Categories     main-dish

Time 4h

Yield 4 to 6 servings

Number Of Ingredients 12

3/4 cup sugar
3/4 cup kosher salt
One 5-pound chicken, quartered
2 tablespoons cornstarch
1 tablespoon vegetable oil
Alabama White BBQ Sauce, recipe follows
1 cup mayonnaise
1/4 cup apple cider vinegar
1 tablespoon prepared horseradish
1 teaspoon Dijon mustard
1 teaspoon freshly ground black pepper
Salt

Steps:

  • Mix the sugar, salt and 3 quarts (12 cups) water together in a large plastic or stainless steel vessel. Add the chicken quarters to the mixture and let brine, refrigerated, for at least 2 hours.
  • Set a wire rack on a baking sheet. Remove the chicken from the brine, pat dry with paper towels and then set on the wire rack for at least 1 hour at room temperature, though it is ideal to do this step overnight in the refrigerator. (If you decide to refrigerate it overnight, be sure to bring the chicken to room temperature for about an hour before grilling.)
  • Heat a grill to medium heat (about 350 degrees F). In a large bowl, toss the chicken with the cornstarch and vegetable oil.
  • Grill the chicken skin-side down for 15 minutes, keeping an eye on it to make sure the skin doesn't burn. Flip the chicken and cook until it reaches an internal temperature of 165 degrees F, about 20 minutes. Remove and let rest for at least 10 minutes. Serve with Alabama White BBQ Sauce.
  • Stir together the mayonnaise, vinegar, horseradish, mustard and pepper in a medium bowl. Season with salt. Serve with grilled chicken.

ALABAMA BBQ CHICKEN AND WHITE SAUCE (GRILLED)

Alabama BBQ Chicken and White Sauce (Grilled) image

Had this at a friend's house this weekend and it was great. Very different. She used a "Green Egg Smoker" which cooked the chicken slowly and kept it very moist. You can use boneless, skinless breasts and then serve them on nice bread with lettuce leaves, pickles (if you like) and the white sauce! My friend got the recipe from "Smoke and Spice" and this is a similar one from The BBQ General website from a magazine called Cook's Country. Hope you like it. I don't have a smoker but I can try indirect heating. I have a gas grill too so there are obstacles but I can experiment!

SLOW COOKER ALABAMA PULLED BBQ CHICKEN

Slow Cooker Alabama Pulled BBQ Chicken image

Tender pulled chicken with a southern white sauce. This wonderful pulled chicken has the perfect balance of seasoning with a hint of Alabama BBQ. The sauce is not overly powerful but you can always add more or leave it off and still have a great tasting pulled chicken for sandwiches or plain. I searched and searched for an easy slow cooker pulled chicken recipe that would be similar to a popular BBQ restaurant. I never found one, so here's my own recipe. My family of six loves this. Keep remaining sauce refrigerated until ready to serve. Great to spread on sandwich, lettuce leaf, or drizzle over chicken on plate.

In this article, we'll explore the fascinating history of Alabama BBQ chicken recipes, as well as the different variations that are popular today.

The Origins of Alabama BBQ Chicken

The history of barbecue goes back centuries and is intertwined with the history of the United States. The origins of BBQ chicken, in particular, are not entirely clear, but many historians believe that it developed from Southern-style pit-cooking. African American enslaved people in the 18th and 19th centuries would often do the cooking for their white owners, and they would use spices and techniques that they were familiar with from their African culture to create tasty dishes. As apartheid ended, Black pitmasters began to develop new and exciting recipes for BBQ and chicken. Such recipes were eventually passed down through generations, giving rise to the many variations of Alabama BBQ chicken recipes that are popular today.

Techniques Used in Alabama BBQ Chicken Recipes

Smoking is one of the most important techniques used in Alabama BBQ chicken. The chicken is slow-cooked in a smoker for hours over a low heat, which helps to infuse the meat with flavor and tenderize it. Because the chicken is cooked at such a low temperature for such a long time, it stays juicy and flavorful. Additionally, different rubs and marinades might be used to add flavor to the chicken before cooking. Many Alabama BBQ chicken recipes also call for the use of different types of wood, such as hickory or applewood, which helps to impart a distinct smoky flavor to the meat.

Types of Alabama BBQ Chicken Sauces

Alabama BBQ chicken is typically served with an acidic, tangy sauce that helps to cut through the richness of the smoked meat. In Alabama, there are two main types of sauce that are popular: white sauce and red sauce. White sauce is a mayonnaise-based sauce that's tangy and slightly sour, which is perfect for serving with chicken. Red sauce is a tomato-based sauce that's sweet and smoky, making it perfect for beef and pork. Both types of sauces are usually served at Alabama BBQ joints, giving diners the option to choose their preferred sauce.

What to Serve with Alabama BBQ Chicken

In addition to the chicken and sauce itself, many traditional Southern sides complement Alabama BBQ chicken. Collard greens, mac and cheese, cornbread, and potato salad are all popular side dishes that are often served with Alabama BBQ chicken. Additionally, many joints will serve up a slice of white bread to help soak up the delicious juices and sauce from the chicken.

Conclusion

Alabama BBQ chicken is an iconic dish that's steeped in history and tradition. When it comes to making delicious Alabama BBQ chicken, there are a few valuable tips and techniques that can ensure your dish is a success. From selecting the right cut of chicken to choosing the perfect marinade, these tips will help take your BBQ chicken from ordinary to extraordinary. Select the Right Cut of Chicken When making BBQ chicken, it's important to choose the right cut of chicken. While chicken breasts are the go-to choice for many recipes, they can be dry and tough when exposed to high heat. Instead, opt for bone-in chicken thighs or drumsticks, which are more flavorful and moist. Season and Marinade Seasoning and marinating your chicken properly are key to achieving an unforgettable flavor. Before cooking, season your chicken with a mix of spices, such as paprika, garlic, onion powder, and salt. After seasoning, let your chicken marinate in a mixture of your choice. This can be anything from a classic BBQ sauce to a tangy vinegar-based marinade. Preheat and Clean the Grill Before grilling your chicken, make sure to preheat your grill. This will help ensure that your chicken cooks evenly and thoroughly. Once your grill is preheated, clean the grates with a wire brush to remove any debris or previous food particles. This will not only ensure that your chicken doesn't stick to the grates but will also help prevent any unwanted flavors from previous food items. Use Indirect Heat To prevent your chicken from burning or becoming dry, use indirect heat when grilling. This involves placing your chicken on the cooler side of the grill and closing the lid, allowing the chicken to cook in its own juices. This method will result in a more tender and flavorful end product. Baste Your Chicken Basting your chicken with your preferred BBQ sauce or marinade is a crucial step in achieving a perfect Alabama BBQ chicken flavor. Continue to baste your chicken as it cooks, ensuring that your chicken remains moist and flavorful. Use a Meat Thermometer One of the most important tips when cooking any meat is to use a meat thermometer. This will ensure that your chicken is cooked to the proper temperature and is safe to eat. The ideal temperature for cooked chicken is 165 degrees Fahrenheit. Rest Your Chicken After grilling your Alabama BBQ chicken, let it rest for a few minutes before serving. This will allow the juices to redistribute, resulting in a more tender and juicy end product. In Conclusion By following these valuable tips and techniques, you'll be able to make unforgettable Alabama BBQ chicken that will have your family and friends begging for the recipe. Remember to choose the right cut of chicken, season and marinade properly, preheat and clean the grill, use indirect heat, baste your chicken, use a meat thermometer, and rest your chicken before serving. With these tips and techniques, you can achieve a perfect BBQ chicken dish that will leave a lasting impression.
