ALMOND DANISH PUFF

This is yet another of my family's recipes. My mom used to make this every Christmas morning. It was and is a special treat that I hope to carry on with my family. This recipe came from an old Betty Crocker cookbook. Glaze recipe for the puff follows the instructions.

1/2 cup butter, softened
1 cup all-purpose flour
2 tablespoons water
1/2 cup butter
1 cup water
1 teaspoon almond extract
1 cup all-purpose flour
3 eggs
1 1/2 cups powdered sugar
2 tablespoons butter, softened
1/2 teaspoon almond extract
1 -2 tablespoon warm water or 1 -2 tablespoon milk
sliced almonds

Steps:

  • Heat oven to 350ºF.
  • Cut 1/2 cup softened butter into 1 cup flour, using pastry blender or crisscrossing 2 knives, until particles are size of coarse crumbs.
  • Sprinkle 2 tablespoons water over mixture; mix with fork.
  • Gather pastry into ball; divide in half.
  • Pat each half into rectangle, 12x3 inches, about 3 inches apart on ungreased cookie sheet.
  • Heat remaining 1/2 cup butter and 1 cup water to rolling boil in 2-quart saucepan; remove from heat.
  • Quickly stir in almond extract and 1 cup flour.
  • Stir vigorously over low heat about 1 minute or until mixture forms a ball; remove from heat.
  • Add eggs; beat until smooth. Spread half of the topping over each rectangle.
  • Bake about 1 hour or until topping is crisp and brown; remove from pan to wire rack. Cool completely.
  • Spread with Creamy Almond Glaze; sprinkle with almonds.
  • Creamy Almond Glaze:
  • 1 1/2 cups powdered sugar; 2-3 tbsp butter, softened; 1/2 to 1 tsp almond extract; 1-2 tbsp warm water or milk.
  • Mix all ingredients until smooth and spreadable and glaze the Danish puff.

SWEDISH KRINGLER OR ALMOND PUFF

This is my personal favorite "favorite". It is the butteryist, richest, flakiest, custardiest, yummiest, creation with so few ingredients. This recipe goes way, way back to the 1940's and it is always a hit no matter when I bake it or to who I serve it to...

STEP ONE
1/2 c soft butter or margarine
1 c all purpose flour
2 Tbsp water
STEP TWO
1/2 c butter or margarine
1 c water
1 tsp almond extract
1 c flour
3 eggs
CONFECTIONERS SUGAR GLAZE
1 1/2 c powdered sugar
2 Tbsp butter, soft
1 1/2 tsp almond flavoring or vanilla
1-2 Tbsp warm water

Steps:

  • 1. STEP ONE: Heat oven to 350 degrees. Cut butter into flour. Sprinkle water over this mixture. Mix well with fork. Round into ball. Divide in half. On ungreased baking sheet, pat each half into a strip 12 inches by 3 inches. Strips should be about 3 inches apart ( side by side) from each other on the baking sheet.
  • 2. STEP TWO: In medium saucepan heat butter and water to rolling boil. Remove from heat and quickly stir in almond extract and 1 cup flour. Stir vigorously over low heat until mixture forms a ball ( about 1 minute). Remove from heat; beat in eggs, all at one time until smooth.
  • 3. STEP TWO cont: Divide above mixture in half, spread evenly over strips already on the baking sheet, covering completely.
  • 4. Bake about 1 hour or until topping is crisp and brown. Cool. Frost with confectioners sugar glaze and sprinkle generously with nuts. We like toasted sliced almonds, mixed nuts are always great, but your choice. When serving, slices can be cut as thick or thin as you like:))

PUFF LAYER:
1 cup water
1/2 cup butter

  • In a bowl, cut butter into flour until mixture resembles coarse crumbs. Add water and toss with a fork. Shape dough into a ball. Pat into two 12-in. x 3-in. strips, drop 2 in. apart on an ungreased baking sheet. Set aside. , In a large saucepan, bring the water and butter to a boil over medium heat. Add flour all at once; stir until a smooth ball forms. Remove from the heat; stir in extract. Let stand 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. Spread over crusts, covering completely., Bake at 325° for 50-55 minutes or until puffed and light browned. Cool on a wire rack for 5 minutes. ½ cup butter, softened
1 cup all-purpose flour
2 tablespoons cold water
½ cup butter
1 cup water
1 cup all-purpose flour
1 ½ teaspoons almond extract
3 eggs

