TURKEY AND RICE MEATBALLS (ALBONDIGAS)

Turkey and Rice Meatballs (Albondigas) image

As these turkey and rice meatballs simmer in the sauce, the rice absorbs moisture, swell ups, and creates a relatively tender, moist meatball. I didn't intend this recipe to be a Thanksgiving dinner alternative, but now that I think about it, these could actually work. These are delicious served over saffron basmati rice.

Time 2h15m

Yield 4 servings

Number Of Ingredients 37

1 cup ketchup
1 cup fresh or frozen diced mango
2 tablespoons agave nectar
2 tablespoons soy sauce
2 tablespoons chopped shallots
2 tablespoons Sriracha
2 tablespoons red wine vinegar
2 teaspoons Dijon mustard
1 garlic clove, minced
Kosher salt
3 cups thinly sliced purple cabbage
2 cups thinly sliced snow peas
2 cups thinly sliced red bell pepper
1 cup shredded carrot
1/2 cup chopped scallions
1/2 cup chopped fresh cilantro
1/2 cup roasted salted peanuts
1/4 cup toasted sesame seeds
1/2 cup extra-virgin olive oil
3 tablespoons honey
2 tablespoons smooth peanut butter
2 tablespoons rice vinegar
1 tablespoon minced fresh ginger
3 teaspoons low-sodium soy sauce
2 teaspoons toasted sesame oil
Kosher salt and ground pepper
4 tablespoons extra-virgin olive oil
1 1/2 cups diced sweet onion
1/2 cup diced Anaheim chile
Kosher salt and ground pepper
1 teaspoon chopped garlic
1 cup panko breadcrumbs
1/2 cup chopped flat-leaf parsley
1 tablespoon chopped fresh thyme
1 pound ground chicken
1/2 pound ground chorizo
2 eggs, beaten

Steps:

  • For the spicy mango BBQ sauce: Place the ketchup, mango, agave, soy sauce, shallots, Sriracha, vinegar, mustard and garlic in a saucepan and bring to a simmer over medium-low heat. Simmer 20 minutes, stirring occasionally. Remove from the heat and cool 5 minutes. Place all the ingredients in a blender and blend until smooth. Season to taste with salt.
  • For the Asian slaw: In a large bowl combine the cabbage, snow peas, red peppers, carrots and scallions.
  • For the dressing: In a blender, combine the olive oil, honey, peanut butter, vinegar, ginger, soy sauce, sesame oil, 1 1/2 teaspoons salt and 1 1/2 teaspoons pepper. Pour the dressing over the slaw, then stir well and allow to sit while you make the meatballs.
  • For the chicken and chorizo meatballs: Preheat the oven to 350 degrees F. Place a large nonstick skillet over medium heat and add 2 tablespoons olive oil. Once the oil is hot, add the onions, Anaheim chiles, 1/4 teaspoon salt and 1/4 teaspoon pepper. Stir to combine and allow to cook, stirring occasionally, 10 minutes. Add the garlic and cook, 2 minutes, then pour the mixture into a small bowl to cool slightly and set aside. Wipe the pan down with a paper towel and set aside to use again.
  • Line a baking sheet with aluminum foil and set aside. To a food processor fitted with a steel blade, add the panko, parsley, thyme and onion-garlic mixture. Pulse about 5 times and pour into a mixing bowl. To the same bowl, add the ground chicken, chorizo, eggs, 3 tablespoons water, 3/4 teaspoon salt and 1/2 teaspoon pepper, and with clean hands, combine well.
  • Place the wiped-down skillet over medium-high heat and add the remaining 2 tablespoons olive oil. Using a small ice cream scoop, make 30 to 34 even-size meatballs. Place about 8 meatballs in the hot oil and brown them all over, about 1 minute per side, then transfer them to the lined baking sheet. Continue with the remaining meatballs in the same manner. Transfer the meatballs to the oven to finish cooking, 15 minutes.
  • Spoon some BBQ sauce onto each of 4 plates, then divide the meatballs among them. Add the cilantro, peanuts and sesame seeds to the slaw and stir again, then divide among the 4 plates and serve immediately.

