Number Of Ingredients 5

3 cups chocolate chips
1 can (14 ounces) sweetened condensed milk
1/2 teaspoon vanilla extract
2 tablespoons Amaretto Liquor (see note)
1/2 cup sliced toasted almonds

Steps:

  • 1. Line a 9x9" or an 8x8" pan with foil and spray with cooking spray. 2. Add chocolate chips and sweetened condensed milk to a medium saucepan. Place over low heat (keep it low!!) and heat until melted, stirring occasionally (more as they melt together). Once the chocolate chips are completely melted, remove from heat and stir in vanilla and Amaretto. Spread quickly in prepared pan. Immediately sprinkle with almonds. Set at room temperature until cool, and then chill until hardened. Notes: If you don't drink liquor, you can substitute 1 teaspoon almond extract for the Amaretto. Or, try a different flavor liquor for a different kind of fudge! To toast almonds, place on a cookie sheet and bake at 350 degrees for just a few minutes, stirring occasionally. DO NOT leave the room or they will burn!

Almond amaretto fudge is a delicious and decadent treat that is perfect for any occasion. It is one of the most popular types of fudge, known for its creamy texture and rich flavor. Making almond amaretto fudge at home is easy, and with a few tips, you can create a perfect batch every time.

Tip 1: Use High-Quality Ingredients

The key to making great tasting fudge is to use high-quality ingredients. When making almond amaretto fudge, using high-quality almonds and amaretto liqueur will make all the difference in flavor. Choose almonds that are fresh and crunchy, and opt for a higher quality amaretto, such as Disaronno or Lazzaroni.
Tip 1a: Toast the Almonds
Toasting the almonds before adding them to the fudge adds an extra layer of flavor and a nice crunch to the texture. Simply spread the almonds out on a baking sheet and bake them in the oven at 350°F for about 10-15 minutes, or until they are lightly golden brown.

Tip 2: Use a Candy Thermometer

Making fudge can be a bit tricky, and it's important to use a candy thermometer to ensure that the fudge reaches the correct temperature. Overcooking or undercooking the fudge can result in a grainy texture, so it's essential to get the temperature right.
Tip 2a: Soft-Ball Stage Temperature
When making fudge, it's important to cook it to the soft-ball stage, which is between 235°F to 240°F. This is the stage at which the sugar mixture reaches the proper consistency to create a smooth and creamy texture. Using a candy thermometer will ensure that the fudge reaches the soft-ball stage temperature.

Tip 3: Avoid Overmixing

After the fudge has cooled to the proper temperature, it's important to avoid overmixing it. Overmixing can cause the fudge to become too firm or develop a grainy texture.
Tip 3a: Fold in the Almonds
Once the fudge has reached the proper temperature, it's time to add in the toasted almonds. It's important to gently fold in the almonds, using a spatula or wooden spoon. Be careful not to overmix, as this can cause the fudge to become grainy.

Tip 4: Line the Pan with Parchment Paper

To ensure that the fudge comes out smoothly and easily, it's important to line the pan with parchment paper. This will prevent the fudge from sticking to the bottom of the pan and make it easy to cut into squares.
Tip 4a: Smooth the Surface with a Spatula
Before allowing the fudge to cool completely, use a spatula to smooth the surface. This will create an even layer and prevent any air bubbles from forming.

Tip 5: Store in an Airtight Container

Once the fudge has cooled and been cut into squares, it's important to store it in an airtight container. This will prevent it from drying out and losing its flavor.
Tip 5a: Store in the Refrigerator
Almond amaretto fudge should be stored in the refrigerator to keep it fresh and prevent it from melting. It will stay fresh for up to two weeks when stored properly.

Conclusion

Making almond amaretto fudge is easy and fun, and with these tips, you can create a delicious and decadent treat every time. Use high-quality ingredients, a candy thermometer, and be careful not to overmix. Line the pan with parchment paper and store the fudge in an airtight container in the refrigerator. These tips will help you create a perfect batch of almond amaretto fudge every time.
