Heat oven to 325 degrees. Butter and lightly flour a 9- or 10-inch springform pan.
  • Place almond flour and confectioners' sugar in a food processor and pulse to combine. Add egg white, almond extract and 1/4 teaspoon salt, and process until it all forms a paste.
  • Add granulated sugar to the food processor and pulse until everything is well combined and crumbly. Add butter and vanilla, and continue processing until light and fluffy, about 2 minutes. With the machine running, add eggs one at a time, processing until smooth between eggs.
  • Stop the machine, scrape down the sides with a rubber spatula, and add flour, baking powder and remaining 1/4 teaspoon salt. Pulse a few times, until the dry ingredients are just integrated. (Be careful not to overprocess.)
  • Pour the batter into the prepared pan. Bake until the cake is golden on top and a toothpick inserted into the center comes out clean, about 60 to 70 minutes for a 10-inch pan and 70 to 80 minutes for a 9-inch pan. Transfer the pan to a wire rack and let cake cool completely before unmolding and serving.
  • Put the peach slices in a bowl and taste a slice. If they seem tart, sprinkle peaches with a little confectioners' sugar.
  • Just before serving, dust the top of the cake with confectioners' sugar. You can serve slices of the cake with the peaches and cream on the side or dollop some whipped cream on top of the cake and top with the peaches before cutting.

Almond topped spiced peaches are a delicious dessert that make use of fresh and ripe peaches to create a quintessential summer treat. This dessert has a perfect balance of sweetness and crunch from the almond topping, which also adds a nutty flavor to the dish. If you're planning on making this dessert, there are some valuable tips you should keep in mind to create the best version possible. In this article, we'll discuss some of these tips so that you can create an almond topped spiced peaches recipe that your friends and family will love.

Choosing the Right Peaches

The first step to making almond topped spiced peaches is selecting the right peaches. This will mean choosing ones that are ripe yet firm. A ripe peach will have a fragrant smell, and it should feel heavy for its size. When you gently press the peach, it should give a little, but it shouldn't feel too soft or mushy. When choosing peaches, make sure to pick ones that are free of bruises, cuts or any signs of mold. Once you've selected your peaches, it's time to prepare them for the dish.

Preparing the Peaches

To prepare peaches for this dish, you'll need to peel them, remove the pit, and cut them into slices or wedges. Peeling peaches is easy if you first blanch them in boiling water for 30-60 seconds and then transfer them to cold water. This will loosen the skins, making them easy to peel. Once the peaches are peeled, halve them and remove the pit. You can then cut them into slices or wedges, depending on your preference.

Spicing Things Up

When it comes to spicing up your almond topped spiced peaches recipe, there are various options to choose from. A lot of people will opt for a cinnamon-sugar topping, which is a classic pairing with peaches. You can also add ginger or nutmeg to the dish for a spicier kick. If you're feeling adventurous, you can try adding star anise or cardamom to give the dish a unique flavor. When spicing up your peaches, keep in mind that you don't want to overwhelm the natural sweetness of the fruit; ensure that the spices complement the peaches, making them even more delicious.

Add a Topping

The almond topping is what sets almond topped spiced peaches apart from other peach desserts. To make this topping, you'll need blanched almonds, sugar, flour, and butter. Make sure that the almonds are finely chopped, as you don't want large chunks of nut in the topping. Mix the ingredients until the butter is well distributed and the mixture is crumbly. Once you have your almond topping, sprinkle it generously over the spiced peaches before baking.

Baking the Dish

When it comes to baking almond topped spiced peaches, you'll want to ensure you have preheated the oven to about 375 degrees Fahrenheit. Place the peaches in the baking dish, and sprinkle the almond topping over the peaches until they are completely covered. Bake your dish for 20-25 minutes or until the topping is crispy and golden brown. Once done, remove your dish from the oven and let it cool for a few minutes before serving.

Serving Almond Topped Spiced Peaches

Almond topped spiced peaches are best served warm with a scoop of vanilla ice cream or whipped cream on top. If you're feeling fancy, you can also sprinkle some chopped almonds or cinnamon over the dessert for added garnish. It's best to serve this dessert immediately after baking, so the topping is still crunchy and hot, adding to the overall taste experience.

Conclusion

If you're looking for a sweet dessert to make this summer, almond topped spiced peaches are a great option to try. When making this dish, remember to choose ripe, firm peaches and prepare them correctly. Spicing up your dish should complement the sweetness of the peaches, and adding the almond topping is essential for the perfect crunch. When you've baked your dish to perfection, serve it warm with your favorite toppings for a delectable summer dessert.