Steps:

  • In a medium bowl, cut the 1/2 cup of margarine into the 1 cup of flour until mixture resembles coarse crumbs. Add the cold water one tablespoon at a time. Using your hands or a fork, stir until the dough can form a ball. Divide dough in half. Roll or press each half into a 12x3 inch rectangle. Place them 3 inches apart onto an unprepared cookie sheet.
  • Preheat oven to 400 degrees F (200 degrees C).
  • In a saucepan, bring the 1/2 cup of margarine, and 1 cup of water to a rolling boil. Lower heat and stir in the flour immediately with a wooden spoon. Continue to stir vigorously until the dough forms a tight ball. Remove from heat. Stir in eggs one at a time, then stir in the almond extract. Spread equally onto both rectangles. Bake for 10 minutes before lowering the oven temperature to 325 degrees F (165 degrees C). Continue to cook for 15 to 20 more minutes. The top should be crispy and brown.
  • To make the glaze, beat the confectioners' sugar together with the melted butter and vanilla until smooth. Spread over the almond puff when cool, and sprinkle with sliced almonds. Cut into strips and serve.

This recipe is so easy to make, but your guests will think you spent all day in the kitchen! Delicious! Make about 3 hours before serving.

1 cup water
½ cup butter
¼ teaspoon salt
1 cup all-purpose flour
4 eggs
1 (3.4 ounce) package instant vanilla pudding mix
1 ¼ cups milk
1 cup heavy cream, whipped
1 teaspoon almond extract
½ cup semi-sweet chocolate chips
1 tablespoon butter
1 ½ teaspoons milk
1 ½ teaspoons light corn syrup

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease and flour a cookie sheet, or use parchment paper. Using a dinner plate as a guide, trace a circle on the sheet.
  • In 2 quart saucepan over medium heat, combine water, butter, and salt. Bring to a boil. With a wooden spoon, vigorously stir in flour all at once, until mixture forms a ball, and leaves the sides of the pan. Remove from heat, and beat in the eggs one at a time, until mixture is smooth. Drop batter into 10 mounds inside the circle traced on the cookie sheet, to form a ring.
  • Bake in preheated oven for 40 minutes, or until golden brown. Turn off oven, leaving ring in for another 15 minutes. Remove from oven, and cool on wire rack. When cool, slice in half horizontally, and place bottom ring on serving plate. Spoon Almond Cream Filling on bottom ring, then replace top ring. Chill in refrigerator.
  • To make Almond Cream Filling: Prepare pudding according to instructions on package, but use only 1 1/4 cups milk. Fold in whipped cream, and 1 teaspoon almond extract.
  • To make Chocolate Glaze: In a double boiler over hot (not boiling) water, combine chocolate chips, 1 tablespoon butter, 1 1/2 teaspoons milk, and 1 1/2 teaspoons corn syrup. Heat until melted and smooth, stirring occasionally. Spoon over the top of chilled ring.

FRUITY ALMOND PUFF PASTRY TART

We are making frangipane. It sounds super fancy, but it's code for a tasty tart filling times ten. It is most classically made with almonds, but is also tasty when you sub in the same amount of hazelnuts or pecans. The tart is usually either strawberry or raspberry with some sweet apricot jam to coat the fruit, but you can get creative with what you have on hand. Nuts with buttery puff pastry topped with tart fruit with a dash of jam? It takes me straight to the streets of Paris...

1 sheet frozen puff pastry (approximately 9.75 by 10 inches)
3/4 cup slivered almonds
1/2 cup sugar, plus extra for finishing
3/4 stick (6 tablespoons) unsalted butter, melted
2 tablespoons all-purpose flour
1 1/2 teaspoons almond extract
1/2 teaspoon ground cinnamon
1 large egg, lightly beaten
2 tablespoons apricot jam
2 pints fresh raspberries

Steps:

