Roasted Asparagus With Buttered Almonds, Capers and Dill image

Cooking asparagus is one of the easiest kitchen tasks around. There is almost no preparation, the asparagus is roasted plain in the oven, and all that's left to do is fry some almonds and capers to spoon on top. This can be served as part of a festive spread of salads and seasonal dips. It also works well as a side for meat, fish or grain dishes.

Number Of Ingredients 7

1 1/3 pounds/600 grams asparagus, woody ends trimmed
3 tablespoons olive oil
Salt and black pepper
2 tablespoons/30 grams unsalted butter
Scant 1/4 cup/20 grams sliced (flaked) almonds
3 tablespoons/30 grams baby capers, patted dry on paper towels (kitchen paper)
1/4 to 1/2 cup/5 to 10 grams roughly chopped fresh dill

Steps:

  • Heat oven to 425 degrees Fahrenheit/220 degrees Celsius. Line a baking sheet (baking tray) with parchment paper.

Remove from oven and set aside in the pan.

  • Add remaining 2 tablespoons oil to the pan and heat over high heat. Once hot, add the capers and fry, stirring continuously, until they have opened up and become crisp, 1 to 2 minutes.
  • Using a slotted spoon, remove capers from the oil and sprinkle over the asparagus. Add dill. Using tongs or two spoons, mix gently to combine, transfer to a large plate and serve warm.

In this article, we will explore some of the valuable tips that you can follow when making the almond-crusted baked fried asparagus recipes.

1. Select Fresh Asparagus

The first and most crucial tip is to select fresh asparagus. Fresh asparagus tastes better, is more nutritious, and cooks quickly. When selecting asparagus, look for bright green spears that are firm, straight, and with tightly closed tips. Avoid asparagus that has slimy or dry stems, brown tips, or yellowish color. You can also determine the freshness of asparagus by gently bending the spear. Fresh asparagus should snap easily and not bend.

2. Choose the Right Almonds

The second tip is to choose the right almonds for the recipe. Almonds are a vital ingredient in almond-crusted baked fried asparagus recipes. They add flavor, texture, and nutritional value to the dish. You can choose between raw, blanched, sliced, or slivered almonds, depending on your preference. Raw almonds have more nutrients but are less crunchy, while blanched almonds have a crunchy texture and a neutral taste. Sliced or slivered almonds add more texture to the dish but are less nutritional.

3. Use Panko Breadcrumbs

One of the essential ingredients in the almond-crusted baked fried asparagus recipe is breadcrumbs. Panko breadcrumbs are the best option for this recipe as they create a light and crispy texture without absorbing too much oil. Panko breadcrumbs are Japanese-style breadcrumbs that have a coarser texture than regular breadcrumbs. Hence, they produce a light and crunchy coating when fried or baked.

4. Always Blanch the Asparagus

Blanching is a cooking technique that involves boiling vegetables briefly before cooking them further. Blanching the asparagus before baking or frying helps to retain their color, flavor, and texture. It also ensures that the asparagus is cooked evenly. To blanch asparagus, bring a pot of water to boil and immerse the asparagus in boiling water for 1-2 minutes. Then, remove the asparagus and submerge them in cold water to stop the cooking process.

5. Add Seasonings and Spices

Seasonings and spices add flavor and aroma to the almond-crusted baked fried asparagus recipe. You can use a variety of seasonings and spices such as garlic, onion powder, paprika, cumin, and thyme, depending on your preference. You can mix the seasonings and spices with the breadcrumbs or sprinkle them over the asparagus before baking or frying.

6. Use an Egg Wash

An egg wash is a mixture of beaten eggs and water or milk that is used to make coatings stick to food. In almond-crusted baked fried asparagus recipes, the egg wash helps to make the breadcrumb and almond coating adhere to the asparagus. To make an egg wash, whisk an egg in a bowl and add a tablespoon of water or milk. Dip the blanched asparagus spears in the egg wash and coat them with the breadcrumb and almond mixture.

7. Bake or Fry at the Right Temperature

The final tip is to bake or fry the almond-crusted baked fried asparagus at the right temperature. The ideal temperature for baking is 400°F, while the ideal temperature for frying is 350-375°F. Baking the asparagus takes longer than frying them, but it is a healthier option as it requires less oil. When baking the asparagus, place them on a baking sheet and bake for 15-20 minutes, turning once, until they are golden brown. When frying the asparagus, preheat the oil in a deep pan and fry the asparagus in batches for 2-3 minutes or until they are golden brown. Drain the fried asparagus on a paper towel to remove any excess oil.

Conclusion

In conclusion, the almond-crusted baked fried asparagus recipe is a simple and delicious snack that you can prepare for your family and friends. However, it is essential to follow some valuable tips, such as selecting fresh asparagus, choosing the right almonds, using panko breadcrumbs, blanching the asparagus, adding seasonings and spices, using an egg wash, and baking or frying at the right temperature.
