CRISPY SOUR CREAM AND ONION CHICKEN

Crispy Sour Cream and Onion Chicken image

Picture sour cream and onion dip slathered on chicken cutlets, dredged in panko bread crumbs, and fried until crisp like a potato chip, and you'll envision this recipe. The marinade doesn't just deliver flavor here: The lactic acid in the sour cream also keeps the thin chicken breasts juicy. Shower the crispy chicken with fresh chives and lemon juice, or, if you crave something creamy for dunking, pair it with a dip of sour cream, lemon juice and chives.

Time 35m

Yield 4 servings

Number Of Ingredients 8

4 boneless, skinless chicken breasts, halved horizontally (see Tip) and pounded 1/8-inch thick, or use 4 chicken cutlets (don't split or pound)
Kosher salt and black pepper
1/2 cup sour cream or Greek yogurt
1/4 cup thinly sliced chives (or 1 tablespoon dried chives), plus more for serving
2 tablespoons onion powder
2 cups panko bread crumbs
Canola oil, for frying
1 lemon, cut into wedges

Steps:

  • Pat chicken dry, and season both sides with salt and pepper.
  • In a medium bowl, stir together the sour cream, chives and 1 tablespoon onion powder. Season with salt and pepper. Add the chicken and turn to coat. (Chicken can sit in the marinade for up to 8 hours. Refrigerate, then let come to room temperature before cooking.)
  • In a shallow bowl or lipped plate, stir together the panko and remaining 1 tablespoon onion powder; season with salt and pepper.
  • Working one at a time, press the chicken breasts into the panko, using your fingers to pack the panko onto both sides of the chicken, and place on a large plate or a sheet pan.
  • Line a plate with paper towels. Heat 1/8-inch canola oil in a large skillet over medium-high. Drop a piece of panko in: If it sizzles, the oil's ready. Add a chicken cutlet (or two, if they can fit comfortably), and cook until golden brown, 3 to 5 minutes per side. Transfer to the paper towel-lined plate and sprinkle with salt. Repeat with remaining chicken, adding and heating more oil as needed, and removing excess panko from the pan with a slotted spoon.
  • Serve chicken with more chives and lemon wedges for squeezing.

Alice's sour cream chicken breasts recipe is a delicious and easy-to-make dish that is perfect for a mid-week dinner or a family gathering. The recipe involves marinating chicken breasts in sour cream and herbs, creating tender and flavorful meat. In this article, we will discuss some valuable tips to keep in mind when making Alice's sour cream chicken breasts recipe.

Tips for Preparing the Chicken Breasts

When preparing the chicken breasts for the recipe, it is important to keep in mind the following tips:
1. Pound the Chicken Breasts
One of the biggest mistakes people make when preparing chicken breasts is not pounding them. Pounding the chicken breasts ensures that they are of an even thickness and will cook evenly. It also helps to tenderize the meat, making it easier to eat. To pound the chicken breasts, place them between two pieces of plastic wrap and use a mallet or rolling pin to pound them until they are an even thickness.
2. Marinate the Chicken Breasts
Marinating the chicken breasts is an essential step in Alice's sour cream chicken breasts recipe. The sour cream and herb marinade helps to tenderize the chicken and infuse it with flavor. To marinate the chicken breasts, place them in a shallow dish and pour the sour cream mixture over them, making sure that each breast is coated. Cover the dish with plastic wrap and refrigerate for at least 30 minutes, but preferably for several hours or overnight.
3. Use Fresh Herbs
The herbs used in Alice's sour cream chicken breasts recipe are what give the dish its delicious flavor. It is important to use fresh herbs rather than dried ones as they have a stronger flavor and will give the dish a fresher taste. If you don't have access to fresh herbs, you can use dried ones, but the flavor will be less intense.
4. Don't Overcook the Chicken
Overcooking the chicken will result in dry and tough meat. To ensure that the chicken is cooked to perfection, use a meat thermometer to check the internal temperature of the chicken. The chicken breasts should reach an internal temperature of 165°F (75°C).

Tips for Serving the Dish

Once the chicken breasts are cooked, it is important to ensure that they are served correctly to preserve the delicious flavors. Here are some tips to keep in mind when serving the dish:
1. Let the Chicken Rest
Once the chicken breasts are cooked, it is important to let them rest for a few minutes before slicing them. This will allow the juices to redistribute throughout the meat, resulting in juicier and more flavorful chicken.
2. Serve with a Side Dish
Alice's sour cream chicken breasts recipe is a great dish on its own, but it is even better when served with a side dish. Some of the best side dishes to serve with this dish include roasted vegetables, mashed potatoes, or a simple green salad.
3. Garnish the Dish
Garnishing the dish is a great way to add some extra flavor and visual appeal to the plate. Some great garnishes to use include fresh herbs, lemon wedges, or a sprinkle of paprika.

Tips for Customizing the Recipe

One of the best things about Alice's sour cream chicken breasts recipe is that it is versatile and can be customized to suit your tastes. Here are some tips for customizing the recipe:
1. Add More Herbs and Spices
If you want to increase the flavor of the dish, you can add more herbs and spices to the sour cream marinade. Some great options to consider include garlic, paprika, cumin, or oregano.
2. Use Different Types of Meat
While the recipe calls for chicken breasts, you can use other types of meat as well. Pork chops or tenderloin, beef sirloin or flank steak, or even firm fish fillets like cod or salmon would all be great options.
3. Substitute the Sour Cream
If you are lactose intolerant or don't like the flavor of sour cream, you can use Greek yogurt instead. Greek yogurt has a similar consistency and flavor to sour cream, but it is healthier and contains less fat.

Conclusion