  • Preheat the oven to 425 degrees F.
  • Place the sheet of puff pastry in the center of a baking sheet fitted with parchment. Top the puff with another sheet of parchment. Place a baking sheet directly on top of the parchment on top of the puff pastry. This weighs down the puff as it bakes and makes it uniform.
  • Place the baking sheet in the center of the oven and bake until the puff pastry is partially cooked and lightly browned, 20 to 25 minutes. Remove from the oven and take the baking sheet and top sheet of parchment off the pastry.
  • While the pastry is baking, make the frangipane. In the bowl of the food processor, pulse the almonds until they become like a coarse, wet powder. Add the sugar, butter, flour, almond extract, cinnamon and egg and pulse until it forms a paste.
  • Gently spread the frangipane in an even layer over the puff pastry, leaving a 1/2-inch border, and place the baking sheet back in the center of the oven. Reduce the oven temperature to 400 degrees F. Bake until the frangipane and pastry are browned, 20 to 25 minutes. Let cool to room temperature.
  • In a small pot, warm the jam over low heat until it melts slightly, about 30 seconds.
  • Transfer the puff to a flat surface and use a serrated knife to gently cut into 9 even pieces. Arrange the pieces close together on a serving platter as if they make a whole tart. Drizzle some of the warmed jam over the top edges of the pastry and frangipane to create a "glue" for the raspberries to stick to the pastry. Arrange the raspberries over the top of each piece. Drizzle the remaining jam gently over the raspberries and finish with a sprinkle of sugar for added texture. Serve at room temperature. Refrigerate the leftovers (if there are any!!).

1/4 cup pure almond paste (2 ounces)
1/4 cup granulated sugar
3 tablespoons unsalted butter, softened
2 large eggs
1/4 teaspoon vanilla

1 (17 1/4-oz) package frozen puff pastry sheets, thawed
1 dried bean such as a lima bean (optional)
1/2 tablespoon confectioners sugar

Steps:

  • Preheat oven to 450°F.
  • Purée almond paste, granulated sugar, butter, and a pinch of salt in a food processor until smooth. Add 1 egg, vanilla, and almond extract and purée until incorporated. Add flour and pulse until incorporated.
  • Roll out 1 puff pastry sheet into an 11 1/2-inch square on a lightly floured surface with a floured rolling pin, then brush off excess flour from both sides. Cut out an 11-inch round by tracing around an inverted plate with tip of a paring knife. Transfer round to a buttered large baking sheet (not dark metal, or pastry may brown too much), discarding trimmings, and chill. Repeat procedure with second pastry sheet, leaving round on floured surface.
  • Beat remaining egg with a fork and brush some over top of second round. Score round decoratively all over using tip of knife, then make several small slits all the way through pastry, at about 2-inch intervals, to create steam vents.
  • Brush some of egg in a 1-inch-wide border around edge of chilled pastry round (on baking sheet). Mound almond cream in center of chilled round, spreading slightly, and bury bean in cream. Immediately cover with decorated round and press edges together lightly. Holding a small spoon with side at an angle, press around edge to seal galette decoratively.
  • Bake galette in lower third of oven until puffed and pale golden, 13 to 15 minutes. Dust galette with confectioners sugar and bake in upper third of oven until edge is deep golden brown and shiny, 12 to 15 minutes more. Transfer to a rack to cool slightly, 5 to 10 minutes. Serve warm.

1 7-ounce package almond paste

Sliced assorted fresh fruit (such as kiwi fruit, strawberries and bananas)

Steps:

  • Preheat oven to 400°F. Cut 3/4-inch-wide strip off each side of pastry and reserve. Roll out pastry square on work surface to 9 1/2-inch square. Brush edges of square with egg glaze. Arrange 3/4-inch-wide strips atop edges, forming raised border. Brush border with glaze. Pierce center of pastry all over with fork. Bake until pastry is golden brown about 25 minutes.
  • Meanwhile, blend almond paste and cream in processor until almost smooth. Spoon almond filling into center of tart and spread evenly. Bake 5 minutes. Transfer to rack and cool.
  • Melt jam with ginger in heavy small saucepan over low heat, stirring frequently. Arrange fruit decoratively atop tart. Brush jam glaze over fruit. Cut tart into squares and serve.