ALBONDIGAS (SPANISH MEATBALLS)

Albondigas (Spanish Meatballs) image

A very popular Spanish tapas dish - I can't vouch for the authenticity, but it tastes great. Lamb can be used as a substitute for beef if desired. Taken from my blog at http://onceuponathyme.wordpress.com/2008/11/30/albondigas-spanish-meatballs/

Provided by Andrew Schofield

Categories     Meat

Time 40m

Yield 4 serving(s)

Number Of Ingredients 8

500 g lean beef, minced
1 egg
2 (400 g) cans chopped tomatoes
2 beef bouillon cubes
1/2 glass red wine
herbes de provence (or a good selection of mixed herbs)
1 onion, finely sliced
1 garlic clove, finely sliced

Steps:

  • Mix the mince with the egg and half the onion. Season with 1 stock cube and black pepper.
  • Roll the mixture with your hands into ping pong sized balls and fry in oil until almost cooked (the meatballs can still be slightly pink in middle as they are going to simmer in the sauce). Drain all but 1tbsp oil in the pan, retaining the bit's of meat that are left in the bottom of the pan. Add the rest of the onions and some garlic and fry for a further 2 minutes - they should turn a beatiful meaty colour.
  • Add the 2 tins of chopped tomatoes and a good sprinkling of mixed herbs (I used Herbs de Provence). Add in the red wine and crumble in the final stock cube, then season again if required.
  • Simmer for 20 minutes so that the sauce thickens - longer if it requires it.
  • Serving Suggestion - This can be served on it's own as part of a tapas meal, or you could serve these with spaghetti or some Spanish rice.

Yield 1 pound, 6 serving(s)

Number Of Ingredients 15

2 teaspoons cumin seeds (reserve 1/2 for sauce)
1/2 teaspoon Mexican oregano
5 garlic cloves, peeled
1/4 medium white onion, peeled
1/8 cup cooked white rice
1 lb ground beef, ground lamb or 1 lb ground pork

salt, to taste

  • Mix together meat,1 teaspoon of the cumin, the minced garlic, the onion and the rice;form into meatballs using about 2 tablespoons for each meatball;set aside.
  • Now roast the tomatoes. There are several ways to do this:you may roast them in an iron skillet over medium high heat until charred in places on both sides or you may put then under a hot broiler about 15 minutes, turning halfway through until charred and softened.Tomatoes could also be roasted directly over a flame if you have the means to do this.
  • In a blender combine tomatoes,1 teaspoon cumin,1 cup broth, and all remaining ingredients for the sauce.Blend to a smooth sauce.
  • Heat the oil in a large heavy skillet or dutch oven over medium heat until a drop of sauce sizzles in the oil.Add all of the sauce at once and stir for about 5 minutes.Sauce should be simmering.
  • Carefully drop in about 1/3 of the meatballs and reduce heat to medium.cook for about 6 minutes, stirring the sauce occasionally without disturbing the meatballs.Carefully turn all the meatballs and cook another 4-6 minutes until they are cooked through.Remove to a covered dish.
  • Add 1/2 cup broth to the pot,mix well. When sauce returns to a simmer cook a second batch of meatballs in the same manner.

ALBONDIGAS (MEATBALLS)

Albondigas (Meatballs) image

There are many versions of meatballs in Mexico. None of them are browned, but are poached in the sauce. Some are stuffed with hard-boiled eggs while others use chilies as part of the sauce. Some might roll the meatballs in sauted rice before cooking. This is a mild version. Spice it up as you like using chilies in the sauce.

BONNIE'S MEXICAN ALBONDIGAS SOUP (MEATBALLS)

BONNIE'S MEXICAN ALBONDIGAS SOUP (MEATBALLS) image

We used to frequent a little Mexican restaurant when we lived in California many years ago, and they served their signature Albondigas Soup. It was just a little Mom and Pop restaurant but they had the best Mexican Food we ever ate. Their soup was our favorite and we ordered it every time we went there. I tried to get the...

