AIR FRYER POTATO CHIPS
These crunchy air-fryer potato chips are a salty, satisfying snack that's a cinch to cook up. A mandoline makes fast work of slicing the potatoes paper thin. Rinsing the sliced potatoes before cooking will remove most of the natural starch and prevent the chips from sticking together--don't skip this step.

- Thinly slice the potatoes on a mandoline, about 1/16 inch thick. Transfer to a medium bowl and run under cold water until almost all the white starch comes off and the water runs clear. Dry well between a couple paper towels. Dry the bowl as well.
- Add the dry potatoes back to the dry bowl and toss with the oil, 1/2 teaspoon salt and a few grinds of pepper until evenly coated.
- Preheat a 3.5-quart air fryer to 320 degrees F. Shingle the potatoes in the bottom of the basket; it's okay if there are two layers. Cook until the potatoes are deep golden brown around the edges and crisp, tossing every 5 minutes with tongs so they're evenly cooked, about 30 minutes. If you notice a few slices are finished cooking and completely crisp before others, remove to a large bowl and continue cooking the remaining pieces.
- Season the chips with a pinch of salt. Serve immediately or let cool and store in an airtight container for up to 2 days.
AIR FRYER POTATO CHIPS
Steps:
- Gather the ingredients.
- Scrub and wash the potatoes thoroughly. There is no need to peel the potatoes. Use a mandolin or a vegetable peeler to slice very thin slices of potato. You can slice long ways for long chips or short ways for a more classic chip shape. Use the 1/8-inch setting on your mandolin.
- Immediately place the potato slices as you slice them into a bowl of very cold water. Let them sit in the cold water for at least 20 minutes. This allows the starch to leave the potatoes so they can crisp properly and also prevents oxidation.
- Remove them from the cold water. Give them a rinse with more cold water and then place them on a paper-towel lined baking sheet. Squeeze and pat them dry with the paper towels until they are as dry as you can get them.
- Add the dried potato slices to a large bowl. Drizzle with the olive oil and toss to coat. You can also use canola oil or olive oil spray. Preheat the air fryer to 350 F.
- Add the potato slices into the basket of the air fryer in one even layer, without too much overlapping. Air fry on 350 F for 10 minutes.
- Separate the potato slices and flip them if needed. Then raise the temperature to 400 F and air fry for another 3 to 5 minutes, or until crispy on all sides and lightly golden brown. Remove from the air fryer and sprinkle with salt immediately. Then repeat again as many times as needed for the remaining chips. Top with chopped chives or parsley if you wish.

- Preheat air fryer to 400 degrees F (200 degrees C).
- Place sweet potato slices in a large bowl. Stir in avocado oil, evenly coating each piece. Add Creole seasoning, stirring to combine. Place slices in a thin layer on the bottom of the air fryer basket.
- Cook in the preheated air fryer for 7 minutes. Shake slices and turn to allow for even cooking. Continue cooking until desired crispness is achieved, about 6 more minutes. Transfer potato slices to a rack and allow to cool.

- Wash and peel the potatoes and cut into thin slices using a mandoline or sharp knife. It's important to keep the potatoes sliced the same thickness for even cooking.
- Place the sliced potatoes in a large bowl and top with ice water. Soak for 15 minutes and then drain. Replace the ice water and soak for another 15 minutes. Drain.
- Pat the potatoes dry, making sure to get them as dry as possible.
- Drizzle the olive oil over the potatoes and sprinkle with salt, tossing well to coat.
- Arrange the potatoes in a single layer in the air fryer basket. It's okay for there to be a bit of overlapping, but do not fully cover any of the potatoes.
- Cook the potatoes at 300 degrees for 10 minutes.
- Increase the heat to 400 degrees, shake the basket to stir the chips, and cook for 5 minutes or until potatoes are as crisp as you'd like.

- Place sliced potatoes in a large bowl.
- Spray a light coating of cooking spray,toss and coat both sides.

- To make straight, neat chips, peel the potatoes and trim away all the rounded edges so they become rectangular blocks. Cut the blocks into batons - they should be somewhere between fries and thick chips, as if they're too thin, they might break; too thick, and they won't cook through (if you like, save the offcuts to make mash or add to soups). Alternatively, cut the unpeeled potatoes into chips without trimming, if you're not bothered by neatness. Rinse the chips and pat dry with a clean tea towel.
- Tip the chips into the bottom of an air fryer (the part with the paddle), add the oil, and toss the chips in the oil so they are evenly coated. Program the fryer to cook for 30 mins using the paddle. After this time, check that the chips are tender and cooked through. If they're not, cook for a further 5 mins. Season well.
