CHICKEN PAN PIE

Chicken Pan Pie image

I'm making chicken pot pie in a pan, which is usually still called chicken pot pie, but it shouldn't be since it really is a completely different, far superior, species with a much higher crust-to-filling ratio, making it even more savory and deeply delicious.

Provided by Chef John

Categories     Main Dishes     Savory Pie Recipes     Chicken Pie Recipes

Time 1h25m

Yield 6

Number Of Ingredients 15

¼ cup unsalted butter
⅔ cup diced onion
½ teaspoon kosher salt, or to taste
1 ½ pounds boneless, skinless chicken thighs, cut into 1-inch pieces
¼ cup all-purpose flour
2 ½ cups chicken broth
½ cup sliced carrots
½ cup sliced celery
¼ teaspoon freshly ground black pepper
1 pinch cayenne pepper
½ cup frozen peas, thawed
1 teaspoon fresh thyme leaves
1 recipe pastry pie dough
1 large egg, beaten
2 teaspoons water

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Melt butter in a 12-inch cast iron skillet over medium-high heat. Add diced onion and salt. Cook, stirring, until onions start to soften, and the edges begin to brown, 3 to 4 minutes. Add chicken, and cook, stirring, until the chicken loses its pink color, and starts to brown in spots, 3 to 4 minutes.
  • Sprinkle flour over top, then cook and stir for about 2 minutes. Pour in the broth and bring to a simmer, scraping the bottom of the pan with a spatula. Stir in carrots, celery, black pepper, and cayenne.
  • Cook the mixture, stirring occasionally, until it's as thick as you want, 5 to 10 minutes. For a thick, sticky filling once baked, reduce until the sauce coats the back of a spoon. For a saucier filling, don't reduce the mixture at all.
  • Turn off the heat and stir in the peas and thyme. Taste for seasoning and reserve until needed.
  • Roll out pie or pastry dough to form a circle about 14 inches in diameter.
  • Fold over 1/2 inch of dough all the way around, and then crimp the edge to make a decorative scalloped design. Cut or punch out a 1-inch hole in the center of the dough.
  • Place the pan on top of a sheet pan in case filling bubbles over in the oven. Carefully place the dough over the filling, and adjust until it's centered. Press the crust lightly into the filling. Brush the top with an egg wash if desired.
  • Bake in the preheated oven until crust is browned and filling is bubbling, about 40 minutes. Let rest for 5 minutes before serving.

CURRIED CHICKEN POT PIE

Curried Chicken Pot Pie image

Provided by Food Network Kitchen

Categories     main-dish

Time 2h

Number Of Ingredients 16

1 1/2 cups all-purpose flour
1/2 teaspoon fine salt
8 tablespoons (1 stick) unsalted butter, cut into small pieces
2 large boneless, skinless chicken breasts, (about 12 ounces), cut into 1/2-inch pieces
3 tablespoons unsalted butter
1 medium onion, chopped
2 medium red-skinned potatoes, (about 8 ounces), cut into 1/2-inch dice
2 carrots, diced
3 tablespoons all-purpose flour
2 teaspoons curry powder
2 cups reduced-sodium chicken broth
1 cup cooked or thawed frozen green peas
1/4 cup golden raisins
Kosher salt and freshly ground pepper
1 large egg yolk, beaten
2 tablespoons heavy cream

Steps:

