ALMOND-MILK GRANITA (GRANITA DI MANDORLE)

Almond-Milk Granita (Granita di Mandorle) image

At Caffè Sicilia, this granita is served for breakfast along with a brioche and a shot of espresso-a wonderful way to start the day. Unlike most other granitas, it has an almost creamy texture. (The Caffè Sicilia almond paste, though pricey, is worth it: Incredibly moist and possessing a delicate floral quality, it tastes so pure that we actually eat it by the spoonful.)

Categories     ice creams and sorbets, dessert

Time 3h

Yield Serves 8

Number Of Ingredients 4

14 ounces almond paste, broken into pieces
2 1/4 cups whole milk
Pinch cinnamon
About 20 amaretti cookies, crushed into small pieces and crumbs

Steps:

  • In a saucepan combine 4 cups of water, the almond paste and milk. As it heats, use the back of a spoon or a potato masher to crush and dissolve the paste. When the mixture begins to steam -- before it boils -- take it off the heat. Let cool slightly, then carefully whiz with an immersion blender until the paste is fully incorporated. Pour into a cheesecloth-lined sieve set over a bowl. Let drain completely, without pressing the solids.
  • When cool, add a pinch of cinnamon. Pour into a shallow baking pan, and freeze. Check after about 30 minutes; when it begins to get icy, use the back of a large spoon to press down on the mixture and break it into pieces. Repeat several times over the next 2 hours, until the granita is fully frozen but broken into shards. To serve, place 1 1/2 tablespoons crushed amaretti cookies in the bottom of a glass, followed by a serving of granita, and top with 2 more tablespoons crushed cookies.

Almond granita is a delicious and refreshing dessert that is perfect for hot summer days. It is a traditional Italian dessert that is made by combining almond milk, sugar, and ice cubes. This dessert is easy to make and requires only a few ingredients. However, there are some valuable tips that you should keep in mind when making almond granita recipes. Here are some of these tips:

Tip 1: Use high-quality ingredients

The quality of the ingredients that you use is crucial when it comes to making almond granita. For instance, you should use high-quality almonds that are fresh and unsalted. It is also advisable to use pure almond extract instead of artificial extracts. When it comes to sugar, it is recommended to use granulated sugar instead of confectioners' sugar as the latter can alter the texture of the granita. Additionally, make sure that the water you use to dilute the almond milk is pure and clean.

Tip 2: Freeze the mixture gradually

Freezing the mixture gradually is essential to ensure that the granita has a perfect texture. You should start by freezing the mixture for about two hours and then remove it from the freezer and use a fork to fluff it up. This will break up any ice crystals that may have formed and help to create a smooth texture. Then, return the mixture to the freezer and repeat the process every thirty minutes until the granita is fully frozen.

Tip 3: Use a high-speed blender

For the best results, it is ideal to use a high-speed blender when making almond granita. This type of blender is designed to break down the ice cubes quickly and create a smooth and fluffy mixture. A regular blender or food processor may not be able to create the same consistency as a high-speed blender, and the resulting granita may have a grainy texture.

Tip 4: Experiment with additional flavors

While almond granita is delicious on its own, you can experiment with additional flavors to enhance the taste. For instance, you can add some vanilla extract or cinnamon powder to give the granita a unique flavor. You can also add some chopped almonds or grated coconut to add some texture to the mixture. Additionally, you can mix the almond granita with other flavors such as coffee or chocolate to create a more complex dessert.

Tip 5: Serve the granita properly

Serving the almond granita properly is important to enhance its taste and texture. For instance, you should serve the granita in chilled glasses or bowls to keep it from melting quickly. You can also garnish the granita with some sliced almonds, berries, or whipped cream to make it more visually appealing. Additionally, remember to serve the granita immediately after it is fully frozen to ensure that it has the perfect texture.
Conclusion
In conclusion, almond granita is a tasty and refreshing dessert that is perfect for hot summer days. With the right ingredients, equipment, and technique, you can make a delicious almond granita that will impress your family and friends. When making almond granita, make sure to use high-quality ingredients, freeze the mixture gradually, use a high-speed blender, experiment with additional flavors, and serve the granita properly. Follow these tips, and you will be able to create a perfect almond granita every time.
