1 pound hot dogs
2 tablespoons unsalted butter
1 yellow onion, diced
1 fresh poblano chile pepper, diced
1 rib celery, diced

1 tablespoon light brown sugar
¼ cup ketchup
1 tablespoon Dijon mustard
½ teaspoon Worcestershire sauce
2 ½ cups chicken broth, or as needed
2 (15 ounce) cans cannellini beans, drained and rinsed
¼ cup sliced green onions

Steps:

  • Lightly score hot dog skins from end to end on 4 sides. This helps keep them flat when they cook. Slice into 1/2-inch rounds.
  • Melt butter in large pot over medium heat. Add onions, poblano pepper, celery, and cayenne pepper. Season with salt and pepper. Cook and stir until vegetables are soft and onions are translucent, 5 to 7 minutes.

8-10 hot dogs, I used Hebrew National
2 15 ounce cans baked beans, I used Heinz
1/8 cup ketchup
1/8 cup BBQ sauce
1/4 cup light or dark brown sugar
2 tbsp yellow mustard
1 tsp onion powder
1 tbsp butter or olive oil

Steps:

  • 1.Preheat oven to 375 degrees. spray a casserole dish (This is the same one my mom gave me all those years ago, it's a classic and comes with a lid) with cooking spray, set aside. 2.Grill or fry the hot dogs in a nonstick pan or grill pan use a tablespoon of butter or olive oil. Cook just until a few minutes just to make them slightly crispy or with grill marks. This step is optional. 3.Let the hot dogs cool just so you can slice them up into about 1 inch pieces.4.Toss the cut hot dogs into the casserole dish along with the two cans beans and the spices. Gently mix in all the ingredients. Try not to break up the beans. 5.Bake on a foil lined cookie sheet for about 20 to 30 minutes or until casserole is bubbling. Take out of the oven and let sit on cooling rack for about 5 minutes. Now, serve up! Enjoy!

28 ounces bush's country style baked beans
1/2 cup coarsely chopped onion
1 tablespoon extra light olive oil
1 tablespoon ketchup
1 tablespoon brown sugar

12 ounces of hebrew national beef hot dogs

Steps:

  • 1. In a Large Heavy Pot place the beans, tomatoes, brown sugar and cayenne pepper . Bring up to a simmer over medium heat, stirring often.
  • 2. In a skillet, heat oilive oil.
  • 3. Saute chopped onions over medium heat until soft and brown then put the onions into the pot.
  • 4. Cut hot dogs in the 2 inch pieces. Saute hot dog pieces in hotpan until browned on all sides then put into pot.
  • 5. Simmer mixture, stirring often, for approx 1 hour.
  • 6. Serve over hot white rice.

This is a yummy recipe that can be used as either a side dish or a great vegetarian main dish! And with the warm weather finally here I've been experimenting with Island recipes, Jamaican being some of my favorite "flavors". My fiancee' went wild over this with Grilled Jerk Chicken made from the authentic Jamaican Jerk Sauce recipe. I hope you enjoy it as much as we did. (p.s. I've done this the long way and the short-cut method and while the taste is slightly different both are VERY good) Work time includes soaking of beans.

1 1/2 cups dried kidney beans (light or dark)
2 teaspoons salt
1 garlic clove, crushed
1/2 cup unsweetened coconut milk
2 scallions, chopped
2 tablespoons vegetable oil
2 sprigs fresh thyme

1 whole jalapeno pepper
1 bell pepper, chopped
2 medium yams, peeled and diced
4 cups cooked long-grain rice
salt and black pepper

Steps:

  • In a large pot, heat about 8-10 cups of water to boiling (enough water to cover beans by about 1 inch). Add dry beans and boil 2 to 3 minutes. Remove pot from heat, cover and let stand about 4 hours or overnight. Drain the beans thoroughly and rise.
  • Add enough fresh water to just cover beans, add garlic and salt, stir. Simmer about 30 minutes until they begin to get tender (not cooked through). Save 3 cups liquid, discard remaining liquid and garlic clove.
  • In the pot sautee yams, allspice, scallions and peppers in oil until the scallions begin to soften. (2-3 minutes)
  • Return the beans and add the reserved liquid to the pot with the coconut milk and simmer about another 10-20 minutes stirring occasionally until the beans are soft and yams are cooked thoroughly. Serve over cooked rice in individual bowls.
  • Shortcut method: drain and risne two (2) 12oz. cans of light or dark kidney beans. Skip to sautéing the vegetables and spices (add garlic to the sautee' pot) When they are soft add the drained/rinsed beans and about 1-1/2 cups of water and continue with recipe from there.
