Categories     Side Dish

Time 25m

Yield 4

Number Of Ingredients 8

2 tablespoon butter
1 cup long-grain white rice
2 tablespoon finely diced onion
1/2 cup slivered almonds
1 1/2 cups chicken stock or broth
1 bay leaf
Kosher salt, to taste
2 tablespoon chopped Italian parsley

Steps:

  • Gather the ingredients.
  • Preheat oven to 350 F.
  • Heat a heavy-bottomed saucepan over medium heat, then add butter. Meanwhile, in a small saucepan, bring stock or broth to a boil.
  • When butter gets foamy, add diced onion and almonds and sauté until onion is slightly translucent, about 2 to 3 minutes.
  • Add uncooked rice and sauté, stirring constantly, for about a minute, or until rice is fully coated with the melted butter.
  • Add hot stock or broth, bring back to a boil, then add bay leaf. Cover and place entire pot in the oven. Tip: Check seasoning of cooking liquid and make any necessary adjustments before pot goes into oven.
  • Cook rice in oven for 18 minutes or until all the liquid is absorbed. If after 18 minutes, there's still liquid in the pot or rice is still too moist, re-cover and return pot to oven for another 2 to 4 minutes.
  • Remove pot from oven and gently fluff rice with a wooden fork. Remove bay leaf and discard. Then place a paper towel across top of pot, replace lid, and let rice stand for 10 minutes. Garnish with chopped parsley and serve right away.

My mom used to make rice pudding from leftovers all the time, but I added my own flavors for this one. Almond sauce is a delicious and versatile sauce that can be used in a variety of ways. One way to use almond sauce is as a flavoring for rice. This sauce adds a nutty, creamy flavor to rice dishes, and it is easy to make. In this article, we will provide valuable tips to help you make the perfect almond sauce for your rice recipes.

Tip 1: Choosing the Right Almonds

The first tip for making almond sauce is choosing the right almonds. It is best to use raw, unsalted almonds for this recipe. You can either buy whole almonds and grind them yourself, or you can use almond flour. If you choose to grind your own almonds, make sure you use a food processor or blender to grind them into a fine powder. Using pre-made almond flour can save time, but make sure it is fresh and not expired.

Tip 2: Roasting the Almonds

Roasting the almonds can add a deeper flavor to the sauce. To roast the almonds, preheat your oven to 350°F (175°C). Spread the almonds on a baking sheet in a single layer and roast for 10-15 minutes or until they are lightly browned and fragrant. Be careful not to burn the almonds as it can give the sauce a bitter taste.

Tip 3: Adding Aromatics

Adding aromatics such as garlic, onion, and ginger can give almond sauce a more complex flavor. To add these ingredients, sauté them in a saucepan until they are soft and fragrant. Next, add the ground or flour almonds and continue to cook until the mixture becomes slightly browned.

Tip 4: Using the Right Liquid

The liquid used in the sauce can greatly affect its flavor and consistency. Some popular choices include water, chicken or vegetable broth, or coconut milk. You can also use a combination of two or more liquids for a more interesting flavor. For instance, using a combination of water and coconut milk can create a sauce that is both creamy and nutty. Be sure to add the liquid in small increments and whisk constantly to prevent clumps.

Tip 5: Thickening the Sauce

If you prefer a thick almond sauce, you can use a thickener such as cornstarch or arrowroot powder. Mix the thickener with a small amount of cold water or other liquid until it forms a smooth paste. Then, add the paste to the sauce and continue cooking until the desired thickness is reached. Be careful not to add too much thickener as it can make the sauce too thick and gloopy.

Tip 6: Adding Seasonings

To add more flavor to your almond sauce, consider using seasonings such as salt, pepper, dried herbs, or spices. For instance, a pinch of cumin can give the sauce an earthy flavor, while a sprinkle of smoked paprika can add a smoky depth to the sauce. Be sure to taste the sauce as you go and adjust the seasonings to your preference.

Some serving suggestions include using it as a dressing for a rice salad, mixing it into cooked rice, or serving it as a condiment alongside a rice dish.
