GORGONZOLA CREAM SAUCE

Gorgonzola Cream Sauce image

Autumn is the season for rich, creamy sauces, and I'm pretty sure you're going to be shocked at just how easy this one is. When your cream is reduced, your sauce is practically done. I like serving this with a stuffed pasta like tortellini or ravioli, topped with diced apple and crunchy toasted walnuts.

Time 40m

Yield 6

Number Of Ingredients 10

1 cup heavy whipping cream
salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
6 ounces dry miniature ravioli
3 ounces crumbled Gorgonzola cheese
2 tablespoons chopped Italian flat leaf parsley
2 tablespoons freshly grated Parmesan cheese
½ apple, diced
¼ cup chopped toasted walnuts
1 teaspoon chopped Italian flat leaf parsley

Steps:

  • Place a heavy skillet over medium heat. Pour cream into skillet, bring to a simmer, and cook cream until it reduces by half, about 8 minutes, stirring occasionally. Season with salt, black pepper, and cayenne pepper.
  • Bring a pot of salted water to a boil. Pour dried ravioli into boiling water and cook, stirring occasionally, until pasta is tender, 16 to 18 minutes. Drain pasta, reserving a cup of pasta water.
  • Gently fold cooked ravioli into cream sauce and turn heat to low. Mix in Gorgonzola cheese, stirring gently until melted. If sauce is too thick, thin it with a little pasta cooking water.

Pasta with Gorgonzola Sauce and Radicchio image

This rich and flavorful sauce is the perfect match for bitter radicchio. It is incredibly easy to make and goes well with any type of (preferably fresh) pasta. My favorite pasta to have this with is gnocchi. The light and fluffy potato pasta goes well with the rich sauce. Garnish with Parmesan cheese and parsley.

Yield Makes 6 servings

Number Of Ingredients 12

Pork
1/4 cup Dijon mustard
1 tablespoon olive oil
1 tablespoon dried thyme
2 3/4-pound pork tenderloins
Gorgonzola sauce
1 tablespoon butter
1 tablespoon all purpose flour
1 cup whipping cream
1/4 cup dry white wine
1/4 cup canned low-salt chicken broth
1 cup crumbled Gorgonzola cheese (about 4 ounces)

Steps:

  • For pork:
  • Oil large rimmed baking sheet. Whisk Dijon mustard, olive oil and thyme in small bowl to blend. Sprinkle pork tenderloins with salt and pepper. Heat heavy large nonstick skillet over high heat. Add pork and sear until brown all over, turning occasionally, about 10 minutes. Transfer seared pork to prepared baking sheet. Spread Dijon mustard mixture over all sides of pork. (Can be prepared up to 2 hours ahead. Refrigerate pork uncovered.)

GNOCCHI WITH GORGONZOLA SAUCE

Gnocchi with Gorgonzola Sauce image

Gorgonzola continues to age as it is stored in the refrigerator, intensifying in piquancy as it does. To slow this process down, wrap the cheese tightly in plastic wrap and store it in the coldest part of the refrigerator. This sauce is a good way to use leftover Gorgonzola cheese.

Yield makes 8 servings

Number Of Ingredients 8

Potato Gnocchi (page 170)
Salt
1/2 cup Chicken Stock (page 74) or canned reduced-sodium chicken broth
1/2 cup heavy cream
4 tablespoons unsalted butter
Freshly ground black pepper
4 ounces Gorgonzola
1 cup freshly grated Parmigiano-Reggiano cheese

Steps:

  • Make the gnocchi.
  • Bring 6 quarts of salted water to a boil in an 8-quart pot over high heat. (If you plan to cook the gnocchi as soon as they are formed, put the water on to boil while the riced potatoes are cooling. If you are cooking previously frozen gnocchi, make sure the water is boiling before you remove the gnocchi from the freezer.)
  • Bring the stock, cream, and butter to a boil in a large skillet over medium heat. Season lightly with salt and pepper and boil until the sauce is lightly reduced, about 3 minutes. Remove from the heat and stir in the Gorgonzola until dissolved.
  • Drop the gnocchi into the boiling water a few at a time, stirring gently and continuously with a wooden spoon. Cook just until they rise to the surface and roll over, 2 to 3 minutes. If the skillet is large enough to accommodate the sauce and gnocchi, gently scoop the gnocchi out of the boiling water with a large wire skimmer and add them directly to the sauce in the skillet. If not, drain the gnocchi gently, return them to the pot, and pour in the sauce. Bring the sauce and gnocchi to a boil, stirring gently to coat the gnocchi with sauce. Remove the pan from the heat and stir in the grated Parmigiano-Reggiano. Check the seasoning, adding salt if necessary. Serve immediately in warm bowls.