Number Of Ingredients 21

***meat balls***
2 pounds lean ground beef
1 beaten egg
1/2 cup of pine nuts chopped (size of minced garlic)
1 teaspoon salt
1 teaspoon pepper
1 cup plain bread crumbs
2 teaspoons minced garlic
***soup***
2 cans 14 1/2 ounces mexican diced tomatoes
2 cans beef broth
2 cans water
1 large russet potato scrubbed and diced
2 cups baby carrots diced
1 small onion diced
2 teaspoons gebhardt's chili powder
1 bay leaf
2 tablespoons cilantro
1 teaspoon salt
1/4 cup sherry to be added before serving
1 dash of tobasco sauce to be added when served.

Steps:

  • 1. Make the meatballs first. In a large mixing bowl combine the lean ground beef, beaten egg, garlic, bread crumbs, pine nuts, salt and pepper and mix with your hands. I make a long rope of the beef on the cutting board about one inch high and then I cut slices about 1/2 inch wide. Take each slice and roll it into a meatball about one inch in diameter. This technique helps to have more uniform slices. Place all the balls in a bowl in the refrigerator.
  • 2. Make the soup and add to a large soup pot, the tomatoes, beef broth, water, potatoes, carrots and onion. Add the chili powder, bay leaf, cilantro, salt. Mix well and bring to a boil and simmer until carrots are tender. You should see an orange ring begin to form around the pan from the chili powder. Add more if you like it hotter.
  • 3. Add the meatballs a little at a time to the soup so it doesn't stop boiling, Don't boil on too high heat or it will tear up your meatballs. Simmer meatballs 30 minutes.
  • 4. Add sherry before serving and stir gently. Put a dash of tobasco in each bowl before serving. Enjoy!
  • 5. Cook's Tip: The original recipe I created was a clone of the restuarant's recipe, and it did NOT have carrots, onions and potatoes in it. It was a true meatball soup. I added those vegetables later to make a more hearty soup.

MEATBALLS
1 pound ground beef
1 pound ground pork
3 lg raw eggs
1 cup bread crumbs
2 to 3 hardboiled eggs, chopped
1 cup fresh mint leaves (yerba buena)
3 to 5 cloves garlic
5 whole cloves (1/4 tsp ground)
10 whole peppercorns (1/2 tsp ground)
1/2 tsp salt
good pinch of cumin seeds (1/4 tsp ground)
SAUCE
15 or so roma tomatoes
4 cloves garlic
1 to 2 tsp cumin seeds (or ground cumin)
10 whole peppercorns
5 whole cloves
1 tsp salt
1/4 to 1/2 cup canned chipoltles in adobo (san marcos brand if you can get it)
3 bay leaves
RICE
1 1/2 cups uncooked rice
2 to 4 Tbsp canola oil
4 to 5 roma tomatoes
2 cloves garlic
1/2 tsp salt
water (approx 2 to 2 1/2 cups)

Steps:

  • 1. For meatballs: 1. Grind garlic, mint, cloves, peppercorns, salt and cumin in molcajete to form liquidy paste. If you don't have a molcajete...use a food processor. 2. Place meats in large bowl. Add liquefied herb mixture, raw eggs and bread crumbs. Mix well (come on, use your hands). 3. Grab handful of meat mixture (a little smaller than a baseball). Flatten in hand. 4. Place small amount of chopped hard-boiled egg in center and form ball around chopped egg so that it's in the middle. 5. Slightly brown meatballs in pan with canola oil. Do NOT cook through. They will cook through later when they're in the sauce.
  • 2. For Sauce: 1. In large pot, boil whole tomatoes until skin breaks. Let cool a little and peel off skins. 2. Save out 4 to 5 tomatoes for rice. 3. Remove seeds from chipoltles. 4. Place remaining tomatoes in blender with garlic, cumin, cloves, pepper, salt and chipoltles. Blend until smooth. 5. Pour sauce in large pot. Add bay leaves. Gently place meatballs in sauce making sure all meatballs are covered. 6. Bring to boil on stove, then reduce heat and simmer for about 20 minutes.
  • 3. NOTE: May OMIT chipoltles if you want it less spicy.
  • 4. For Rice: 1. Place rice in skillet with canola oil. Cook over medium-high heat, stirring, until rice is slightly toasted but not brown. 2. In blender, blend boiled/skinned tomatoes, water, garlic and salt until smooth. 3. Pour over rice in skillet and stir. Bring to boil then cover and reduce heat. Cover and simmer for 20 minutes until rice is tender. Do NOT stir during cooking process.
  • 5. Plate up rice with a few meatballs, pour sauce over meatballs.

