- Heat oven to 350°F Grease and flour 12-cup Bundt pan or 10-inch tube pan.
- Combine 1 cup sugar, butter and eggs in large mixer bowl.
- Beat at medium speed, scraping bowl often, until creamy (1 to 2 minutes).
- Reduce speed to low; add all remaining coffee cake ingredients.
- Continue beating, scraping bowl often, until well mixed (2 to 3 minutes).
- (Mixture will be thick.).
- Combine all filling ingredients in small bowl.
- Spoon half of batter into prepared pan; sprinkle with filling.
- Spoon remaining batter into pan over filling.
- Bake for 35 to 45 minutes or until toothpick inserted in center comes out clean.
- Cool completely.
- Invert cooled cake onto serving plate.
- Stir together all glaze ingredients in small bowl; drizzle over cooled coffee cake.
- Garnish with sliced almonds.
- TIP: Coffee cake can be baked a day ahead.
- Cool completely; cover.
- Just before serving, drizzle with glaze; garnish with almonds.

ALMOND DREAM BARS
I found this recipe I cut out of the local newspaper, while cleaning out my recipe box. The author is not identified, so I can't take personal credit for it. It's a great summer dessert since there is no baking required. It was easy and taste delicious!!!

- 1. 1) Line the bottom of a buttered 8 inch pan with HALF the graham crackers 2)In medium saucepan, combine brown sugar, butter and evaporated milk. Cook over medium heat, stirring constantly until mixture comes to a boil. Remove from heat and immediately stir in graham cracker crumbs, 3/4 cup of the almonds, coconut and chopped fruit
- 2. 3) Spread mixture over the crackers in the pan. 4) Top with remaining crackers, pressing down firmly.

DARK CHOCOLATE AND ALMOND DREAM
Steps:
- Chop a ½ cup of the bleached almonds into pea-sized pieces and set aside. If you do not have bleached almonds, you can do this easily by pouring boiling water over the almonds and letting them sit for 5 minutes. Drain the water and pinch the almonds between your fingers to remove the skin. Preheat the oven at 400° F. Cut the chocolate into chunks, place in a bowl with the butter and melt together over simmering water. Set aside to cool. Line the bottom and sides of a 7 ½'' by 7 ½'' pan with baking paper. To make this job easier, slightly soak the paper in cold water, then squeeze it and line the pan, drying any excess water with a kitchen towel. Whip the sugar, eggs and vainilla extract at high speed until they are light and fluffy. Fold into the cooled chocolate mixture. Put the remaining ¼ cup almonds in a high speed food processor and reduce them to a powder. Sift the flour and the salt together and stir into the chocolate. Add the powdered almonds and mix them in thoroughly. Carefully add the chopped almonds and stir them carefully into the mixture. Spread the batter evenly into the prepared pan. Bake at 400° F for about 25 minutes or until the cake is completely set but still lightly soft. Let it cool completely. Meanwhile, make the glaze. Heat the heavy whipping cream together with the honey up to 185 ° F Then, remove from the heat source, add the chocolate and stir continuously until it is completely melted. Add the butter and mix thoroughly. Pour this glaze over the brownie cake and spread it evenly. As an alternative, you can use ¾ of the glaze to spread over the cake and reserve the other ¼ to decorate the squares using a pastry bag. Once the glaze is set, cut into squares of the desired size and serve.

APRICOT ALMOND DREAM COOKIES
A package of dried apricots began this journey, and now they are one of my ultimate cookies. I love the chewiness of these cookies. The white chocolate drizzle is made with white chocolate chips melted with a little cream and cream cheese and powdered sugar. Then, topped with sliced almonds that give these cookies that extra special crunch on top. I hope you love them as much as I do.

- Preheat oven to 350 degrees. Line a cookie sheet with silpat mat or parchment paper.
- In the bowl of an electric mixer, cream the butter, light brown sugar and granulated sugar and beat on medium high speed 3-4 minutes until creamy. Add eggs, one at a time, and beat on medium speed after each addition. Add vanilla and almond extract and continue to beat an additional 1 minute.
- In a medium bowl, whisk together the flour, baking soda and oats. Slowly add to mixing bowl with speed on low until just combined. Add apricots, coconut and almonds and continue to mix on low to combine.
- Spoon by heaping teaspoons onto prepared cookie sheet and bake 10-12 minutes until golden on the outside and set in the middle when touched with fingertip. Remove and allow to cool 10 minutes on pan.
- To make drizzle, add white chocolate chips, cream cheese and heavy cream to a medium microwave-safe bowl and heat 1 minute on high. Whisk until smooth. If necessary, heat another 30 seconds and whisk until no lumps remain.
- Transfer cookies to a plate or cooling rack and drizzle with warm drizzle generously. Sprinkle tops with sliced almonds while before drizzle dries. Makes 36 cookies

- Tip: To grind almonds use a little of the sugar in a processor with the nuts, as this will prevent the nuts from turning to butter.
- Cake:.
- Preheat oven to 350°F.
- Grease a 9-inch springform pan.
- Combine the flour and the almonds together.
- Beat egg yolks until very thick and pale pale yellow.
- Gradually add the sugar and beat until mixture forms a ribbon.
- Add the nuts and flour.
- Beat the egg whites until stiff peaks form.
- Fold the beaten stiff whites into the yolk mixture.
- Pour into prepared pan.
- Bake 45 minutes until just done.
- Use a tester at this point.
- Cool in pan.
- Filling:.
- Gently warm 3 tbsp of the cream in a small pot.
- Sprinkle the gelatin over and let stand until lukewarm but not set.
- Whip the remaining cream until soft peaks form.
- Add the warm gelatin mixture, and beat until stiff.
- Fold in the toasted finely chopped almonds, and Cognac.
- Split cooled cake in half.
- Spread half the filling over bottom; replace the top layer and cover all with the remaining cream mixture.
- Garnish with strawberries and shaved chocolate and extra whipped cream.