  • 1. To make the crust: Pulse the flour and salt in a food processor briefly. Add the butter and pulse until the mixture resembles coarse cornmeal with a few bean-size bits of butter. Drizzle over the 3 tablespoons ice water and pulse once or twice; don't let the dough form a mass around the blade. Remove the blade and bring the dough together by hand. Shape the dough into a disk, wrap in plastic wrap, and refrigerate 1 hour.
  • 2. To prepare the filling: Season the chicken with salt and pepper. Melt the butter in a large skillet over medium-high heat. Add the onion and cook, stirring, until translucent, about 2 minutes. Stir in the potatoes and carrots and cook stirring often, for about 5 minutes. Add the flour and curry powder and cook 1 minute longer. Pour in the broth, increase the heat to high and bring to a boil. Bring back down to a simmer and continue to cook until the potatoes and carrots are almost cooked through, about 5 to 7 minutes. Stir in the chicken and cook just until the chicken is firm, about 2 minutes. Add the peas and raisins. Season with salt and pepper. Pour into a 10-inch wide deep-dish pie plate. Cool slightly before proceeding.
  • 3. Preheat the oven to 400 degrees F. On a floured surface, roll the dough into a shape that is about an inch larger than the top of the baking dish. Roll the crust around the rolling pin and unroll it over the top of the baking dish. Pinch the edges to form a smooth edge, pressing against the inside of the rim. Cut slits in the center and in 1-inch intervals around the outer rim to allow the steam to escape. Stir the egg yolk and cream to blend and gently brush over the pastry to glaze. (The dish can be prepared up to 2 days to this point, covered and refrigerated.)
  • 4. Place the pot pie on a baking sheet to catch any overflow and bake until the crust is golden brown and the filling is bubbly, about 30 minutes. Let rest for 5 minutes before serving.

CHICKEN POT PIE

Chicken Pot Pie image

This classic chicken pot pie takes no shortcuts. The homemade dough leans into the savory side of this pie with the addition of fresh herbs. Make your own fortified stock by poaching the chicken in your already homemade stock, or stock from a butcher store. This creates an intensified chicken flavor in the base of the pie filling. Let your pie filling cool down before topping with the dough, this helps to prevent any gummy texture on the bottom of the crust.

Categories     main-dish

Time 2h40m

Yield 4 to 6 servings

Number Of Ingredients 28

1 1/4 cups all-purpose flour, plus more for dusting
1 teaspoon sugar
1/4 teaspoon salt
2 teaspoons chopped fresh thyme
2 teaspoons chopped fresh chives
1 stick cold unsalted butter, cut into small cubes
1 teaspoon apple cider vinegar
2 to 4 tablespoons ice water
1 large egg
5 cloves garlic, 2 crushed and 3 minced
1 fresh bay leaf
1 wide strip lemon peel
1/2 teaspoon black peppercorns
1/2 teaspoon coriander seeds
1 1/2 pounds skinless, boneless chicken breasts and thighs (about 2 breasts and 2 thighs)
4 cups low-sodium chicken broth
4 tablespoons unsalted butter
1 onion, diced
2 carrots, diced
2 stalks celery, diced
1 russet potato, diced
Kosher salt and freshly ground pepper
1 tablespoon chopped fresh thyme
1 tablespoon apple cider vinegar
1/4 cup all-purpose flour
1/2 cup heavy cream
1/2 cup chopped fresh parsley
1/2 cup frozen peas

Steps:

  • Make the dough: Combine the flour, sugar, salt, thyme and chives in a food processor and pulse a few times to evenly combine. Add the butter and pulse 7 or 8 times until the butter is in pea-size bits. Add the vinegar and 2 tablespoons ice water and pulse just until the dough starts to come together into a ball. (Add 1 to 2 more tablespoons ice water if the dough is too dry.) Form the dough into a disk. Wrap in plastic wrap and refrigerate while you make the filling, at least 1 hour.
  • Make the filling: Pile the 2 crushed garlic cloves, bay leaf, lemon peel, peppercorns and coriander seeds on a square of cheesecloth. Bring the corners together to form a pouch and tie with a piece of kitchen twine.
  • Combine the chicken, chicken broth and cheesecloth pouch in a medium saucepan and bring to a boil. Reduce to a rapid simmer and cook until the chicken is cooked through, about 15 minutes. Remove the chicken to a plate using tongs. Strain the liquid through a fine-mesh sieve into a medium bowl; discard the cheesecloth pouch. Wipe out the saucepan; return the strained broth to the pan and keep at a very gentle simmer over low heat. Shred the chicken using 2 forks.
  • Melt the butter in a large pot or Dutch oven over medium heat. Add the onion, carrots and celery and cook, stirring occasionally, until softened, 10 to 12 minutes. Add the potato, 1 teaspoon kosher salt and 1/2 teaspoon pepper and cook until the potato is slightly softened, about 5 minutes. Add the 3 minced garlic cloves and the thyme and cook until softened, 1 minute. Add the vinegar and cook until the liquid has evaporated, about 1 minute. Stir in the flour until the vegetables are evenly coated. Pour in 1 3/4 cups of the strained chicken broth (save the rest for another use). Bring to a gentle boil and cook until thickened, 2 to 3 minutes.
  • Remove the pot from the heat and stir in the heavy cream. Add the shredded chicken, parsley and peas and stir to combine and heat through; season with salt and pepper. Transfer the filling to a 9 1/2-inch deep-dish pie plate and let cool until no longer steaming, about 20 minutes.
  • Bake the pot pie: Preheat the oven to 375˚ F. On a lightly floured surface, roll out the pie dough into an 11-inch round, about 1/8 inch thick. Place it over the filling. Roll the overhanging dough under itself and crimp the edges with your fingers. Cut vents in the top of the dough. Beat the egg and 1 teaspoon water in a small bowl. Brush the crust all over with the egg wash. Place the pot pie on a rimmed baking sheet and bake until the crust is a deep golden brown, 50 minutes to 1 hour. Let cool 20 minutes before serving.

