Categories     Appetizer

Time 12m

Number Of Ingredients 11

2 TB regular strength soy sauce
2 TB freshly squeezed lemon juice
1 TB Asian toasted sesame oil (found in the Asian aisle)
2 tsp garlic powder
2 tsp granulated sugar
1 tsp kosher salt
1 tsp freshly cracked black pepper
2 to 21/2 lbs fresh ahi tuna steaks (about 1 1/2-1 2/3 inches thick)
oil for cooking
Optional: freshly chopped cilantro (green scallions, sesame seeds for garnish.)
Optional: Sriracha mayo for drizzling

Steps:

  • Marinade: In a bowl, whisk together the first 7 ingredients to make a marinade. Towel dry tuna steaks and place in a glass or ceramic dish. Pour marinade over the fish, turning to coat well throughout. Cover tightly and chill several hours to overnight; turn fish over at least once in the middle of marinade time.
  • Sear: Heat 3 TB oil in a large heavy skillet (aluminum or stainless steel; not nonstick) until oil is smoking. Sear ahi steaks 1 1/2 minutes per side on high heat, taking care to flip carefully with a flat, steel spatula. (If your tuna is less than 1 1/2 inches thick, sear for only 1 minute per side.)
  • Rest/Cool: Transfer seared ahi to a large cutting board and let rest/cool 10 minutes. Use a very sharp (serrated works well) knife to slice thinly across the grain.
  • Serve: Serve chilled or at room temp, over your favorite salad greens or crispy Asian salad. Sprinkle with sesame seeds and cilantro or green onions, if desired. Drizzle with Sriracha mayo if desired.

AHI POKE BASIC

Ahi Poke Basic image

This is a standard raw tuna (poke) salad served in most Hawaiian homes. Although unconventional, it is sure to please the more adventurous seafood lovers. Be sure to use fresh tuna for the very best flavor, although fresh frozen tuna will produce acceptable results.

MISO NOODLES WITH SEARED AHI TUNA

Miso Noodles with Seared Ahi Tuna image

Provided by Guy Fieri

Categories     main-dish

Time 35m

Yield 4 to 6 servings

Number Of Ingredients 20

1/2 cup white miso paste
3 teaspoons low-sodium soy sauce
2 tablespoons mirin
2 tablespoons canola oil
2 tablespoons seasoned rice vinegar
1 teaspoon sesame oil
Kosher salt
10 ounces sugar snap peas, julienned into matchsticks
12 ounces buckwheat soba noodles
2 medium organic carrots, peeled and julienned into matchsticks
2 tablespoons canola oil, plus more for brushing
1 tablespoon sweet soy sauce
2 teaspoons yuzu
1 teaspoon sesame oil
1 teaspoon grated fresh ginger
3 pounds good-quality ahi (or yellowfin) tuna, sushi-grade if possible
1/4 cup black sesame seeds
1/4 cup white sesame seeds
4 scallions, thinly sliced on the bias, for garnish
Special equipment: 8 bamboo skewers soaked in water for 10 to 15 minutes

Steps:

  • For the noodles and dressing: Begin by making the dressing. In a large bowl, combine the miso, soy sauce, 1/4 cup hot water, mirin, canola oil, rice vinegar and sesame oil. Whisk together well and set aside.
  • In a large pot of salted boiling water, blanch the sugar snap peas until bright green and just tender, 10 to 15 seconds. Set aside. Add the soba noodles to the hot water and cook for 2 to 3 minutes. Then strain and rinse under cold running water (this will stop the cooking process and gives the soba noodles their distinctive springy texture). Toss the noodles in the dressing and fold in the sugar snap peas and julienned carrot. Set aside until ready to serve.
  • For the seared ahi tuna: In a large mixing bowl, make a quick marinade of the canola oil, sweet soy sauce, yuzu, sesame oil and ginger. Whisk together to combine. Carefully cut the tuna into 1 1/2-inch cubes and place in the marinade and toss to coat well (it will be a very light coating/marinade as the tuna shouldn't be too wet when searing).
  • Thread 4 pieces of tuna per bamboo skewer (4 cubes per skewer, 8 skewers total). Mix the sesame seeds together and spread out on a flat platter. Take each skewer and press the tuna into the sesame seed mixture so it is well coated on all 4 sides.
  • Heat a flat grill plate to high heat. Brush lightly with some oil to clean the grates and create a nonstick surface. Grill the tuna skewers just a few seconds on each of the 4 sides so the sesame seeds are toasted and crunchy and the tuna is rare in the middle, 30 to 35 seconds.
  • Serve the tuna skewers on a bed of the dressed soba noodles and garnish with some sliced scallions.

