LEMON ALMOND CAKE WITH LEMON GLAZE

Lemon Almond Cake With Lemon Glaze image

Most lemon cakes rely on zest and juice for flavor. This one uses the whole fruit, pith and all, for an intense citrus flavor. There's also almond flour in the batter, which gives the cake a dense richness. If you can get Meyer lemons, use them here. Most likely the hybrid of a lemon and a mandarin, Meyer lemons, with thin skins and plenty of juice, are a bit sweeter and less acidic than regular lemons.

Time 2h30m

Yield 8 servings

Number Of Ingredients 10

4 tablespoons/55 grams unsalted butter (1/2 stick), melted and cooled, plus more for the pan
1/2 cup/65 grams all-purpose flour, plus more for the pan
3 medium lemons, preferably Meyer lemons
2 cups/225 grams almond flour or meal (or ground almonds)
1 teaspoon baking powder
1/2 teaspoon fine sea salt
5 large eggs, separated
1 1/4 cups/250 grams sugar
1/4 teaspoon almond extract
1 to 1 1/2 cups/125 to 185 grams confectioners' sugar

Steps:

  • Butter and flour a 9-inch springform pan. Put 2 lemons in a medium pot and cover with water by at least 2 inches. Bring to a boil, partly cover pot, and let simmer for 40 minutes, or until very tender.
  • Use a slotted spoon to transfer lemons to a bowl. Let cool. Use a spoon to break open lemons and remove the pits. Purée lemons in a mini food processor or blender, scraping down the sides frequently.
  • Heat oven to 350 degrees. Zest remaining lemon into a medium bowl. (Save the rest of the lemon for glaze.) Stir in almond meal, all-purpose flour, baking powder and salt.
  • Using an electric mixer, beat egg whites until very foamy. With the mixer still going, gradually beat in 1/4 cup sugar, continuing to beat until stiff peaks form. Slide beaten whites onto a large plate.
  • In the same mixing bowl (you don't need to wipe it out), beat egg yolks and remaining 1 cup sugar until thick and pale, about 1 minute. Beat in lemon purée, almond meal mixture and almond extract. Using a rubber spatula, fold in melted butter.
  • Fold a third of the egg whites into the yolk mixture to lighten it. Fold in another third until well incorporated. Finally fold in remaining egg whites, taking care not to overmix. (A few white streaks are O.K.) Spread batter into prepared pan.
  • Bake until top of cake is well browned and it springs back when lightly pressed in the center, 45 to 60 minutes. Transfer to a wire rack to cool.
  • When cake is almost cool but still slightly warm (after about 30 to 45 minutes), make the glaze. Juice the zested lemon into a bowl and stir in confectioners' sugar until you have a thick but pourable glaze (if it's too thick, stir in a few drops of water). Pour glaze over slightly warm cake and let cool completely.

CITRUS-ALMOND POUNDCAKE

Citrus-Almond Poundcake image

This poundcake is richer, moister and more flavorful than any you've tasted, and it's not difficult to make. (Much of it is done in the food processor; do not pulse more than you must.) The consistency and flavor rely on the almond paste in the batter, and a simple soak of lemon juice, orange juice and sugar; the cake acts like a sponge, absorbing the sweetened citrus juice. A word of advice about this or any other Bundt cake: butter and flour the pan well. Even nonstick Bundt pans can be tricky. There's nothing more frustrating than having your cake fall partly out, leaving the pretty top bit clinging to the pan.

Time 1h30m

Yield 10 to 12 servings

Number Of Ingredients 13

12 tablespoons (1 1/2 sticks) cold unsalted butter, cubed, plus more for pan
Flour for pan
1/4 cup fresh lemon juice
1/2 cup fresh orange juice
3 cups plus 2 tablespoons granulated sugar
7-ounce tube almond paste
7 large eggs
2 teaspoons lemon zest
2 teaspoons orange zest
2 teaspoons vanilla extract
1 1/2 cups cake flour
3/4 teaspoon baking powder
1/4 teaspoon salt

Steps:

  • Heat oven to 350 degrees. Butter and flour an 8-cup Bundt pan. Put lemon juice, orange juice and 1 cup plus 2 tablespoons sugar in a small saucepan over low heat; cook until the sugar dissolves and remove from heat.
  • Put almond paste and remaining 2 cups sugar in food processor and process until well combined; add butter and continue processing until light and fluffy. With the machine running, add eggs one at a time along with zest and vanilla, and continue to process until smooth.
  • Stop the machine, add the flour, baking powder and salt, and pulse a few times - just until the dry ingredients are integrated (be careful not to over process, or the cake will become tough). Pour the batter into the prepared pan and bake until golden, about 1 hour and 10 minutes. When a skewer or thin-bladed knife inserted into the center of the cake comes out clean, remove the cake from the oven and let cool slightly.
  • Pour the citrus soak over the cake and let it sit for about 30 minutes, or until all the liquid is absorbed and the cake releases from the pan easily. Cut into slices.

