topping:
¼ cup whole, unsalted almonds
¼ cup flaked coconut
2 tbsp mini chocolate chips
muffins:
2 cups all purpose flour
2 tsp baking powder
½ tsp salt
½ cup granulated sugar
1 (6 oz) container coconut yogurt
1 egg, slightly beaten
½ cup coconut milk
6 tbsp unsalted butter, melted
½ tsp almond extract
1 cup flaked coconut
1 cup mini chocolate chips

Steps:

  • 1. For the topping, place the almonds and the coconut in the bowl of a food processor and pulse until the almonds are roughly chopped. Pour the mixture into a small bowl and stir in the chocolate chips; set aside. Preheat oven to 375 degrees F. and line muffin pans with cupcake liners (there should be enough batter for 18). In a large bowl, whisk together the flour, baking powder, salt, and sugar; set aside. Combine the yogurt, egg, and coconut milk in a microwave safe bowl or large measuring cup. Microwave on high for 20-25 seconds or until the mixture is at room temperature. Stir in the melted butter and the almond extract. Add the yogurt mixture, coconut, and chocolate chips to the flour mixture and gently stir with a wooden spoon or a spatula until just blended. Spoon the batter into the lined muffin cups. Sprinkle the topping evenly over each muffin. Bake for 17 to 20 minutes, or until the tops spring back when lightly touched. HELPFUL TIPS: Use a cookie scoop to fill the muffins liners for less mess and easy measuring. If you prefer a larger muffin, fill 12 muffin cups with the batter and adjust the baking time.

Tips for Making the Best Almond Joy Muffins

Making almond joy muffins can be easy and stress-free if you follow a few simple tips:

  • Be sure to measure your ingredients accurately, especially the flour. Too much or too little flour can greatly affect the texture of your muffins.
  • Don't overmix your batter. Mix the ingredients until just combined to avoid ending up with tough muffins.
  • If you're worried about your muffins sticking to the pan, use muffin cups or generously grease the cups beforehand.
  • Be sure to check your muffins regularly while they're baking. Different ovens can cook at different rates, and you don't want to overbake your muffins.
  • Let your muffins cool in the pan for a few minutes before transferring them to a wire rack. This will help them cool evenly and prevent them from getting soggy on the bottom.

Conclusion

Almond Joy muffins are a delicious and fun twist on the classic muffin. With their perfect combination of coconut, almonds, and chocolate, they're sure to become a favorite in any household. While variations of the recipe abound, a basic recipe with a few key tips will have you baking perfect almond joy muffins every time. Whether you enjoy them as a morning treat or a mid-day snack, almond joy muffins are a delightfully decadent way to enjoy the flavors of the famous candy bar in muffin form.

Muffins are a convenient and easy-to-make breakfast option that can also serve as a snack. Almond joy muffins are an indulgent treat that combines the flavors of coconut, chocolate, and almonds, just like the famous candy bar of the same name. Here are some valuable tips to keep in mind when making almond joy muffins.

Tip #1: Use high-quality ingredients

The taste of your almond joy muffins will depend heavily on the quality of the ingredients you use. Make sure to use high-quality chocolate chips, coconut flakes, and almonds. Choosing top-quality cocoa powder also goes a long way in enhancing the flavor of your muffins. Use fresh and organic eggs, butter, and milk for best results.

Tip #2: Measure ingredients precisely

Baking is chemistry, and any slight deviation from your recipe's measurements can significantly impact the final result. Make sure to measure all ingredients precisely to ensure that the muffins turn out moist, fluffy, and perfectly sweet.

Tip #3: Don't overmix the batter

When making muffin batters, it's crucial not to overmix them. Overmixing can lead to dense, dry, and tough muffins. To prevent this, use a gentle hand and mix only until the ingredients are combined. If your recipe requires folding in multiple add-ins like chocolate chips and coconut flakes, do it gently and avoid over-stirring.

Tip #4: Use muffin liners or non-stick spray

Muffin cups or liners are a convenient way to keep your muffins from sticking to the pan, and they also add a touch of color to the finished product. Alternatively, you can spray the muffin pan with non-stick spray to ensure your muffins come out of the pan smoothly with no sticking or tearing.

Tip #5: Adjust the oven temperature and bake time

Every oven is different, so make sure to check your muffins' doneness rather than merely sticking to the bake time suggested in the recipe. Start by baking the muffins for the suggested time and then inserting a toothpick in the center of the muffin to see if it comes out clean. If it does, your muffins are done. If it's not, bake for another 1-2 minutes and continue to do so until the toothpick comes out clean.

Tip #6: Experiment with add-ins

While the classic almond joy muffin recipe contains chocolate chips, coconut flakes, and almonds, there's no reason why you can't experiment with other add-ins to create a unique recipe. Some ideas include chopped, dried fruit, cinnamon, peanut butter, or even cream cheese. The possibilities are endless, so have fun and experiment.

Tip #7: Store muffins correctly

To keep your almond joy muffins fresh and moist, store them correctly. You can store them at room temperature for up to 2-3 days, or you can freeze them for up to two months. Wrap the muffins individually in plastic wrap and keep them in an airtight container or freezer bag. Thaw them in the fridge or microwave before enjoying.

Conclusion

These seven tips will help you create delicious and moist almond joy muffins that will satisfy your sweet tooth. By using high-quality ingredients, measuring precisely, not overmixing the batter, using liners or non-stick spray, adjusting oven temperature and bake time, experimenting with add-ins, and storing the muffins correctly, you'll have perfect muffins every time. Enjoy your almond joy muffins with a cup of coffee or tea for a delightful snack or breakfast.
