HOMEMADE ALMOND BUTTER

Homemade Almond Butter image

Homemade almond butter is healthy, affordable and even more delicious than store-bought! It's easy to make, too. You'll just need a good food processor or blender. Recipe yields about 1 2/3 cup almond butter (that's 16 ounces, the equivalent of a jar of almond butter from the store).

Categories     Nut Butter

Time 25m

Number Of Ingredients 5

16 ounces (3 cups) raw almonds
1/4 teaspoon salt
Optional: 1/4 teaspoon ground cinnamon
Optional: 1/2 teaspoon vanilla extract
Optional: 2 tablespoons maple syrup or honey

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Spread the almonds across a large, rimmed baking sheet and toast the almonds for 10 minutes, stirring halfway.
  • Let the almonds cool until they're just warm (not hot), about 10 minutes.
  • Transfer the almonds to a high-speed blender or food processor. Blend until creamy, pausing to scrape down the sides as necessary. You're going to think it'll never blend, but be patient! The almonds will go from flour-like clumps, to a ball against the side of the food processor (keep scraping down the sides and breaking up the ball), and finally, it will turn lusciously creamy. If the mixture gets crazy hot along the way, stop and let it cool for a few minutes.
  • Once the almond butter is very smooth and creamy (no sooner!), you can blend in any add-ins you would like. I always add salt, for more flavor overall. You can also add cinnamon for a hint of spice, and vanilla and/or maple syrup for almond butter that tastes more special than store-bought.
  • Blend until the add-ins are evenly dispersed. When I added maple syrup, I had to let the mixture cool, and then blend a few additional minutes, to make it creamy again.
  • Let the almond butter cool to room temperature, then transfer the mixture to a mason jar and screw on the lid. Store in the refrigerator for up to 2 weeks, or until you see or smell any signs of spoilage.

Number Of Ingredients 5

1 1/2 cup sliced almonds
1 tablespoon unsalted butter, room temperature
2 cups sugar
1/2 cup water
Juice of half a lemon (1 tablespoon)

Steps:

  • Preheat oven to 350 degrees. Place almonds on a baking sheet, and toast until golden brown and fragrant, about 10 minutes. Remove from oven, and set aside to cool.

Place over medium-high heat; bring to a boil, brushing down sides of pan with a pastry brush dipped in water to prevent crystals from forming. Once sugar is dissolved, cook without stirring until sugar is deep amber. Add lemon juice; immediately pour over almonds, coating with a thin layer. If caramel doesn't cover all the nuts, tilt pan slightly to distribute, or stir in nuts with a wooden spoon, being careful not to touch caramel or hot pan. Cool completely. Yield Makes 3 cups

Number Of Ingredients 5

1 cup (2 sticks) unsalted butter, room temperature, cut into small pieces, plus more for baking sheet
1 1/2 cups sugar
1/4 cup water
3/4 cup chopped toasted blanched almonds
4 large egg whites

Steps:

  • Make the praline: Butter a baking sheet, or line it with a Silpat (a French baking mat). Set aside. In a small, heavy saucepan, bring 1 cup sugar and the water to a boil over medium heat, stirring until sugar dissolves; wash down sides of pan with a pastry brush dipped in water to prevent crystals from forming.
  • Continue cooking, without stirring, until dark amber, swirling pan to color evenly. Remove from heat; stir in nuts, distributing evenly. Immediately pour mixture onto prepared baking sheet. Let sit until hardened and completely cool.
  • Break praline into pieces, and place in the bowl of a food processor fitted with the metal blade. Process to a fine powder. Measure out 1 1/2 cups praline powder, and set aside. Reserve remaining powder for another use.
  • Make the buttercream: In the heatproof bowl of an electric mixer set over a pan of simmering water, whisk together egg whites and remaining 1/2 cup sugar until mixture is warm to the touch and sugar has dissolved.
  • Attach bowl to mixer fitted with the whisk attachment, and beat on high speed until mixture is stiff and cool, about 5 minutes. Add butter all at once, and beat until mixture has a smooth, spreadable consistency, about 5 minutes. Don't worry if the buttercream separates and appears curdled; it will come back together with continued beating.
  • Add praline powder; beat to combine. If using the same day, set aside, covered with plastic wrap, at room temperature, until ready to use. Or refrigerate in an airtight container up to 3 days. Before using, bring to room temperature; beat with paddle attachment until smooth.

Almond praline butter is a delicious addition to any snack or meal. It is a versatile ingredient that can be used in a variety of ways, such as spreading it on toast, adding it to smoothies, or using it as a dip for fruit. However, making almond praline butter can be a challenging task, especially for those who are new to cooking or baking. In this article, we will share valuable tips on how to make almond praline butter and achieve the perfect consistency and flavor. Tip 1: Choose high-quality ingredients One of the most critical factors that determine the quality of your almond praline butter is the type of ingredients you use. Therefore, it is essential to choose high-quality ingredients, such as fresh almonds, raw honey, and high-quality butter. The quality of your almonds will determine the flavor and texture of your butter, so make sure to choose fresh, raw almonds that are free from any signs of spoilage. Similarly, the quality of your honey and butter will affect the overall flavor and consistency of your almond praline butter. Therefore, opt for high-quality, organic honey and butter to ensure that your final product is delicious and healthy. Tip 2: Roast your almonds Roasting your almonds before making almond praline butter is crucial as it enhances their flavor and aroma. To roast your almonds, spread them out on a baking sheet, and bake them in a preheated oven at 350°F for 10-15 minutes or until they turn golden brown. You can also add some salt or sugar to the almonds before roasting them to enhance their flavor further. Tip 3: Use a food processor A food processor is the best tool to use when making almond praline butter as it grinds the almonds finely and evenly. It also helps to achieve a uniform consistency and texture, resulting in a smooth and creamy butter. When using a food processor, pulse the almonds a few times initially to break them down into smaller pieces, and then process them continuously until the butter reaches the desired consistency. Stop and scrape down the sides of the food processor occasionally to prevent the almonds from clumping together or getting stuck to the sides. Tip 4: Add a sweetener Adding a sweetener to your almond praline butter is optional, but it can help to balance out the nutty flavor of the almonds and enhance the overall taste of the butter. Raw honey is an excellent sweetener for almond praline butter as it adds a natural sweetness and a hint of floral flavor. However, you can also use maple syrup, coconut sugar, or any other sweetener of your choice. Tip 5: Add a pinch of salt Adding a pinch of salt to your almond praline butter will enhance its flavor and bring out the sweetness of the almonds. It will also help to balance out the sweetness of the honey or other sweeteners you may be using. Therefore, add a tiny pinch of sea salt to your butter to enhance its flavor and bring out the natural taste of the almonds. Tip 6: Store it properly Almond praline butter should be stored in an airtight container in the refrigerator to keep it fresh and flavorful for longer. It can last up to two weeks in the fridge, but you can also freeze it for later use. Make sure to let the butter come to room temperature before using it, especially if it has been stored in the fridge or freezer, as it may harden and become difficult to spread. Conclusion Almond praline butter is a delicious and healthy ingredient that can be used in a variety of ways. By following these valuable tips, you can make the perfect almond praline butter with a smooth and creamy consistency and a balanced flavor. Remember to choose high-quality ingredients, roast your almonds, use a food processor, add a sweetener and a pinch of salt, and store it properly for best results.
