- Prepare linguine according to package directions. In large skillet over medium-high heat cook shrimp, mushrooms and garlic in butter 5 minutes until shrimp turn opaque, stirring frequently. Remove mushrooms, and shrimp from pan and add enough cream to make a sauce. Add Parmesan to taste. Cook, stirring constantly to deglaze. Thicken with cornstarch as desired and add salt and pepper to taste. Drain linguine. In large serving bowl combine shrimp mixture, linguine, and sauce. Toss gently to coat well. Top with remaining 3 Tbs. cheese Garnish.

- 1. Cook pasta to desired doneness as directed on package. Drain; rinse with hot water. Drain well.
- 2. Meanwhile pat shrimp with a paper towel until completely dry. Sprinkle with salt and pepper.
- 3. Heat a large, deep skillet over medium heat, and add 2 tablespoons of the butter. When the butter melts, raise the heat to medium-high, and add shrimp. Cook the shrimp until pink and cooked through, about 5 minutes. Transfer the shrimp to a bowl.
- 4. Reduce heat to medium low. Melt remaining butter in skillet, add garlic to sauté. Add heavy cream, stirring constantly. Stir in salt, pepper, nutmeg, and grated Parmesan cheese. Stir constantly until cheese is melted, then mix in egg yolk.
- 5. Simmer over medium low heat for 3 to 5 minutes, stirring often until thickened. If sauce is too thick, thin with milk. Add the shrimp and cooked pasta, and toss well. Garnish with additional grated Parmesan cheese and fresh chopped parsley, if desired.