What is Almond Pound Cake?

Almond pound cake is a variation of the classic pound cake recipe that incorporates almond flavoring and ground almonds. The result is a rich, nutty flavor that complements any toppings or fillings you may choose to add. Pound cake got its name from the traditional method of measuring the ingredients - one pound each of flour, sugar, butter, and eggs. While modern recipes may differ slightly from this ratio, the result is still a dense, moist cake that is perfect for slicing and serving with your favorite accompaniments.

Lemon Zest - The Perfect Touch

The addition of lemon zest to this almond pound cake recipe adds a bright, fresh flavor that perfectly complements the nuttiness of the almonds. Lemon zest is the outer layer of the lemon peel, which contains the essential oils that give the fruit its distinctive scent and flavor. Using a fine grater, you can easily zest the lemon, being sure to avoid the bitter white pith underneath. The result is a lemony aroma and flavor that will have your taste buds singing.

Pound cakes are one of the traditional cakes that have been around for centuries. One of the popular variations of pound cake is the almond pound cake with lemon flavor. A mixture of rich and buttery taste of almond and the bright and tangy twist of lemon makes it a perfect dessert for any occasion. Here are valuable tips that you should keep in mind while making the almond pound cake with lemon flavor.

Tip 1 - Ingredient Quality

One of the critical factors in creating a fantastic almond pound cake with lemon flavor is to use high-quality ingredients. The better the quality of the ingredients you use, the better the flavor and texture of the cake are likely to be. It would be best if you used good quality butter, eggs, sugar, flour, and almonds to bring out the rich taste of almond and the tanginess of lemon. Always choose organic, fresh and natural ingredients that are free from any chemical additives.

Tip 2 - Precise Measurements

When it comes to baking, all ingredients require precise measurements, particularly in a recipe like almond pound cake with lemon flavor, where the ingredients' balance is critical. Minor deviations and changes in the measurements can affect the texture, color, and flavor of the cake adversely. It is best to measure each ingredient using a kitchen scale to get accurate measurements of the ingredients.

Tip 3 - Room Temperature Ingredients

It is best to use ingredients that are at room temperature when making the almond pound cake with lemon flavor. Cold ingredients, particularly the butter and eggs, can cause the cake batter to split, making the cake dense and heavy, resulting in poor texture and flavor. Letting the ingredients such as eggs and butter rest at room temperature for about 30 minutes before use will help them mix well and create a smooth batter.

Tip 4 - Mixing and Beating

The way you mix and beat the almond pound cake's ingredients with lemon flavor also plays a crucial role in the final outcome. As pound cakes rely on the butter and sugar creaming together, you must cream them correctly to get the right texture. Mix and beat the ingredients in the right proportion until they are light and fluffy. Over-mixing the batter will cause a high gluten content that will make the cake dry and fragile when it is baked.

Tip 5 - Using the Right Tools

Using the right tools while making almond pound cake with lemon recipes could make a huge difference in the final product. A stand mixer or a handheld mixer, a whisk, and a spatula are mandatory tools you will need to make almond pound cake. The spatula helps scrap the bowl's sides to ensure all the ingredients get mixed correctly, and the whisk ensures that there are no lumps in the batter.

Tip 6 - Using the Right Cake Pan

Using the appropriate cake pan would ensure that your almond pound cake with lemon flavor bakes flawlessly. It would be best to use a standard 9 × 5-inch loaf pan, preferably non-stick, for the perfect texture and even cooking. If you use a smaller or larger pan size, then the baking times and temperature may vary, leading to unevenly baked cake.

Tip 7 - Testing the Cake for Doneness

To ensure your almond pound cake with lemon flavor is perfectly baked, you must test the cake for doneness. Using a toothpick or a cake tester, insert it into the cake's center. If the toothpick comes out clean, then the cake is done. This simple test will ensure that the cake is not undercooked or overcooked.

Tip 8 - Cooling and Storing the Cake

Once the almond pound cake with lemon flavor is baked, allow it to cool down entirely before cutting it to retain the shape and structure. Do not rush the cooling process; otherwise, the heat trapped will cause the cake to sink or be dense. It is best to store the cake in an airtight container or a ziplock bag in the refrigerator. Almond pound cake with lemon flavor can stay fresh for up to six days.
Conclusion
Making almond pound cake with lemon flavor is not a complex task. However, ensuring that you follow the tips carefully will help you achieve the perfect texture, color, and flavor of the cake you desire. Use high-quality ingredients, precise measurements, and the right tools to make the perfect almond pound cake. Enjoy the rich and buttery taste of almond and the bright and tangy twist of lemon with this fantastic recipe.
