Provided by Alison Roman

Categories     Cake     Dessert     Kid-Friendly     Almond     Spring     Rhubarb     Bon Appétit     Vegetarian     Pescatarian     Peanut Free     Soy Free     Kosher     Small Plates

Yield 8 servings

Number Of Ingredients 12

1 cup (2 sticks) unsalted butter, room temperature, plus more for pan
3/4 cup plus 3 tablespoons sugar, plus more for pan
1 pound rhubarb stalks, trimmed
1 1/4 cups all-purpose flour
3/4 cup blanched almonds
1 teaspoon baking powder
3/4 teaspoon kosher salt
1/2 vanilla bean, split lengthwise
2 large eggs
1/4 cup plain Greek yogurt or sour cream
Special Equipment
One 11x8" tart pan or one 9"-diameter tart pan with removable bottom.

Steps:

  • Preheat oven to 350°F. Butter tart pan and sprinkle with sugar, tapping out excess. Slice rhubarb in half lengthwise (quarter if very large). Set 8 of the prettiest pieces aside for the top of the cake; chop remaining rhubarb into 1/2" pieces. Pulse flour, almonds, baking powder, and salt in a food processor until almonds are finely ground (texture should be sandy).
  • Place 1 cup butter and 3/4 cup sugar in a large bowl. Scrape in seeds from vanilla bean; reserve pod for another use. Using an electric mixer on high speed, beat until light and fluffy, about 4 minutes. Add eggs, one at a time, beating to blend first egg before adding second. Beat until mixture is pale and fluffy, about 4 minutes.
  • Reduce speed to low and gradually add dry ingredients, followed by yogurt. Beat, scraping down the sides of bowl as needed, just to combine (batter will be thick). Fold in chopped rhubarb and scrape batter into prepared pan. Smooth batter and arrange reserved rhubarb over top; sprinkle with remaining 3 tablespoons sugar.
  • Place tart pan on a large rimmed baking sheet (to catch any rogue juices) and bake, rotating once, until cake is golden brown and rhubarb on top is soft and beginning to brown, 70-80 minutes. Transfer to a wire rack and let cake cool before removing from pan.
  • Do Ahead
  • Cake can be baked 3 days ahead. Keep tightly wrapped at room temperature.

Valuable Tips for Making Almond Rhubarb Cake Recipes

Almond rhubarb cake is a delightful sweet treat that combines the nuttiness of almonds and the tartness of rhubarb. It's a perfect cake for those who crave a balance between sweet and sour flavors. Making an almond rhubarb cake might seem like a challenging task, but with some useful tips, you can make a beautiful cake that everyone will love.

Tips for Preparing the Rhubarb

In any almond rhubarb cake recipe, preparing rhubarb properly is crucial since it is the core of the cake. Here are some tips for preparing the rhubarb:
Choose the Right Rhubarb
To make a perfect almond rhubarb cake, picking the right rhubarb is essential. Choose smaller, thinner stalks, as they tend to be less fibrous and sweeter. If the rhubarb stalks are too thick, they may have a more fibrous texture, which would be unpleasant.
Clean and Cut the Rhubarb
After selecting the right rhubarb, it's time to clean and cut it. The first step is to cut off both ends of the rhubarb stalks, as they are tough and stringy. Then, wash the stalks under running water to remove any lingering dirt. Once the rhubarb is clean, slice it into small pieces.
Add Sweetness to Rhubarb
Rhubarb is tart and sour, which is why it's essential to add some sweetness to it. You can achieve this by tossing the sliced rhubarb with sugar and letting it sit for about 30 minutes. This process helps to extract the juices from the rhubarb and soften it.

Tips for Making the Almond Batter

The almond batter is crucial to an almond rhubarb cake recipe. A good batter will give the cake a moist, light texture and enhance its flavor. Here are some tips for making the perfect almond batter:
Use Almond Flour and Ground Almonds
Using almond flour and ground almonds will give your cake a nutty and unique flavor. Almond flour is finely ground almonds, while ground almonds are coarsely ground. Combining both of them in the batter will give your cake a moist, dense texture and enhance its almond flavor.
Cream the Butter and Sugar
Creaming the butter and sugar together is a crucial step in making an almond rhubarb cake. This step helps to incorporate air into the butter, making the cake light and fluffy. It's recommended to use room temperature butter and granulated sugar; cream them together for about 3 minutes until they become light and fluffy.
Use Whipped Eggs Whites
Whipping egg whites separately and folding them into the batter will add air to the cake and make it lighter. Don't over-whip the egg whites; whisk them only until they form soft peaks. Then, gently fold them into the batter to avoid deflating the egg whites.

Tips for Baking the Cake

After preparing the rhubarb and almond batter, it's time to bake the cake. Here are some tips for baking the perfect almond rhubarb cake:
Line the Cake Pan with Parchment Paper
To avoid the cake sticking to the pan, line it with parchment paper. This will keep the cake moist and prevent any breakage when you remove it from the pan.
Bake the Cake at the Right Temperature
Baking the cake at the right temperature is crucial to ensure that it cooks evenly. Bake the cake at 350 degrees Fahrenheit for about 35-40 minutes or until a toothpick inserted into the center comes out clean.
Let the Cake Cool Completely
Once the cake is done, let it cool in the pan for about 10 minutes. Then, remove it from the pan and let it cool completely on a wire rack. This will allow the cake to settle and prevent it from breaking when you slice it.

Tips for Serving the Almond Rhubarb Cake

Now that the almond rhubarb cake is ready, it's time to serve it. Here are some tips for serving the cake:
Dust with Powdered Sugar
Dust the top of the cake with powdered sugar to give it an elegant look. You can also add some sliced almonds or chopped rhubarb on top for a pop of color.
Serve with Whipped Cream or Ice Cream
Serve the almond rhubarb cake with a dollop of whipped cream or a scoop of vanilla ice cream. The creamy flavor complements the tartness of the rhubarb and enhances the nuttiness of the almond batter.
Store the Cake Properly
