AIR-FRYER FAJITA-STUFFED CHICKEN

Air-Fryer Fajita-Stuffed Chicken image

I had all the ingredients for fajitas, but instead of heating up my big oven I decided to try out the air fryer. Since mine is a small one, I wanted to get as much filling as I could in each stuffed chicken breast. This worked nicely by cutting slits in the breasts and then filling them. -Joan Hallford, North Richland Hills, Texas

Chicken fajitas in the air fryer doesn't get any easier than this. The chicken stays nice and moist while the vegetables have a nice crisp to them. Add 2 minutes of cook time if you prefer softer veggies. I like to toast my tortillas in the air fryer as well but it is not necessary. Serve with toppings of your choice such as salsa, sliced avocado, and cheese.

Air fryer fajita stuffed chicken is a delicious and healthy dinner option that is easy to make. It's a perfect combination of juicy chicken, flavorful fajita vegetables, and oozing cheese. This recipe is ideal for busy weeknights as it takes only a few minutes to prepare and cook.

Tip 1: Choose the Right Cut of Chicken

The key to making the perfect air fryer fajita stuffed chicken is to choose the right cut of chicken. You want a chicken breast that is large enough to stuff with the fajita vegetables and cheese but not so thick that it takes forever to cook. Look for chicken breasts that are around 6-8 ounces in size and around 1 inch thick. This size of chicken is perfect for stuffing and cooks quickly in the air fryer.

Tip 2: Marinate the Chicken Overnight

Marinating the chicken overnight is not only important for adding flavor but also for tenderizing the chicken. For the fajita stuffed chicken, a simple marinade of lime juice, garlic, cumin, and chili powder works great. These flavors complement the fajita vegetables and cheese, creating a dish that is full of flavor.
Marinade Recipe:
- 2 tablespoons of lime juice - 1 minced garlic clove - 1/2 teaspoon of ground cumin - 1/2 teaspoon of chili powder - Salt and pepper to taste Mix all the marinade ingredients in a small bowl and pour it over the chicken breasts in a plastic bag or container. Make sure the chicken is fully coated in the marinade and refrigerate for at least 1 hour or up to overnight.

Tip 3: Preheat the Air Fryer

Preheating the air fryer is essential to getting the perfect texture and crispiness on the chicken. Set the air fryer to 400°F and preheat it for 2-3 minutes before adding the chicken. This step ensures that the air fryer is hot and ready to cook the chicken evenly.

Tip 4: Stuff the Chicken Properly

The key to stuffing the chicken properly is to make a pocket in the center of the chicken breast. Slide a sharp knife along the thickest part of the chicken breast, being careful not to cut all the way through. Open up the pocket you have created and stuff it with the fajita vegetables and cheese. Use toothpicks to secure the ends closed and keep the stuffing inside while cooking.

Tip 5: Add Vegetables to the Stuffing

Adding vegetables to the stuffing not only adds nutritional value but also makes the dish more flavorful. Use a combination of red and green bell peppers, onions, and mushrooms to create a classic fajita flavor. Sauté the vegetables in a pan with a little bit of oil until they are tender and set aside to cool before stuffing them into the chicken.

Tip 6: Use the Right Amount of Cheese

Using the right amount of cheese is essential to creating the perfect air fryer fajita stuffed chicken. Too much cheese can overpower the other flavors, and too little cheese can make the dish dry. Use around 1/4 cup of shredded Monterey Jack or cheddar cheese to stuff each chicken breast to create a perfect balance of flavors.

Tip 7: Cook the Chicken to the Right Temperature

Cooking the chicken to the right temperature is essential to ensure it's safe to eat. Use a meat thermometer to check the internal temperature of the chicken, which should be 165°F. Cook the chicken for 12-16 minutes in the air fryer, depending on the thickness of the chicken breasts.

Tip 8: Let the Chicken Rest

Letting the chicken rest for a few minutes after cooking is essential to keeping it juicy and flavorful. Remove the chicken from the air fryer and let it sit for 2-3 minutes before slicing it. This step allows the juices to redistribute throughout the chicken, giving it a more even and delicious taste.

Conclusion

Making air fryer fajita stuffed chicken is an excellent way to create a delicious and healthy dinner that is quick and easy to prepare. By following these tips, you'll create a dish that is tender, juicy, flavorful and sure to impress your family and friends. So why not try it out today?
