The story of how the Coney Island hog dog got to the Midwest is pretty straightforward, but no one really knows exactly how the wiener first came to be topped with what is basically a hot meat relish. I have no idea how authentic this is, and have never been to Detroit, or even Flint. I have had Nathan's® version, which I enjoyed, but the word on the street is that it's not nearly as good as the relatives it spawned.

1 ½ pounds lean ground beef
2 cups water, or more to taste
½ cup diced onion
⅓ cup ketchup
2 tablespoons butter
2 cloves garlic, crushed
2 tablespoons chili powder, or more to taste
1 ½ teaspoons salt, or to taste
1 teaspoon freshly ground black pepper, or to taste
1 teaspoon ground cumin, or to taste
½ teaspoon celery salt, or to taste
1 pinch cayenne pepper, or to taste
8 all-beef hot dogs
8 hot dog buns
¼ cup prepared yellow mustard, or to taste
¼ cup diced onion, or to taste

Steps:

  • Combine ground beef, water, 1/2 cup diced onion, ketchup, butter, garlic, chili powder, salt, black pepper, cumin, celery salt, and cayenne pepper together in a pot. Mix with a potato masher or spatula over medium-high heat until mixture has a finely ground consistency and begins to bubble, about 10 minutes.
  • Bring beef mixture to a simmer, reduce heat to medium-low, and cook, stirring occasionally, until sauce thickens and reduces, about 1 hour. Season with salt and pepper to taste.
  • Bring a large pot of water to a boil. Cook hot dogs in boiling water until heated through, 5 to 7 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Arrange hot dog buns on a baking sheet.
  • Cook buns in the preheated oven until soft and warm, 2 to 3 minutes.
  • Place 1 bun on a plate. Place a hot dog in the bun and top with meat sauce. Drizzle yellow mustard and diced onion over the meat sauce. Repeat with remaining hot dogs.

I've lived in Flint, Michigan my entire life, and I was brought up on Coneys. The recipe has always been kept "top secret", and every restaurant has a slightly different version. But my friend's grandmother opened and ran one of Flint's top Coney Island restaurants for many years, and she gave me this recipe. The original recipe calls for beef kidney, heart and suet. But guess what? That's what hot dogs are made from! That's why ground hot dogs are a good substitution. I've tried and tasted many copycat recipes for Coney sauce, but I'm convinced that this one is the best. Coneys are traditionally served using a steamed hot dog bun, a koegel vienna hot dog (any vienna hotdog will do) then topped with the sauce, yellow mustard and finely chopped onions. Yum! The friend also noted that if it tastes like something is missing.. add more cumin. By the way, Koegel Viennas are now available to order online!

1 lb hamburger (not lean)
1/2 lb beef hot dog, ground up (the cheap hot dogs work best)
1 onion, finely chopped
3 tablespoons ground cumin
3 tablespoons mild paprika
2 tablespoons chili powder
2 cups water

Steps:

  • Mix all ingredients in a heavy pan and cook over med to low heat until mixture cooks and becomes dry and crumbly.
  • If it seems too wet or greasy, add a few crumbled saltine crackers.
  • Best if made a day ahead and reheated in a frying pan.
  • Freezes well.
  • Note: I grind my hot dogs up in a blender with a little water.
  • I also chop the onions using my blender with water.

1 pound lean ground beef (90% lean)
1 cup beef stock
2 tablespoons tomato paste
1 tablespoon chili powder
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon celery salt
1/2 teaspoon ground cumin
1/4 teaspoon pepper

Steps:

  • Prepare campfire or grill for medium-high heat. In a Dutch oven, cook beef over campfire 8-10 minutes or until no longer pink, breaking into crumbles. Stir in remaining ingredients; bring to a boil. Move Dutch oven to indirect heat. Cook, uncovered, 20-25 minutes or until thickened, stirring occasionally. Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.

6 hot dog buns
6 frankfurters
chopped onion
pickle relish or hot sauerkraut
catsup, mustard
1 lb ground chuck
2 medium onions, chopped
1 1/2-2 tablespoons chili powder
2 (1 lb) cans dark red kidney beans
1 (1 lb) can whole tomato, undrained
1 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon garlic powder
1/2 teaspoon sugar
1/4 cup catsup

Steps:

  • FOR THE CHILI SAUCE: In large kettle, over medium heat, sauté ground chuck, stirring, until red color disappears. Pour off fat.
  • Add chopped onion and chili powder, cook, stirring, about 5 minutes, or until onion is tender.
  • DRAIN ONE can of beans; use ONE CAN UNDRAINED. Add with rest of ingredients to meat, breaking up tomatoes with fork; stir to mix well. Simmer slowly, covered and stirring occasionally, until thickened and flavors are blended about 1 hour. Makes 2 quarts. This sauce can be frozen. Thaw overnight in refrigerator or several hours at room temperature.
  • FOR THE HOT DOGS: Sprinkle rolls lightly with water; wrap tightly in foil. Heat in 350°F oven while heating frankfurters.
  • In large saucepan, bring 1 quart water to boiling. Add frankfurters. Cover, and turn heat very low; heat 5 to 8 minutes. Meanwhile, in small saucepan, heat Chili Sauce.
  • TO SERVE: Fill each warm roll with frankfurter; top with Chili Sauce. Pass onion, pickle relish, catsup and mustard. Makes 6 servings.