FILLING:
1-1/4 cups cold milk

1 cup heavy whipping cream, whipped
GLAZE:
1/2 cup semisweet chocolate chips
1 tablespoon butter
1-1/2 teaspoons light corn syrup

Steps:

  • Cover a baking sheet with foil; grease the foil. Trace a 12-in. circle onto foil; set aside. In a large saucepan, bring the water, butter and salt to a boil. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add egg, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny., Drop batter by rounded tablespoonfuls along the inside of the circle (mounds should be slightly touching). Bake at 400° for 40-45 minutes or until golden brown. Lift foil and transfer to a wire rack. Immediately cut a slit in the side of each puff to allow steam to escape; cool. Carefully cut ring in half horizontally and set top aside; remove soft dough from inside with a fork. Transfer to a serving plate., In a bowl, whisk the milk, pudding mix and extract for 2 minutes. Chill for 5 minutes or until thickened. Fold in whipped cream. Spread over bottom of ring; replace top. In a microwave, melt chocolate chips and butter; stir until smooth. Stir in corn syrup and milk. Drizzle over ring. Refrigerate until serving.

2/3 cup jam (7 ounces) or 2/3 cup preserves (7 ounces)
1/2-2/3 cup sliced almonds (2 to 2 1/2 ounces)
1/2 cup confectioners' sugar (2 ounces)

4 teaspoons milk (approximately) or 4 teaspoons water (approximately)

Steps:

  • FIRST LAYER: In a medium-sized mixing bowl, combine the butter, flour, and salt (if you're using it), working the butter into the flour with a pastry blender or fork, your fingers, or a mixer.
  • Mix until everything is crumbly, then stir in the water. The dough will become cohesive, though not smooth.
  • Divide the dough in half; if you're using a scale, each half will weigh about 4 5/8 ounces.
  • Wet your hands, and shape each piece of this wet dough into a rough log.
  • Grease a baking sheet or sheets that'll allow you to stretch and pat the logs into 11 x 3-inch rectangles on the sheet, leaving at least 4 inches (but preferably 6 inches) between them, and 2 inches on each side. These puff up in the oven (hence the name), and you need to leave them room for expansion.
  • SECOND LAYER: In a medium-sized saucepan, bring the water and butter to a boil.
  • Stir until the butter melts, then add the flour (and salt, if you're using it) all at once.
  • Stir the mixture with a spoon till it thickens, begins to steam, and leaves the sides of the pan; this will happen very quickly.
  • Transfer the dough to a mixing bowl, or the bowl of an electric mixer. Beat it at medium speed for 30 seconds to 1 minute, just to cool it down a bit.
  • Add the eggs one at a time, beating well after each addition; beat until the dough loses its "slimy" look, and each egg is totally absorbed.
  • Mix in the almond extract.
  • Divide the batter in half.
  • Spread half the batter over one of the dough strips on the pan, covering it completely.
  • Repeat with the remaining batter and dough.
  • With a spatula (or your wet fingers) spread the batter until it completely covers the entire bottom layer of dough. Smooth it out as best you can.
  • Bake the pastry in a preheated 350°F oven for 50 minutes to 1 hour, or until it's a deep golden brown.
  • Remove it from the oven, and transfer each pastry to a wire rack (a giant spatula works well here).
  • TOPPING: Spread each warm pastry with about 1/3 cup of jam or preserves. (Any flavor is fine, but our favorites are raspberry and apricot.)
  • Sprinkle the toasted almonds atop the jam. By this time, your beautifully puffed pastries are probably starting to sink; don't worry, this is all part of the plan.
  • ICING: Stir together the sugar, vanilla, and enough milk or water to form a thick but "drizzlable" icing. Drizzle the icing atop the pastries.
  • Cut into squares or strips to serve.

1 cup water
1/2 cup butter
1 cup sifted flour
1/4 teaspoon salt
4 eggs
1 (3 1/2 ounce) package vanilla instant pudding mix
1 1/4 cups milk
1 cup heavy cream, whipped
1 teaspoon almond extract
1/2 cup semi-sweet chocolate chips
1 tablespoon butter
1 1/2 teaspoons milk
1 1/2 teaspoons white corn syrup
4 ounces sliced almonds, toasted

Steps:

  • Preheat oven to 400°F.
  • In medium saucepan over high heat, heat 1 cup of water with 1/2 cup of butter until mixture boils.
  • Turn heat to low and add 1 cup of sifted flour and 1/4 tsp salt.
  • Stir vigorously over low heat until dough leaves the side of the pan in a smooth compact ball about 1 minute.
  • Quickly transfer dough to a large bowl and with electric mixer at medium speed, beat in 4 eggs, one at a time, beating well after each addition.
  • Continue beating until dough is smooth and satiny.
  • On lightly floured cookie sheet, using a dinner plate as a guide, trace a circle.
  • Drop heaping measuring tablespoons full of dough just inside the circle to form a ring, making sure each dropful touches the one next to it (this is what will hold your ring together once baked).
  • Bake 40 minutes or until golden brown and firm.
  • Turn oven heat off and allow puff ring to rest in the oven 15 minutes.
  • Then place on a rack to cool way from any draft.
  • Once cool, CAREFULLY cut ring in half and remove soft interior with a spoon and discard, leaving the hollowed shell.
  • Combine pudding mix and 1 1/4 cups milk in medium bowl and mix for 3 minutes, then refrigerate 30 minutes until set.
  • Remove pudding from frige and gradually fold in the whipped cream and almond extract.
  • Fill bottom shell with pudding mixture and set top shell in place.
  • In double boiler, over hot (not boiling) water, melt the chocolate chips with 1 tbsp of butter, 1 1/2 tsp milk and 1 1/2 tsp corn syrup until smooth.
  • Spread on top of cream puff ring and immediately sprinkle with the toasted sliced almonds so they adhere to the chocolate then refrigerate.
  • To serve, slice the ring into individual cream puff portions& enjoy.

½ cup butter
¼ teaspoon salt
1 cup water
¼ cup blanched slivered almonds
1 cup all-purpose flour
4 eggs
2 cups heavy cream
1 cup confectioners' sugar
2 teaspoons vanilla extract
¼ teaspoon almond extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a medium saucepan over medium-high heat, combine butter, salt, water and almonds. Bring to a boil and stir in flour, all at once, stirring vigorously until mixture forms a ball. Remove from heat and beat in eggs, one at a time, until thoroughly incorporated. Transfer dough to a pastry bag with a number 8 star tip, and pipe pastry in an 8-inch ring, one inch wide, on a baking sheet.
  • Bake 50 minutes, or until puffed, set and golden brown. Cool on wire rack.
  • While pastry is baking, combine cream, sugar, vanilla and almond extracts in a medium bowl and chill in refrigerator for 1 hour. Remove from refrigerator and whip with electric mixer until stiff peaks form.
  • Split cooled ring in half lengthwise using a sharp knife. Scoop out any soft dough. Place bottom half on serving plate, and fill with whipped cream. Place other half of ring on top, sprinkle with confectioners' sugar and serve.

PUFF RING:
1 cup water
1/2 cup butter or oleo
1/4 tsp salt
1 cup flour (all purpose)
4 eggs
Almond Cream Filling (instructions below)
3 1/2-3 3/4 oz vanilla instant pudding
1 1/4 cups milk
1 cup heavy cream
1 tsp Almond extract
Chocolate Glaze (instructions below)
1/2 cup semi-sweet chocolate pieces
1 Tbsp butter or oleo
1 1/2 tsp milk
1 1/2 tsp light corn syrup

Steps:

  • About 3 hours before serving:
  • In a 2 quart pan over medium heat, heat water, butter, and salt until butter melts and mixture boils. Remove from heat.
  • With wooden spoon, vigorously stir in flour all at once until mixture forms a ball and leaves sides of pan. Add eggs to flour mix, one at a time, beating after each addition, until mixture is smooth and satiny. Cool mixture slightly.
  • Preheat oven to 400. Lightly grease and flour a large cookie sheet. Using a 7 inch plate as a guide, trace a circle in the flour on the cookie sheet. Drop batter by heaping tablespoons into ten mounds, inside circle, to form a ring.
  • Bake Ring 40 minutes or until golden. Turn off oven. Let ring remain in oven 15 minutes. Remove from oven, cool on wire rack. When cooled, slice in half, horizontally, with a long serrated knife.
  • Prepare Almond Cream filling:
  • Prepare pudding as label directs, but use only 1 1/4 cups milk. Fold in 1 cup heavy or whipping cream and 1 tsp. almond extract. Spoon almond filling into bottom of ring, replace top ring. Refrigerate.
  • Prepare Chocolate Glaze:
  • In double boiler, over hot, not boiling water (or in heavy 1 qt. pot over low heat), heat 1/2 cup Chocolate pieces, 1 Tbsp. butter or oleo, 1 1/2 tsp. milk and 1 1/2 tsp. light corn syrup until smooth, stirring occasionally. Spoon Glaze over top of ring.
