ALMOND JOY CANDIES

Almond Joy Candies image

This is a very simple recipe that tastes so good you'll want to hide them! I have made candy to sell at Christmas time off and on for the past 12 years and these are a must have! This is a very small batch and I am guessing the # you'll get because you can make them like a snack size almond joy or a half bar with 2 almonds, so the size is as you wish. I have made this times 4 the amount with out any problem . They keep very well in an airtight container in a cool place for 1 month.

Time 1h5m

Yield 12 serving(s)

Number Of Ingredients 5

1/3 cup Karo syrup
1 cup coconut
1/2-1 teaspoon almond extract (depends on how strong an almond flavor you wish)
12 almonds
5 ounces chocolate bark (you may need more to coat properly)

Steps:

  • Toast the almonds in the oven at 400°F just till they are warm and you can start to smell them (3-5 min); set aside.
  • Bring the Karo to a boil and add the coconut, remove from heat and add extract.
  • Place in fridge till firm.
  • Form into 12 round balls or 6 ovals and place on waxed paper -- press 1 almond to each ball or 2 to each oval and chill for 1/2 hour. (You can play with the size of these, if you like more filling to less chocolate, make them bigger, you'll just get fewer).
  • Melt the chocolate in a double boiler or in a microwave being careful to stir often and not cook--just melt.
  • Dip each candy into the chocolate; coat evenly and completely. No coconut should be exposed! Place on a wax paper lined cookie sheet in the fridge till chocolate is set.
  • Store in a airtight container.

What is Almond Rock Candy?

Almond rock candy is a type of confectionery that is made with sugar, water, and almonds. It has a crystallized texture and is often associated with the holiday season. The candy can be made with a variety of flavorings, such as peppermint, cinnamon, or vanilla, but almond is the most common. Almond rock candy is a versatile treat that can be enjoyed on its own, used as a sweetener in tea, or added to baked goods and desserts.

History of Almond Rock Candy

Rock candy has been around for thousands of years and has been enjoyed worldwide. It is believed that the ancient Egyptians were the first to make rock candy by crystallizing honey. Over time, the recipe was adapted to use sugar instead of honey. In the Middle Ages, rock candy was often used as a medicine to treat sore throats and other ailments. Almonds were added to the recipe in the 19th century, and the result was almond rock candy.

How Almond Rock Candy is Made

Almond rock candy is made by dissolving sugar in water and boiling it until it reaches a high temperature. Almonds are then stirred into the mixture before it is left to cool. As the mixture cools, it crystallizes and hardens, creating the signature texture of rock candy. The almonds add a nutty flavor and contribute to the candy's texture.

Variations of Almond Rock Candy

There are many variations of almond rock candy that can be made by changing the flavorings or adding other ingredients. For example, some recipes call for the addition of food coloring to create a colorful candy. Others use different nuts, such as pecans or walnuts, instead of almonds. Some recipes call for the addition of spices or extracts, such as cinnamon or vanilla, to give the candy a unique flavor.

Uses for Almond Rock Candy

Almond rock candy can be enjoyed in a variety of ways. It is a popular holiday treat and is often used as a decoration on Christmas trees or as a stocking stuffer. It can also be used as a sweetener in tea, coffee, or hot chocolate. Almond rock candy can be crushed and used as a topping for ice cream or other desserts. It can also be added to baked goods, such as muffins or cookies, to add a crunchy texture.

Health Benefits of Almond Rock Candy

Despite its high sugar content, almond rock candy does offer some health benefits. Almonds are a good source of protein and healthy fats, which can help improve heart health and lower cholesterol levels. Almonds are also a good source of fiber, which can help regulate digestion and promote satiety. However, it is important to consume almond rock candy in moderation, as it is high in calories and sugar.

Conclusion

Almond rock candy is a delicious and versatile treat that can be enjoyed in many ways. It has a long history and can be made with a variety of flavorings and ingredients. While it does have some health benefits, it should be consumed in moderation due to its high sugar content. Whether enjoyed on its own or used to add flavor and texture to other dishes, almond rock candy is a classic candy that is sure to please.

Almond rock candy is a popular sweet treat that can be enjoyed by all ages. It is a hard, crunchy candy that is made from sugar and almonds. Making almond rock candy at home can be a fun and rewarding experience, but it can also be challenging. To help you create the perfect batch of almond rock candy, we have compiled a list of valuable tips.

Tip #1: Use high-quality ingredients

The quality of your ingredients can greatly affect the outcome of your almond rock candy. Use high-quality sugar and almonds to ensure that your candy has a delicious flavor and texture. Avoid using cheap ingredients or old almonds, as this can make your candy taste stale or rancid. You can also experiment with different types of sugar, such as brown sugar or honey, to add a unique flavor to your candy.

Tip #2: Use a candy thermometer

To achieve the perfect consistency for your almond rock candy, you will need to use a candy thermometer. A thermometer will help you monitor the temperature of your candy, ensuring that it reaches the right temperature and cools properly. You can purchase a candy thermometer at your local kitchen supply store or online. Make sure to follow the instructions carefully to avoid any accidents.

Tip #3: Be patient

Creating almond rock candy takes time and patience. Do not rush the process, as this can lead to errors or a less desirable candy texture. Make sure to follow the instructions carefully and stay focused throughout the entire process. It is important to give your candy enough time to cool and harden, as this will ensure that it has the right consistency.

Tip #4: Use the right type of pan

The type of pan you use can also affect the outcome of your almond rock candy. It is recommended that you use a heavy-bottomed pan, as this will help distribute the heat evenly and prevent any burning or scorching. You should also avoid using a non-stick pan, as the candy can stick to the surface and become difficult to remove. A stainless steel or copper pan is the best option for making almond rock candy.

Tip #5: Add flavorings and colors

To add a unique flavor or color to your almond rock candy, you can experiment with different flavorings and food colors. You can add a few drops of vanilla extract, almond extract, or peppermint oil for a delicious flavor. You can also add food coloring to give your candy a festive appearance. However, be careful not to add too much flavoring or color, as this can overpower the taste of the almonds and sugar.

Tip #6: Keep your workspace clean

Making almond rock candy can be messy, so it is important to keep your workspace clean and organized. Make sure to have all of your ingredients and equipment ready before you begin, and keep a clean towel nearby to wipe up any spills or messes. This will also help prevent any contamination or impurities that can affect the quality of your candy.

Tip #7: Store your candy properly

To keep your almond rock candy fresh and flavorful, store it in an airtight container in a cool, dry place. Avoid exposing your candy to direct sunlight or high temperatures, as this can cause it to melt or become sticky. You can also place a desiccant packet in the container to absorb any moisture and prevent the candy from becoming soft.

Conclusion:

Making almond rock candy can be a fun and rewarding experience for home cooks and candy lovers. With these valuable tips, you can create the perfect batch of almond rock candy that is delicious, crunchy, and full of flavor. Remember to use high-quality ingredients, be patient, and follow the instructions carefully. Happy candy making!