DOUBLE-CRUST CHICKEN POT PIE

Double-Crust Chicken Pot Pie image

This just might be the ultimate deep-dish chicken pot pie. Lots of veggies and fresh herbs go into the tasty, creamy filling, and an impressive lattice crust makes the pie as picture-perfect as it is delicious.

Provided by Erin Jeanne McDowell

Categories     main-dish

Time 3h20m

Yield One 10-inch deep-dish skillet pie

Number Of Ingredients 19

5 tablespoons unsalted butter
1 large sweet onion, diced
3 large stalks celery, diced
3 medium carrots, peeled and diced
3 cloves garlic, minced
1/3 cup all-purpose flour, plus more for dusting
3 cups chicken broth
1 bay leaf
1 tablespoon fresh chopped rosemary
1 tablespoon fresh chopped thyme
1/3 cup heavy cream
3 1/2 cups chopped cooked chicken (from a rotisserie chicken, for example)
1 1/3 cups fresh or frozen peas
3/4 teaspoon kosher salt, plus more to taste
3/4 teaspoon freshly ground black pepper, plus more to taste
1/2 cup chopped parsley
Dough for 4 single-crust pies or 2 double-crust pies (homemade or store-bought), divided into 2 even pieces and well chilled
1 large egg beaten with 1 tablespoon water
Finely grated Parmesan, for sprinkling

Steps:

  • Make the filling: In a large pot, heat 2 tablespoons butter over medium heat. Add the onions, celery and carrots and cook, stirring, until the onions are translucent, 5 to 6 minutes. Add the garlic and cook until fragrant, about 1 minute more.
  • Add the remaining 3 tablespoons butter. Once melted, stir in the flour. Cook the mixture, stirring constantly, until it just starts to turn golden brown, 2 to 3 minutes. Gradually whisk in the chicken broth. Bring the mixture to a simmer. Add the bay leaf, rosemary and thyme. Adjust the heat and simmer for 15 minutes.
  • Stir in the cream, chicken and peas and return to a simmer. Simmer for 4 to 5 minutes more. Remove the mixture from the heat. Stir in the salt and pepper. Ideally, cool it completely. Remove and discard the bay leaf, and stir in the parsley. Taste and add more salt and pepper, if desired.
  • Meanwhile, prepare the crust: Have a 10-inch cast-iron or ovenproof skillet ready. On a lightly floured surface, roll out half of the pie crust to a thickness of about 1/4 inch, making a circle about 3 inches wider all around than the skillet. Gently transfer the dough to the skillet, lining the bottom and easing it up the sides, allowing any excess to drape over the edge of the pan (aim for about 1 inch excess dough all the way around the pan). Refrigerate for 30 minutes.
  • While the bottom crust is chilling, roll out the remaining dough on a lightly floured surface to 1/4 inch thick. Gently transfer the dough to a parchment-lined baking sheet, then use a pastry wheel to cut it into 1 1/2- to 2-inch wide strips. Cover with plastic wrap and refrigerate for 15 minutes.
  • Pour the cooled filling into the chilled bottom crust and spread evenly. Remove the chilled dough strips from the fridge. Lay strips over the filling, leaving almost no space between them. When the pie is covered, rotate the pan and pull back every other strip of dough, then weave in a fresh strip to create a lattice. Lay the strips back over the new piece of dough, the repeat the process - this time pulling back all the pieces of dough that didn't get moved the first time. Continue until the entire pie is latticed.
  • Press the dough together at the edges all the way around the pie; use scissors to trim away any excess dough, then fold the bottom crust up and over the lattice. Dip your finger in water and run it along the edges to help seal it. Use a floured fork to press around the edges to seal the dough together and crimp the crust. Refrigerate for 30 minutes.
  • Preheat the oven to 425 degrees F and place a rack in the lower third of the oven. Brush the egg mixture over the top of the pie and sprinkle it with Parmesan. Bake for 30 minutes; lower the oven temperature to 375 degrees F and continue baking until the crust is deeply golden brown (the filling may bubble through the top crust a bit), 40 to 50 minutes more.

