Homemade Almond Joy Candy Bars image

These Homemade Almond Joys are a family favorite! They are so delicious and easy to make! My husband likes these better than the actual candy bar.

Time 1h5m

Number Of Ingredients 7

1/2 cup light corn syrup ((such as Karo))
1/4 teaspoon salt
10 large marshmallows (exactly 10 or the consistency is off)
2 cups shredded coconut (not flakes) ((it's better if you chop it more finely in a food processor))
1/2 teaspoons vanilla
roasted almonds
1 bag Ghiradelli semi-sweet chocolate chips ((they are worth the extra money))

Steps:

  • In a heavy sauce pan (over medium on the stove) heat syrup, marshmallows, and salt. Stir until marshmallows are melted.
  • Continue to stir over heat for an additional minute.
  • Remove from stove and add coconut and vanilla. Stir well and transfer to a bowl to cool in the fridge. The mixture needs to get cool enough that it can be rolled into balls.
  • In the meantime, melt the chocolate chips. I like to do the double boiled method by putting them in a metal bowl and placing the bowl over a pot of boiling water.
  • Stir until chocolate is melted and smooth. Roll the coconut mixture into small balls or ovals and press an almond into the top.
  • Dip each one in chocolate then let cool on a chilled marble slab, parchment paper, or on wax paper over a chilled cookie sheet. For Homemade Mounds: omit the almond and use dark chocolate chips.

Time 7m

Number Of Ingredients 7

1 1/4 cup shredded sweetened coconut
1/4 cup sweetened condensed milk *
1/2 teaspoon vanilla
18-36 roasted almonds
2 cups dark chocolate chips (or the chocolate of your choice)
Optional: 2 tablespoons coconut oil
36 tiny cupcake liners (about 1" in size)

Steps:

  • Stir together the coconut, condensed milk and vanilla. It should be sticky and hold it's shape when pressed together.
  • Melt the chocolate (along with the optional coconut oil to thin it) in a glass bowl over a pan of water, or in the microwave at half power for about 2 minutes, stirring every 30 seconds or so.
  • Drizzle 1 teaspoon of chocolate into the bottom of each cup. Add 1 teaspoon of the coconut mixture. Press on the coconut slightly to make the chocolate slide up the sides of the liner.
  • Top the coconut with an almond and then pour a teaspoon of chocolate on top. Chill in the refrigerator until ready to eat. Store in the refrigerator for up to a week or in the freezer for a couple of months. Enjoy!

ALMOND JOY CANDIES

Almond Joy Candies image

This is a candy that is very much like an Almond Joy candy bar. It is fairly easy with impressive results. I have been making these around Christmastime for over 20 years.

Provided by thecatergator

Categories     Candy

Time 1h

Yield 30 candies

Number Of Ingredients 6

1 lb powdered sugar
2/3 cup sweetened condensed milk
1 cup coconut
1/2 cup margarine, softened (1 cube, don't use butter)
1 cup chopped fine almonds or 1 cup walnuts
12 ounces chocolate chips (I use Ghiradelli apeels from a cake decorating shop)

Steps:

  • combine all ingredients except for chocolate in a medium size metal bowl. Cover bowl with plastic wrap and place in freezer for about 20 minutes to set up. Roll mixture into 3/4 inch balls and place balls on waxed paper. The balls should be firm and hold their shape.
  • Take a toothpick and stick it in the center of each of the balls and then dip it into the melted chocolate in the double boiler. Let the excess chocolate drip back off into pan. Set chocolate covered candy onto open spot on waxed paper and pull out toothpick, leaving a small hole. You will need to smear chocolate with toothpick to cover the hole. Repeat with remaining balls.
  • If you use apeels, then these should set up in just a couple minutes. If using meltd chocolate chips and parafin, you will want to place these in fridge to help set up.

Valuable Tips When Making Almond Joy Candy Recipes

Almond Joy candies are a delightful treat that many people enjoy. Made with a combination of almonds, coconut and chocolate, they offer a mouth-watering combination of flavors that are sure to satisfy your taste buds. If you're planning on making Almond Joy candy recipes, then you need to have some helpful tips that can make the process easier and more successful. Here are some valuable tips for making Almond Joy candy recipes.
1. Use High-Quality Ingredients
The quality of the ingredients you use will greatly affect the final product of your Almond Joy candy. Therefore, it is essential to choose high-quality ingredients, especially for the chocolate and coconut. Be sure to use organic or fair-trade chocolate and shredded coconut that is unsweetened and as natural as possible. Additionally, make sure the almonds you use are fresh and raw, as they will provide a better texture and flavor.
2. Melt Chocolate Properly
When you’re making Almond Joy candy, melting the chocolate is a crucial step. If the chocolate isn't melted properly, it won't coat the other ingredients well, which can leave your candies looking messy and unappetizing. Therefore, it's important to melt the chocolate slowly and at a low temperature. Microwave or double-boiler methods can be used to melt the chocolate. Ensure that you stir the chocolate continuously to prevent it from overheating and burning.
3. Dry Roasting the Almonds
Dry roasting the almonds is another important step when making Almond Joy candy recipes. This technique eliminates the excess moisture in the almonds, which can make them taste bland and rancid. Dry roasting the almonds also adds a nuttier and deeper flavor, which enhances the taste of the candies. To dry roast the almonds, spread them in a single layer on a baking sheet and bake at 350°F for 10-15 minutes, or until they're golden brown.
4. Shaping the Candies
Shaping the Almond Joy candies is a bit tricky, especially if you're doing it for the first time. The mixture can be sticky and messy, but if you shape them properly, they will look and taste amazing. One of the tricks to shaping them is to use a small cookie scoop or a tablespoon to measure equal amounts of coconut filling. Roll the mixture between your hands and gently press an almond on each side before dipping them into the chocolate. This will give you uniformly sized Almond Joy candies that are comfortable to eat.
5. Chill the Candies before Serving
After shaping the candies, chill them in the refrigerator for at least 30 minutes before serving. This will allow them to set, and will help the chocolate to harden, giving them a more professional appearance. Chilling the candies will also help to lock in the flavors, making them more delicious.
6. Store Them Properly
Storing Almond Joy candies properly will help to keep them fresh and tasty for longer. Store the candies in an airtight container at room temperature or in the refrigerator. However, make sure you bring them to room temperature before serving to ensure they are soft and chewy.
7. Add Extra Flavors
If you want to add some extra flavor to your Almond Joy candies, you can include additional ingredients like vanilla extract, sea salt, or even orange zest. These ingredients will add an extra layer of flavor to the candies, making them irresistible.
8. Experiment with Different Types of Chocolate
While traditional Almond Joy candy recipes call for milk chocolate, you can experiment with different types of chocolate to create different tasting candies. Dark chocolate or white chocolate can be used in place of milk chocolate, or you can mix and match different types of chocolate to create unique flavor combinations. In conclusion, making Almond Joy candy recipes can be a fun and rewarding experience. However, to create delicious and visually appealing candies, it's essential to follow these valuable tips. Remember to use high-quality ingredients, melt the chocolate properly, dry-roast the almonds, shape the candies correctly, chill them before serving, store them properly, and experiment with different types of chocolate and flavors. With these tips, you can create fantastic Almond Joy candies that everyone will love.