Gorgonzola sauce is a creamy and delicious sauce that complements various types of dishes like pasta, risotto, pizza, and steak. The flavor of gorgonzola sauce ranges from mild to pungent depending on the type of gorgonzola cheese used. Gorgonzola sauce is easy to make and can be customized to suit preferences. Here are some valuable tips to bear in mind when making all-purpose gorgonzola sauce. Tip 1: Choose the Right Gorgonzola Cheese The quality and type of gorgonzola cheese used in making the sauce are crucial in determining the flavor and consistency of the sauce. Gorgonzola cheese comes in two types- dolce and piccante. Dolce gorgonzola is milder and creamier compared to piccante gorgonzola, which is sharp and pungent. Therefore, the type of gorgonzola used should be based on the intended dish and personal preference. It is essential to choose high-quality gorgonzola at its peak ripeness for the best flavor of the sauce. Aged gorgonzola cheese may be too hard and crumbly, making it difficult to melt in the sauce. When buying gorgonzola cheese, always read the label to ascertain the type and age of the cheese. Tip 2: Balance the Flavor Gorgonzola sauce has a strong and distinct flavor. The cheese's pungency and saltiness should be balanced with other flavors to avoid an overpowering taste. The basic recipe for making all-purpose gorgonzola sauce involves combining gorgonzola cheese, cream, butter, and salt. This recipe can be enhanced by incorporating additional ingredients to balance the flavor. One way to balance the flavor of gorgonzola sauce is by adding sweetness. This can be achieved by incorporating caramelized onions or roasted garlic. Alternatively, a splash of honey or maple syrup can be added to limit the sharpness of the gorgonzola cheese. Adding white wine or a squeeze of lemon juice can also help to cut through the richness of the sauce, making it more refreshing. Tip 3: Invest in a Good Quality Pot When making gorgonzola sauce or any other sauce, a good quality pot is essential in ensuring an evenly cooked and smooth sauce. The pot used should be thick-bottomed to prevent scorching and even heat distribution. A well-designed pot should have a lid to allow for quick boiling and retention of heat. When cooking the sauce, the heat should be set to low to prevent the cream from scorching. The cheese should be melted slowly while stirring continuously to ensure an even distribution of heat. A good pot with a tight-fitting lid will come in handy in keeping the sauce at a constant temperature, ensuring it doesn't curdle. Tip 4: Be Creative with the Sauce Gorgonzola sauce is versatile and can be used to complement various dishes. While the basic recipe involves combining gorgonzola cheese, cream, butter, and salt, the sauce can be given an additional kick by incorporating herbs and spices. A dash of cayenne pepper or smoked paprika can transform the sauce into a smoky and tangy sauce, perfect for grilled steak or pizza. Fresh herbs such as thyme, rosemary, or oregano can be added to give the sauce a fragrant aroma. Chopped chives or parsley can also give the sauce a fresh and vibrant look. The sauce can be used as a dip for veggies or a marinade for meats before grilling. The possibilities are endless! Tip 5: Store the Sauce Properly Gorgonzola sauce is best stored in an airtight container in the refrigerator. The sauce can be stored for up to a week but should be reheated over low heat and stirred continuously to prevent curdling. It is also advisable to store the sauce in small batches to avoid reheating the entire batch every time. Conclusion: Gorgonzola sauce is easy to make and customizable to personal preference. When preparing the sauce, it is crucial to choose high-quality gorgonzola cheese, balance the flavor, invest in a good quality pot, be creative with the sauce, and store it properly. These tips will ensure that the sauce is rich, creamy, and delicious, perfect for adding an extra layer of flavor to any dish. Enjoy!