All-Crust Sheet Pan Chicken Pot Pie Recipes: A Perfect Family Meal

One of the most comforting and flavorful meals is a classic chicken pot pie. The creamy chicken mixed with vegetables and topped with a flaky crust is the perfect combination of savory and warm. Chicken pot pie is a staple dish that is a crowd-pleaser, and with a sheet pan recipe, it becomes an easy dish you can make for any day of the week.

The Convenience of a Sheet Pan Recipe

Sheet pan recipes have taken over kitchen and cooking trends as they provide the convenience of cooking all ingredients together in a single pan. All-crust sheet pan chicken pot pie recipes take the dish to another level since they also provide the perfect ratio of crust to filling. The crust becomes crispy, buttery and perfectly bakes, providing a satisfying contrast to the creamy pot pie filling.

The All Crust Sheet Pan Variety

With several varieties of chicken pot pie recipes available, the all-crust sheet pan recipe has been gaining popularity. You can use store-bought pastry crust or puff pastry sheets for an even more delicious and buttery crust. The all-crust recipe ensures everyone gets a healthy dose of crust with each serving, and there is no fighting for the last piece.

Filling the Sheet Pan Pot Pie

Sheet pan chicken pot pies can have different fillings. The classic filling consists of shredded chicken breast, mixed vegetables like peas and carrots, potatoes, onions and celery. You can also add cheese, mushrooms, or any other vegetables that you like. For a creamy filling, add a mixture of chicken broth, milk or cream, cornstarch and seasoning to the pot pie mixture. This mixture gives the pot pie a perfect silky texture and delicious flavor.

Customizing Your All-Crust Sheet Pan Chicken Pot Pie

One of the benefits of making a sheet pan chicken pot pie is the flexibility to customize it to your liking. Whether you are a vegetarian, gluten-free or low-carb diet follower, you can pick your ingredients and create a pot pie recipe that suits you.

For vegetarian options, you can substitute the chicken with tofu, tempeh or any plant-based alternative. You can also use vegetable broth, almond milk, or coconut milk if you prefer a vegan or dairy-free filling. Gluten-free crusts made with almond or coconut flour make for a tasty substitute in the recipe.

For those who are watching their carbs, substituting potatoes with cauliflower makes for a delicious and healthy option. You can also add extra vegetables and omit the potatoes entirely.

The Process of Making an All-Crust Sheet Pan Chicken Pot Pie

Making an all-crust sheet pan chicken pot pie is easy and relatively quick. Preheat your oven to 400 degrees F and line your sheet pan with parchment paper to prevent sticking. Prepare the filling by cooking your chicken until it's fully cooked and shredding it with a fork. Then sauté onions, celery and carrots in olive oil until tender.

