Yield 8

Number Of Ingredients 11

4 cups water
6 bone-in chicken thighs
2 tablespoons olive oil
2 carrots, chopped
½ onion, diced
4 cloves garlic, chopped
1 ½ teaspoons salt
1 (32 ounce) carton chicken broth
1 head broccoli, trimmed and chopped
¼ head cauliflower, trimmed and chopped
1 zucchini, trimmed and chopped

Steps:

  • Place water and chicken thighs in a pot. Bring to a boil; reduce heat and simmer until chicken is tender, about 30 minutes. Occasionally skim off scum as it forms.
  • Heat olive oil in a large pot over medium heat. Cook and stir carrots and onions until they begin to soften, 3 or 4 minutes. Stir in garlic and salt; cook for 1 minute.
  • Transfer chicken and cooking water to large pot. Add chicken broth. Bring mixture to a boil; reduce heat to low. Cover, leaving lid slightly ajar, and simmer at least 1 hour or up to 4 hours. Remove from heat.
  • Transfer chicken to a work surface. Remove skin, bones, and cartilage. Shred chicken meat using 2 forks. Return chicken to pot. Add broccoli, cauliflower, and zucchini. Bring back to a simmer over medium-high heat. Reduce heat so soup gently simmers. Cook until vegetables are tender, 20 to 30 minutes.

All-day chicken vegetable soup recipes are incredibly nutritious, flavorful, and easy to make. They are perfect for cold winter days, flu season, and quick weeknight dinners. Making a large batch of soup can save you time and money, as you can store leftovers for future meals or freeze them for later use. However, with so many different variations and methods, it can be overwhelming to decide which one to choose. In this article, we will provide you with valuable tips on how to make the best all-day chicken vegetable soup recipes.

Tip #1: Start with a Homemade Broth

The foundation of any great soup is its broth, and homemade broth is always superior to store-bought ones. To make a homemade broth, place chicken carcasses or bones in a large pot and cover them with water. Add carrots, onions, celery, bay leaves, and peppercorns, and let the mixture simmer for at least an hour. The result is a flavorful, nutrient-rich broth that will give your soup a depth of flavor that canned and boxed broths cannot match.
Subtip: Use Vegetarian Broth for a Vegetarian Option
If you want to make a vegetarian option, you can skip the chicken part and use vegetable scraps instead. Collect vegetable scraps such as onion skins, celery leaves, garlic pods, and carrot peels in a large pot. Add water, bay leaves and seasoning of your choice and simmer for several hours. You can reuse vegetable scraps until they have lost their flavor.

Tip #2: Incorporate a Variety of Vegetables

Including a variety of colorful vegetables not only makes your soup visually appealing, but it also adds different nutrients, textures, and flavors. You can use fresh or frozen vegetables, and the ratio of vegetables to broth is up to you depending on how chunky or soupy you prefer your soup to be.
Subtip: Consider Leafy Greens
Leafy greens such as kale, spinach, and collard greens are great additions to your soup as they are nutrient-dense and rich in vitamins and minerals. You can add them at the end of the cooking process to retain their vibrant color and prevent them from turning mushy.

Tip #3: Season Your Soup to Perfection

Seasoning your soup well can take it from bland to delicious. In addition to salt and pepper, you can add spices such as cumin, turmeric, garlic powder, and paprika for extra flavor. Use dried herbs such as thyme, oregano, and rosemary, or fresh herbs like parsley and basil to enhance the aroma and add a burst of freshness to your soup.
Subtip: Experiment with Flavors
Be creative and experiment with different flavor combinations that you enjoy. For instance, adding a can of diced tomatoes or a splash of vinegar can give your soup a tangy and sweet taste. You can also add a dollop of sour cream, grated cheese, or croutons as a garnish.

Tip #4: Use Chicken Thighs for More Flavorful Meat

Chicken thighs are best for all-day chicken vegetable soup recipes. They have more fat, which results in a richer flavor, and they do not dry out during the long cooking process. However, you can also use chicken breasts if you prefer a leaner option.
Subtip: Shred the Chicken
After the chicken has been cooked, shred it into bite-sized pieces and add it back to the soup. This makes it easier to eat and distributes the chicken evenly throughout the soup.

Tip #5: Allow Your Soup to Simmer for as Long as Possible

The longer your soup simmers, the more flavorful and nutritious it becomes. Letting it simmer for several hours or even all day results in a deeply rich and flavorful soup. Just be sure to check on it occasionally to make sure it is not boiling too vigorously and is not running out of liquid.
Subtip: Use a Slow Cooker
If you do not have the time to watch the soup on the stove or prefer a more hands-off approach, a slow cooker is the perfect solution. Simply place all the ingredients in the slow cooker and let it simmer on low heat for several hours. You can go about your day and come back to a delicious and nutritious soup.

Conclusion

All-day chicken vegetable soup recipes are versatile, healthy, and easy to make. They are perfect for a quick weeknight dinner, feeding a crowd, or storing leftovers for later use. By using homemade broth, a variety of colorful vegetables, and seasoning to perfection, you can ensure that your soup is delicious and nutritious. Using chicken thighs, shredding the meat, and allowing the soup to simmer for as long as possible ensures that your soup is flavorful and hearty.