AHI TUNA WITH VEGETABLE STIR-FRY

Ahi Tuna With Vegetable Stir-Fry image

I've had this recipe at the Canoe House Restaurant and it is wonderful. Here's a little bit about the dish and the restaurant. At the Mauna Lani Bay Hotel on Hawaii's Kohala coast, CanoeHouse chef Pat Saito uses ono steaks (a type of mackerel) for this dish. Ahi tuna, which is easier to find, makes a good substitute. Saito serves the fish with wasabi-laced mashed potatoes.

Time 15m

Yield 4

Number Of Ingredients 5

1 pound sashimi grade yellowfin tuna
kosher salt to taste
fresh ground black pepper to taste
½ cup Italian seasoned bread crumbs
3 tablespoons olive oil

Steps:

  • With a sharp knife, cut the tuna into 4 large pieces for appetizer portion, 2 large pieces for dinner portion. Use your judgment on what shape you want to cut your tuna because not all tuna is the same size or shape. However, the shape should somewhat resemble a miniature brick.
  • Season the tuna pieces with salt and pepper. Coat lightly on all sides with bread crumbs. Heat olive oil in a large heavy skillet over high heat. The pan should be as hot as you can get it. Place the tuna in the pan, and sear on each side for about 45 seconds for small portions, or 1 minute for large. Remove from pan. The tuna will be very rare.
  • Slice each 'brick' into 1/4 inch thick slices, and fan out on a serving plate. Enjoy plain, or with the condiments of your choice.

Ahi tuna fish soup is a delicious and healthy dish that is easy to prepare. If you are looking for a way to make this soup even more delicious, then you have come to the right place. In this article, we will provide you with valuable tips that you can use to make the perfect ahi tuna fish soup. These tips will help you to create a rich and flavorful soup that will have your taste buds singing.

Tip 1: Start with fresh ingredients

One of the most important things to consider when making ahi tuna fish soup is the freshness of your ingredients. To get the best flavor out of your soup, it is important to use fresh fish, vegetables, and herbs. When shopping for ingredients, look for ahi tuna that is bright red or pink, with no brown spots or discoloration. This indicates that it is fresh and will taste great in your soup.
Tip 1.1: Use high-quality broth or stock
In addition to using fresh ingredients, it is also important to use high-quality broth or stock. A good broth will add depth and flavor to your soup, while a poor-quality broth will make it taste bland and unappetizing. If you are making your broth from scratch, be sure to simmer it for several hours to extract as much flavor as possible.

Tip 2: Season your soup properly

To make your ahi tuna fish soup taste amazing, it is important to season it properly. This means using the right amount of salt, pepper, and other seasonings to bring out the flavors of the ingredients in your soup. Be careful not to add too much salt, as this can ruin the taste of your soup. Instead, season your soup gradually, tasting it after each addition to ensure that it is just right.
Tip 2.1: Use fresh herbs and spices
To add even more flavor to your soup, try using fresh herbs and spices. These will give your soup a bright and fresh taste that will complement the rich flavor of the ahi tuna. Some good herbs and spices to use in your soup may include thyme, basil, cilantro, ginger, and garlic.

Tip 3: Cook your soup with care

Another important aspect of making a great ahi tuna fish soup is to cook it with care. This means using gentle heat and taking your time to ensure that all of the ingredients cook evenly. If you boil your soup too vigorously, this can cause the fish to break apart and the vegetables to become mushy. Instead, simmer your soup over low heat to create a rich and flavorful broth.
Tip 3.1: Do not overcook the tuna fish
When adding the ahi tuna to your soup, be careful not to overcook it. Ahi tuna is best when it is slightly pink on the inside, so be sure to cook it for only a few minutes. Overcooking the fish can cause it to become tough and dry, which will ruin the taste of your soup.

Tip 4: Serve your soup with the right accompaniments

To make your ahi tuna fish soup even more delicious, it is important to serve it with the right accompaniments. This may include crusty bread, rice, or noodles that will help to soak up the delicious broth. You may also want to add some fresh herbs or a squeeze of lemon juice to brighten up the flavors of the soup.
Tip 4.1: Use fresh garnishes to add flavor and texture
To add even more flavor and texture to your soup, try using fresh garnishes such as chopped scallions, sliced jalapenos, or avocado chunks. These will add a fresh and vibrant taste to your soup that will make it even more delicious.

Conclusion

Making a delicious ahi tuna fish soup is all about using the right ingredients and cooking it with care. By following these valuable tips, you can create a rich and flavorful soup that will have your taste buds singing. Whether you are cooking for a family dinner or a special occasion, your ahi tuna fish soup is sure to impress.
