Categories     Dessert

Time 30m

Number Of Ingredients 7

3 cups unbleached all-purpose flour
2 tsp baking powder
1 cup salted butter, (cold and cut into chunks)
1 cup sugar
1 egg
3/4 tsp pure vanilla extract
1/2 tsp pure almond extract

Steps:

  • Position a rack in the center of the oven and preheat the oven to 350F.
  • Line three cookie sheets with parchment paper.
  • In a medium bowl, whisk together the flour and baking powder. Set this mixture aside.
  • In the large bowl of a stand mixer fitted with a paddle attachment, cream together the butter and sugar until combined and fluffy. Beat in the egg and extracts, mixing until combined.
  • Add the flour mixture in three parts, mixing on low speed. Scrape down the sides and bottoms of the bowl as needed. After the last addition, the dough will look very thick and crumbly.
  • Prepare a rolling surface and roll out a portion of the dough. Cut as many shapes from the dough as possible and place them on a prepared cookie sheet, about 2 inches apart.
  • Place the cookie sheet in the freezer for 10 minutes. Freezing the cookies will help keep them from spreading. Meanwhile, knead the scraps and remaining dough together and continue the rolling, cutting, and freezing process on a second cookie sheet.
  • After freezing, immediately bake the cookies on the center rack of your oven for 9 to 12 minutes (for 3.5 to 4-inch cookies), or until they appear done in the center. The baked cookies won't change much in color.
  • Remove the cookies from the oven and let them cool on the cookie sheets for 2 minutes. With a thin cookie spatula, transfer the cookies to a wire rack to cool completely.

The word "short" in the recipe title is a promise of melt-in-your mouth tenderness. That's the butter doing its job.

Provided by Food Network Kitchen

Categories     dessert

Time 1h45m

Yield 18 wedges

Number Of Ingredients 8

1/2 cup raw almonds with skins, plus about 18 whole almonds for decorating
2/3 cup sugar, plus more for top
14 tablespoons unsalted butter (7 ounces, 1 3/4 sticks), softened, cut into pieces
2 teaspoons pure vanilla extract
1/4 teaspoon almond extract
1/2 teaspoon fine salt
1 1/2 cups all-purpose flour
1 large egg white, beaten

Steps:

  • Preheat oven to 325 degrees F. Blend and pulse the 1/2 cup nuts in a food processor with the sugar until mixture resembles coarse sand. (If there are a couple small chunks of nuts that is fine.) Add the butter, vanilla and almond extracts, and the salt, and pulse until creamy. Add the flour and continue to pulse to make a soft dough.
  • Turn the dough out into a 9-inch tart pan and spread it out evenly with an off-set spatula. Dip the spatula in a little warm water to help smooth and even the surface of the shortbread. Cover and freeze until firm, about 20 minutes.
  • Put the tart pan on a baking sheet and dock (prick) the dough all over with a fork. Generously sprinkle the top of the shortbread with sugar. Toss the remaining whole almonds in the egg white; evenly arrange and press the nuts into the dough around the edge of the pan. Bake until golden brown and set, about 1 hour and 10 minutes.
  • Cool the short bread in the pan on a rack for 10 minutes. Carefully remove the tart ring and cut the shortbread with a sharp knife into wedges, each with a nut. Cool shortbreads on a rack completely. (Alternatively present the shortbread as 1 large cookie. Cool the shortbread in the pan completely and remove the tart ring. Cut the shortbread into wedges as desired.) Serve. Store in a tightly sealed container for up to 5 days.

Almond shortbread cutouts are one of the most popular cookie recipes because of their rich, buttery flavor and melt-in-your-mouth texture. These cookies are perfect for any occasion or holiday and always a crowd-favorite. If you're planning to make almond shortbread cutouts, here are some valuable tips to enhance your experience in baking these amazing treats.

Tip 1: Use Fresh Ingredients

To ensure that your almond shortbread cutouts turn out and taste great, you need to use fresh ingredients. It's important to use unsalted butter, all-purpose flour, granulated sugar, almond extract, and chopped almonds from a new package or container. Using fresh ingredients will not only improve the taste of your cookies but it will also ensure that your cookies come out the way you want them to.

Tip 2: Chill the Dough

To make sure that your almond shortbread cutouts hold their shape and have the perfect texture, it's essential to chill the dough. Chilling the dough will help it firm up and make it easier to roll out and cut into shapes without cracking or breaking. Apart from that, chilling the dough intensifies the flavors and has a significant impact on the final texture of the cookie.

Tip 3: Roll the Dough Evenly

When you are ready to roll out your dough, make sure that you do it evenly. Roll out the dough on a lightly floured surface to a thickness of about 1/4 inch. Using a rolling pin guide can help you maintain a consistent thickness. Irregularities in thickness could cause the cookies to bake unevenly, resulting in some being burnt while others are not fully baked.

Tip 4: Use High-Quality Cookie Cutters

Cookie cutters can make or break a cookie recipe. When it comes to making almond shortbread cutouts, you want to make sure that you use high-quality cookie cutters. Using cheap plastic cutters can cause your cookies to break, making it hard to get the exact shape you want. A high-quality metal cutter will give you clean, precise cuts and allow you to create beautiful shapes that are well defined.

Tip 5: Bake Your Cookies on Parchment Paper

Baking your almond shortbread cutouts directly on a cookie sheet could result in uneven baking and discoloration on the bottom. To avoid this, make sure to line your cookie sheet with parchment paper or silicone baking mats. Parchment paper will help your cookies bake evenly and prevent them from sticking to the pan, making it easier to transfer them to a cooling rack.

Tip 6: Use Egg Wash for a Shiny Finish

If you want your almond shortbread cutouts to have that shiny finish, use an egg wash. Brushing the top of the cookies with a beaten egg will give them a glossy finish and add flavor to the cookies. Aside from that, the egg wash also helps to hold toppings like sprinkles, sparkling sugar, or other decorations.

Tip 7: Don't Overbake

Avoid overbaking your almond shortbread cutouts as they will become dry and hard instead of soft and buttery. The amount of time you need to bake them will depend on the thickness and size of the cookie, as well as your oven temperature. Most recipes recommend baking the cookies for 10-12 minutes or until the edges are lightly browned. Always keep an eye on them while baking and adjust the time accordingly.

Tip 8: Store Your Cookies Properly

To ensure that your cookies stay fresh and have the perfect texture, you need to store them properly. Place the almond shortbread cutouts in an airtight container or zip-lock bags and store them at room temperature in a cool, dry place. You can also store them in the refrigerator or freezer for longer shelf life. Bringing the cookies to room temperature before serving will make them soft and more flavorful.

Conclusion

Almond shortbread cutouts are a fantastic recipe for anyone who loves cookies, and with these valuable tips, you can bake them like a pro. Remember to use fresh ingredients, roll out your dough evenly, use high-quality cookie cutters, line your baking sheet, use an egg wash, avoid overbaking, and store your cookies properly. By following these tips, you can create delicious and beautiful almond shortbread cutouts that everyone will love.
