1 1/2 cups whole natural almonds (8 ounces)
1 1/2 cups sugar plus additional for coating work surface
6 ounces Swiss or other fine-quality semisweet or bittersweet chocolate, chopped
1 1/2 teaspoons cinnamon
1/2 teaspoon ground cloves
1/4 cup egg whites (from about 2 large eggs)

Steps:

  • In a food processor combine almonds with 1 1/2 cups sugar and pulse until ground fine (do not overprocess or mixture will become warm and melt chocolate when added). Add chocolate and pulse until ground fine. Add spices and pulse twice. Add whites and pulse until mixture forms a stiff dough, adding 1 teaspoon water if necessary. Line 2 baking sheets with parchment paper or foil. On a surface coated with additional sugar press out or roll dough about 1/4 inch thick. With bottom of fork held facing down and tines touching dough at 60-degree angle, score dough about 1/16 inch deep by pulling fork across in a series of parallel vertical lines. With a 2-inch heart-, star-, and/or clover-leaf-shaped cutter cut out cookies and transfer to prepared baking sheets. Press dough scraps together and cut out more cookies in same manner. Let cookies stand, uncovered, at room temperature 3 hours. Preheat oven to 325° F. Put cookies in oven and immediately reduce temperature to 300° F. Bake cookies, switching position of sheets in oven halfway through baking, 10 to 15 minutes, or until they are just firm (do not overbake or cookies will be hard), and cool on sheets on racks. Keep cookies in an airtight container up to 2 weeks.

2 teaspoons Chinese five-spice powder
1/2 cup butter or margarine, softened
1 egg
1/2 cup sliced almonds
3 tablespoons coarse white sparkling sugar

Steps:

  • Heat oven to 350°F. In large bowl, combine cookie mix and five-spice powder until blended. Stir in butter and egg until soft dough forms. Stir in almonds.
  • Roll dough into 36 (1-inch) balls. Dip one side of each ball into coarse sugar. Place balls, sugar side up, 2 inches apart on ungreased cookie sheets.

1/2 teaspoon almond extract
1-1/4 cups all-purpose flour

Dash salt
1/2 cup chopped almonds

Steps:

  • In a bowl, cream butter and sugar; add egg substitute and extract. Combine dry ingredients; add to the creamed mixture. Stir in almonds. Drop by rounded teaspoonfuls onto baking sheets coated with cooking spray. Bake at 350° for 9-11 minutes or until edges are golden brown. Remove to wire racks to cool.

1 organic apple
1/2 cup organic butter, softened (1/2 cup)
1/4 cup honey
1 egg (organic)
1 cup almond flour
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon baking soda
1/8 teaspoon salt

Steps:

  • In a bowl mix together almond flour, cinnamon, nutmeg, baking soda and salt, set aside.
  • Peel and finely grate the apple. Wrap the pulp in a paper towel and squeeze out the juice. Put the pulp in the bowl with the flour mix and DISCARD the juice.
  • Add the egg, butter and honey to the flour, mix well.
  • Butter the cookie sheets and drop the dough in small mounds, 8 per cookie sheet.
  • Place in oven preheated at 350 degrees F. for 10 minute or until edges are browned and center is still light in color.
  • After baking place cookie tray in freezer for 5 minutes BEFORE removing the cookies. Cookies must be removed very carefully and placed single layered between sheets of wax paper. Cookies will be very flat and fragile. Once cooled keep in air tight container. Makes 18.

2 cups whole natural almonds
1 1/4 cups sugar
2 sticks (1 cup) cold unsalted butter, cut into bits
2 1/2 cups all-purpose flour
1 whole large egg, beaten lightly
1 1/2 teaspoons freshly grated lemon zest
3 tablespoons cinnamon
1/8 teaspoon ground cloves
an egg wash made by beating together 2 large egg yolks
1/2 cup finely chopped blanched almonds

Steps:

  • In a food processor pulse whole almonds with 1/2 cup sugar until ground fine. In a large bowl with a pastry blender or with your fingertips blend butter and flour until mixture resembles coarse meal. Add remaining 3/4 cup sugar, almond mixture, whole egg, zest, cinnamon, and cloves and stir until mixture forms a smooth dough. (Work dough well by hand if necessary.) Chill dough, wrapped in plastic wrap, at least 2 hours and up to 1 day.
  • Line baking sheets with foil.
  • Divide dough into 4 pieces. Lightly flour 1 piece of dough, keeping remaining dough chilled and wrapped in plastic wrap, and on a lightly floured surface roll out dough 1/4 inch thick. With a 1 1/2- to 2-inch cutter cut out cookies, chilling scraps, and arrange about 1/2 inch apart on baking sheets. Make more cookies with 3 remaining pieces of dough and scraps, pressed together, in same manner. Let cookies stand, uncovered, at room temperature at least 4 hours and up to 12.
  • Preheat oven to 350°F.
  • Brush cookies lightly with egg wash and sprinkle with blanched almonds. Bake cookies in batches in lower third of oven 15 to 20 minutes, or until golden, and cool on racks. Cookies keep in an airtight container at room temperature 2 weeks.
