Number Of Ingredients 9

10 tablespoons (1 1/4 sticks) unsalted butter, room temperature, plus more for pan
1 cup all-purpose flour (spooned and leveled), plus more for pan
3/4 cup sugar
3 large eggs
1 1/2 cups slivered almonds (1/2 pound)
1/4 teaspoon fine salt
1 teaspoon pure vanilla extract
1 1/2 teaspoons finely grated lemon zest
18 grapes, halved crosswise

Steps:

  • Preheat oven to 350 degrees. Lightly butter and flour an 3-by-8-inch metal loaf pan. In a large bowl, using an electric mixer, beat butter and 1/2 cup sugar on high until light and fluffy, about 3 minutes. Beat in eggs, one at a time, until combined, scraping down bowl as needed. In a food processor, pulse almonds and 1/4 cup sugar until finely ground. Add flour and salt and pulse to combine. With mixer on low, beat almond mixture into butter mixture until combined. Beat in vanilla and lemon zest.
  • Transfer batter to pan and smooth top. Press grape halves into batter in rows and bake until a toothpick inserted in center comes out with a few moist crumbs attached, about 1 hour, rotating pan halfway through. Almond grape tea cake is a scrumptious cake that can be enjoyed anytime, anywhere. This delightful cake is perfect for tea-time or a light snack between meals. It is fluffy, moist, and filled with the sweet and tart flavors of grapes and almonds. If you want to make the perfect almond grape tea cake recipe, you need to follow some valuable tips. In this article, we will share some of these tips with you to help you make the best almond grape tea cake.

Tip 1: Choose the right grapes

Choosing the right grapes is essential when making almond grape tea cake. You want to go for grapes that are sweet and juicy. Look for the ones that are plump and have a firm texture. Avoid using grapes that are too sour or too soft, as they will not give the desired taste and texture to the cake.

Tip 2: Toast the almonds

Toasting the almonds adds depth and flavor to the cake. You can toast the almonds in a dry pan or oven. If using a pan, spread the almonds in an even layer and cook over medium heat until they turn golden brown. If using the oven, preheat it to 350°F and spread the almonds on a baking sheet. Bake for about 10 minutes or until the almonds are golden brown. Let the almonds cool before using them in the cake.

Tip 3: Use room temperature ingredients

For the cake batter to blend well and rise perfectly, it is important to use room temperature ingredients. Take the eggs, butter, and milk out of the fridge at least an hour before starting to bake. This will ensure that the batter has a smooth texture and produces a tender cake.

Tip 4: Cream the butter and sugar well

Creaming the butter and sugar well is an important step in making any cake. This helps to incorporate air into the batter, which is essential for the cake to rise. Beat the butter and sugar together until they are light and fluffy. This should take around 3-4 minutes. Scrape down the sides of the bowl occasionally to ensure that everything is perfectly mixed.

Tip 5: Use cake flour

Cake flour is a low-protein flour that is specifically designed for baking light and fluffy cakes. It has a finer texture than all-purpose flour, which makes it perfect for almond grape tea cake. Using cake flour will give the cake a soft and tender crumb. You can find cake flour in most supermarkets or online stores.

Tip 6: Fold in the flour and wet ingredients gently

When adding the flour and wet ingredients to the creamed butter and sugar, it is important to do it gently. Overmixing can cause the cake to become tough and chewy. Fold in the dry ingredients and wet ingredients by hand, using a spatula. Mix until everything is just combined, and there are no lumps or dry spots.

Tip 7: Sprinkle the grapes and almonds on top of the batter

Once you have poured the batter into the cake pan, sprinkle the grapes and almonds on top of the batter. This will ensure that they are evenly distributed throughout the cake. You can press them lightly into the batter using your fingers.

Tip 8: Bake the cake at the right temperature

Baking the cake at the right temperature is essential for it to turn out perfectly. Preheat the oven to 350°F and bake the cake for 40-50 minutes or until a toothpick inserted in the center comes out clean. Avoid opening the oven door while baking, as this can cause the cake to sink in the middle.

Tip 9: Let the cake cool before serving

Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Wait until the cake is completely cooled before slicing and serving. This will ensure that the flavors have set, and the texture is perfect.
Conclusion
Almond grape tea cake is a delicious treat that is perfect for any occasion. By following these valuable tips, you can make the perfect almond grape tea cake every time. Remember to choose the right grapes, toast the almonds, use room temperature ingredients, cream the butter and sugar well, use cake flour, fold in the flour and wet ingredients gently, sprinkle the grapes and almonds on top of the batter, bake the cake at the right temperature, and let the cake cool before serving.