Add the potatoes, mixed vegetables and the shredded chicken to the cooked onions and celery. In a separate pan, make the sauce by mixing cornstarch, chicken broth, and heavy cream, and pour the mixture over the pot pie filling. Spoon the filling into the sheet pan and spread it evenly.

Take your sheet pan pastry crust and spread it over the pot pie filling. Use your fingers to ensure the dough reaches all the edges of the pan. Make slits on the crust to allow the steam to escape during baking, and then egg wash the crust to make it golden and crispy.

Bake the pot pie for around 20-25 minutes or until the crust is golden brown and the filling is bubbling. Remove from the oven and let it cool for a few minutes before cutting and serving.

Conclusion

All-crust sheet pan chicken pot pie recipes are perfect for busy weeknights and family gatherings. They are customizable to any dietary restriction or preference, and they create the perfect crust-to-filling ratio that everyone will enjoy. With minimal mess and fuss, these recipes are a great way to make a wholesome meal without sacrificing taste and convenience.

All crust sheet pan chicken pot pie is an irresistible comfort food that easily makes your mid-week dinner a hit. The crispy and buttery crust filled with a delectable mixture of chicken and vegetables can be an all-time favorite. However, making an all-crust sheet pan chicken pot pie can be a challenge for some people. In this article, we will provide valuable tips on how to make a perfect all-crust sheet pan chicken pot pie recipe.

1. Use a high-quality butter

Butter is a significant component of the crust, and using high-quality butter makes all the difference. Choose unsalted butter with a high-fat content to produce a flakier crust. You will not only get a consistent texture but also flavorful crust that will perfectly complement your filling.

2. Pre-chill all the ingredients before use

To make a perfect all-crust sheet pan chicken pot pie, it is essential to ensure that all the ingredients are adequately chilled. Pre-chilling helps in controlling the crust’s temperature by reducing the amount of time that it takes to cook. This ensures that the filling is cooked evenly.

3. Opt for a deep sheet pan

Choosing a deep sheet pan is critical when making all-crust sheet pan chicken pot pie. The deep pan can easily accommodate your filling and topper, preventing it from overflowing onto the oven. Moreover, a deep pan allows the heat to circulate evenly and ensures that the crust is crispy and golden-brown.

4. Add chicken stock to the filling

The chicken stock provides a flavor base for the filling and adds moisture to the mixture. Including chicken stock will make the filling juicier and prevent it from becoming too dry. Wet fillings also help in preventing the crust from becoming soggy and aids in producing a crisp crust.

5. Blind bake the crust

Blind baking the pie crust is a necessary step in making an all-crust sheet pan chicken pot pie. Blind baking involves pre-baking the crust for a few minutes before adding the filling. This step ensures that the crust is crispy and fully cooked before adding the filling to the pan.

6. Avoid overfilling the sheet pan

Improperly filling the sheet pan can cause the top crust to become lumpy and unevenly cooked. Avoid stuffing the pan with your filling ingredients because the filling will expand and could possibly overflow. Instead, add the filling selectively, leaving adequate space for the ingredients to expand.

7. Brush the crust with an egg wash

Brushing the crust with an egg wash helps achieve a golden-brown color on the crust. An egg wash is simply an egg that has been beaten and diluted with cream, milk, or water. The wash adds an extra layer of flavor to the crust and also helps it to stick together.

8. Let the pie cool down before serving

After removing the all-crust sheet pan chicken pot pie from the oven, allow it to cool for a few minutes before serving. Cooling down helps the filling to set and settle, thus making it easier to slice and serve. Slicing a hot pie could also cause the filling to ooze out.

Conclusion

In conclusion, following these eight valuable tips can help you make the perfect all-crust sheet pan chicken pot pie. Using high-quality butter, pre-chilling all the ingredients, and ensuring that your sheet pan is deep enough are all factors that contribute to making the perfect pie. Blind baking the crust, avoiding overfilling, brushing the crust with an egg wash, and letting the pie cool down before serving are essential steps that will help you achieve a delicious and visually appealing all-crust sheet pan chicken pot pie.
