1/4 teaspoon crushed red pepper flakes
1 egg, lightly beaten
1 pound sushi-grade tuna, finely diced
1/4 cup finely diced red bell pepper
2 scallions, finely sliced
Kosher salt and freshly ground black pepper
1/2 cup panko breadcrumbs
Vegetable oil, for cooking
4 seeded hamburger buns, split
Spicy Sriracha Mayo, recipe follows
4 medium butter lettuce leaves
1 beefsteak or heirloom tomato, sliced
Dry Riesling, for serving
1 cup mayonnaise

1 1/2 tablespoons Sriracha
1 teaspoon lemon juice
1 teaspoon honey
4 grilled scallions, chopped
Kosher salt and freshly ground black pepper

Steps:

  • Heat a large nonstick skillet over high heat. Coat the pan with a little vegetable oil and cook the tuna patties 3 minutes per side (when done, the patties will be browned on the outside and medium-rare in the center).
  • Grill the hamburger buns over high heat until well charred and crispy.
  • Serve the tuna burgers slathered with the Spicy Sriracha Mayo, lettuce leaves and tomato slices on the toasted, seeded hamburger buns, paired with the dry Riesling.
  • Combine the mayonnaise, sour cream, Sriracha, sesame oil, lemon juice, honey and scallions in a large mixing bowl. Stir well to combine, season with salt and pepper and place in the refrigerator until ready to serve.

Yield 4

Number Of Ingredients 5

1 pound sashimi grade yellowfin tuna
kosher salt to taste

Place the tuna in the pan, and sear on each side for about 45 seconds for small portions, or 1 minute for large. Remove from pan. The tuna will be very rare.
  • Slice each 'brick' into 1/4 inch thick slices, and fan out on a serving plate. Enjoy plain, or with the condiments of your choice.

Ahi tuna burgers are a delicious alternative to traditional beef burgers. Made with fresh, sushi-grade tuna, these burgers are packed with flavor and nutrition. When paired with a zesty ginger wasabi mayonnaise, ahi tuna burgers are the perfect dish for any occasion. In this article, we will provide valuable tips to help you create the perfect ahi tuna burgers with ginger wasabi mayonnaise recipes.

Tip 1: Choose the Right Tuna

The key to a great ahi tuna burger is selecting the right tuna. When shopping for tuna, look for sushi-grade options as these are the freshest and highest quality cuts. Sashimi-grade tuna is also a good option as it is specifically designed for raw consumption. Ensure that the tuna is firm and the color is vibrant. Avoid tuna that has a dull or brownish appearance as this indicates poor quality.

Tip 2: Prepare the Tuna

Once you have selected your tuna, it's time to prepare it for the burgers. Start by trimming any excess fat or skin and cut the tuna into small, bite-sized pieces. Pulse the tuna in a food processor for a few seconds, but not too much as you want the burgers to be chunky. Once pulsed, form the tuna into patties about 4-6 inches in diameter and 1 inch thick.

Tip 3: Season to Perfection

Ahi tuna has a mild flavor, so it's important to season it with flavorful ingredients. Many ahi tuna burger recipes call for soy sauce, sesame oil, and chopped scallions to enhance the flavor. Other seasonings that pair well with ahi tuna include garlic, ginger, and lime juice. Season the tuna patties with your desired ingredients and let them marinate for at least 30 minutes before grilling.

Tip 4: Grill the Burgers

Grilling is the best cooking method for ahi tuna burgers as it allows you to cook them quickly over high heat. Preheat your grill to medium-high and brush the grates with oil to prevent sticking. Place the tuna patties on the grill and cook for about 2-3 minutes per side, or until they are cooked to your desired doneness. Be careful not to overcook the tuna as it will dry out and become tough.

Tip 5: Make the Ginger Wasabi Mayo

While the tuna burgers are cooking, prepare the ginger wasabi mayo. This zesty spread is made with mayonnaise, fresh ginger, and wasabi paste. Simply whisk the ingredients together in a small bowl and set aside until it's time to assemble the burgers.

Tip 6: Assemble the Burgers

To assemble the burgers, spread a generous amount of ginger wasabi mayo on a toasted bun or brioche roll. Add the grilled tuna patty to the bottom half of the bun and top with your desired toppings, such as avocado, sliced cucumbers, or pickled ginger. Top with the other half of the bun and serve immediately.

Tip 7: Get Creative

Ahi tuna burgers are a versatile dish that can be customized to your liking. Experiment with different seasonings, toppings, and sauces to create your own unique flavor combinations. Some popular variations of ahi tuna burgers include adding Asian slaw, crispy bacon, or even a fried egg on top.

Conclusion

Making ahi tuna burgers with ginger wasabi mayo is a delicious and healthy alternative to traditional beef burgers. By following these valuable tips, you can create the perfect ahi tuna burger that is packed with flavor and nutrition. Don't be afraid to get creative and experiment with different seasonings and toppings to make this dish your own.
