Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Stir almond meal, honey, cinnamon, and nutmeg together in a bowl. Mix beaten egg whites into the almond meal mixture; scoop by teaspoonful onto prepared baking sheet.
- Bake in preheated oven until browned, 10 to 15 minutes.

Steps:
- In a large bowl, beat butter and cream cheese until smooth. Beat in egg. Add cookie mix; mix well (dough will be sticky). Shape dough into a disk; wrap in plastic. Refrigerate 1 hour or until firm enough to handle., Place almonds and sugar in a food processor; pulse until almonds are finely chopped. Add eggs; process until mixture forms a paste. Add butter and vanilla; process until blended., Preheat oven to 350°. Shape dough into 1-1/4-in. balls; press onto bottom and up the sides of greased mini muffin cups., Place 1 Tbsp. filling in each cup. Top each with a cherry. Bake 16-18 minutes or until edges are golden and filling is set. Cool in pans 10 minutes. Remove to wire racks to cool completely. Dust tops with confectioners' sugar before serving.

DOUBLE ALMOND DELIGHTS ( COOKIES )
I want to give a very big thank you to a Chef from here on " ZAAR " , who's recipe inspired me to make up my own recipe. :). The Chef who inspired me wants to remain nameless, so that's the way it will be. If you like almonds as much as I do, you really are going to enjoy this cookie.If you are using whole almonds chop them before measuring. Also if you like a cookie that has a sweet/salty thing going on, use the roasted and salted almonds. To flatten the cookies,use the flat bottom of a glass dipped in sugar.The way that this recipe is written gives me 32 cookies, depending on how big you make yours you might get more or less. The time for each cookie sheet is the time for baking. Please let cookies cool on cookie sheet for 2 to 3 minutes before removing, let finish cooling on wire racks. - Preheat oven to 350 degrees.
- Sift together flour,soda, and cream of tartar, set aside.
- In a large bowl, cream together both sugars,shortening, and margarine mixing well.
- Add egg and extract,mix well.
- Then add flour to creamed mixture a little at a time until well blended.
- Stir in almonds.
- Take 1 Tablespoon of cookie dough and shape into balls, placing on cookie sheets.
- Flatten each slightly with the bottom of a sugar coated glass.
- Bake for 10 to 12 minutes, or until just lightly browned, ( Don't let the cookies burn ).

DANISH DELIGHTS - ANY FRUIT, PIE FILLING OR ALMOND
This is a modified Meduri Farms recipes from Smart Cooking the Costco Way. I prefer fresh fruit, this recipe calls for dried. Just be aware that if you use fresh, there will be juice escape from the fruit during cooking. I later further modified it to allow for pie filling, almond paste or jam.

Steps:
- Beat cream cheese, cottage cheese (if using) and sugar until smooth in a mixer. Add egg, lemon peel, lemon juice and vanilla. Beat until well blended.
- If using dried fruit, fold it into the cream cheese mixture. If using fresh fruit, jam or pie filling, hold it aside.
- If using Pillsbury rolls, open crescent rolls. Do not unroll, just slice into 8 pieces. If you made your own, shape into 8 rounds.
- Place on silpat. Press in the center to make a depression for the cream cheese and fruit/filling or jam.
- Place 1/8th of the mixture in the center of each. If using fresh fruit, pie filling or jam, spoon some on top of that in the center of each.
- If using nuts, sprinkle on top now.
- Bake for 15-20 minutes or until golden brown.
- Remove fro oven and place on a cooling rack for about 15 minutes.
- Mix butter and confectioners' sugar. Then add milk and mix to make icing.
- Drizzle over each danish.

ALMOND DELIGHTS WITH CHOCOLATE ALMOND FILLING
Steps:
- Preheat oven to 350 degrees Spread the almonds on a baking sheet and bake in the preheated oven until lightly browned 8 to 10 minutes remove from the oven and let cool. Use the metal blade of a food processor to chop the almonds finely 6 to 8 pulses reserve. Process the butter and sugar until smooth and creamy about 20 seconds, stopping to scrape down the bowl as necessary. Add the flour, salt and almond extract and pulse 8 to 10 times or until well mixed, stopping to scrape down the bowl as necessary. Preheat the oven to 350 degrees. Roll a rounded half tyeaspoon of dough at a time into a ball the size of a marble. Place about 1 1/2 inches apart on ungreased baking sheets. Bake the cookies in the center of the preheated oven until firm but not brown 10 to 12 minutes. Place them on a wire rack to cool Spread about 1/2 teaspoon of the Chocolate Almond Filling on the bottom of 1 cookie. Place anothe cookie bottom side down on the filling and press lightly
MACADAMIA ALMOND DELIGHTS
A few years ago, I decided to liven up my basic chocolate chip cookie recipe by adding macadamia nuts, white chocolate chips and almond paste. Since the scrumptious results got such rave reviews from my 26 grandchildren, we've designated this version a "keeper".

- In a large bowl, cream the butter, shortening and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla and almond paste. - 1. Prepare a 9x13 pan by lining it with foil and spraying the foil with nonstick cooking spray.
- 2. In a large mixing bowl, stir together the condensed milk, salt and vanilla with a spatula or wooden spoon.
- 3. Sprinkle in the powdered sugar gradually until it is well incorporated, then add the coconut and stir until combined.
- 4. Press the candy into the prepared pan in an even layer. You may not use the whole pan if you prefer a thicker coconut candy. While the candy is still soft, press the whole almonds into the tops at even intervals to embed them slightly in the candy. Place the pan in the refrigerator to set the candy, about 1 hour.
- 5. Once firm, remove from refrigerator and use a sharp knife to cut the candy into small rectangles.
- 6. Microwave the chocolate with the shortening in a microwave safe bowl until melted, stirring every minute.
- 7. using dipping tools or two forks, immerse the coconut bar completely in the chocolate and then bring it up, dragging it on the lip of the bowl to remove excess chocolate. Place it on a foil lined baking sheet and repeat with the remaining candy.
ALMOND DELIGHTS

- • Preheat the oven to 375°F. Oil a cookie sheet. • Grind the almonds to a fine meal in the blender. Place in a bowl and set aside. • Blend the tofu and orange juice in the blender. • Cream the almond butter and oil together in a mixing bowl. Stir in the date sugar, almond extract, stevia extract, and grated orange rind. Add the blended tofu (or egg) and mix well. • Stir the almond meal, flour, leavenings, and salt together in a bowl. Add the flour mixture to the wet ingredients. Add just enough flour so that the batter stops sticking to the sides of the bowl and forms a ball. Chill the dough for easier handling. • Roll the dough into small balls with your hands and, place on the cookie sheet. Flatten the cookies to about 1/4 inch thick with the palm of your hand. Press 1/2 almond, cut lengthwise, in the center of each cookie. Bake for 12 to 15 minutes.

- in a large mixing bowl mix all of the dry ingredients
- in the middle of the dry mixture place room temp butter, with a fork blend well batter will be crumbly at this point make into a ball and roll with hands back and forth into a log now cover log with nuts
- slice the log 1/2 inch thick
- bake at 375 degrees for 12 min cool 10 min lightly dust with powdered sugar