ALBONDIGAS ESTILO MAMA MEATBALLS LIKE MAMA MAKES

Albondigas Estilo Mama Meatballs Like Mama Makes image

Whenever my mother comes to visit, I always ask her to make me these albondigas. I have tried to serve them at the restaurant but people can't seem to get excited about meatballs. Too bad! It's a fabulous soup. My mother always served it with freshly made corn tortillas, salsa casera and refried beans with asadero. Meatballs freeze well and reheat wonderfully.

Spices and herbs
Albondigas meatballs are spiced with a combination of herbs and spices such as cumin, paprika, and oregano. These spices give the dish its unique and distinctive flavor.

When it comes to making delicious albondigas meatballs, there are several tips and tricks you can use to ensure that they turn out perfectly every time. From choosing the right ingredients to cooking them just right, here are some valuable tips to keep in mind when making your next batch of albondigas meatballs. 1. Choose the Right Meat The type of meat you use for your albondigas meatballs is crucial when it comes to achieving the perfect texture and flavor. Experts recommend using a mixture of ground beef and ground pork, with a lean-to-fat ratio of 80:20. This will give your meatballs a moist, juicy texture without being too greasy. If you prefer a leaner option, you can also use ground turkey or chicken. 2. Use Fresh Herbs and Spices Using fresh herbs and spices is key to giving your albondigas meatballs a delicious, savory flavor. Some classic herbs and spices to include in your meatball mixtures include cilantro, cumin, garlic, and oregano. You can also experiment with other flavors, such as paprika, red pepper flakes, or even a dash of cinnamon. 3. Don't Overwork the Meat When mixing your meatball mixture, it's important not to overwork the meat. Overworked meat can lead to tough, dry meatballs. To prevent this, use a gentle hand when mixing your ingredients, and only mix until just combined. 4. Add Moisture To keep your albondigas meatballs moist and juicy, it's important to add some moisture to the mixture. This can be achieved by adding ingredients such as grated onion, grated zucchini, or even a dollop of sour cream. These ingredients will not only add moisture but also flavor to your meatballs. 5. Let the Mixture Rest After mixing your meatball ingredients, it's important to let the mixture rest for at least 30 minutes before shaping into balls. This will allow the flavors to meld and the meat to absorb the moisture, resulting in more flavorful, tender meatballs. 6. Shape the Meatballs Properly When shaping your albondigas meatballs, it's important to keep the size and shape consistent. This will ensure that they cook evenly and are all done at the same time. You can use a cookie scoop or tablespoon to portion out the mixture, and then roll them into balls with your hands. 7. Cook Them Just Right The key to perfectly cooked albondigas meatballs is cooking them just right. Overcooking will result in dry, tough meatballs, while undercooking can lead to unsafe consumption. To ensure that your meatballs are cooked to perfection, cook them over medium heat in a large skillet until browned on all sides and cooked through. 8. Sauce Them Up Once your albondigas meatballs are cooked, it's time to sauce them up. You can use a classic tomato sauce, a spicy enchilada sauce, or a creamy queso dip, depending on your tastes. Be sure to simmer the meatballs in the sauce for a few minutes to allow the flavors to meld and the meatballs to absorb the sauce. 9. Serve with the Right Accompaniments Albondigas meatballs are traditionally served with rice and beans, but you can also serve them with tortillas, guacamole, or a fresh green salad. Whatever you choose, be sure to have plenty of napkins on hand, as these meatballs can be messy but delicious. 10. Experiment with Variations While classic albondigas meatballs are delicious, don't be afraid to experiment with variations. You can add different ingredients to the meatball mixture, such as chopped jalapenos or cheese, or even try making them with different types of meat, such as lamb or bison. The possibilities are endless! In conclusion, making delicious albondigas meatballs is easier than you might think. By following these valuable tips and tricks, you can create perfectly seasoned, moist, and flavorful meatballs that are sure to impress your family and friends. Whether you're a seasoned pro or a beginner cook, these tips will help you achieve meatball success every time.
