Blue Cheese and Walnut Crackers image

Provided by Ina Garten

Categories     appetizer

Time 1h37m

Yield 30 crackers

Number Of Ingredients 7

1/4 pound (1 stick) unsalted butter at room temperature
8 ounces Stilton cheese, crumbled (about 12 ounces with rind), at room temperature
1 1/2 cups all-purpose flour
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 extra-large egg beaten with 1 tablespoon water for egg wash
1/2 cup roughly chopped walnuts

Steps:

  • In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and Stilton together for 1 minute, or until smooth. With the mixer on low speed, add the flour, salt and pepper and mix until it's in large crumbles, about 1 minute. Add 1 tablespoon of water and mix until combined.
  • Dump the dough onto a floured board, press it into a ball, and roll into a 12-inch long log. Brush the log completely with the egg wash. Spread the walnuts in a square on a cutting board and roll the log back and forth in the walnuts, pressing lightly, and distributing them evenly on the outside of the log. Wrap in plastic and refrigerate for at least 30 minutes or for up to 4 days.
  • Meanwhile, preheat the oven to 350 degrees F.
  • Cut the log 3/8ths-inch thick with a small, sharp knife and place the crackers on a sheet pan lined with parchment paper. Bake for 22 minutes until very lightly browned. Rotate the pan once during baking. Cool and serve at room temperature.

ADDICTIVE BLEU CHEESE CRACKER SPREAD

Addictive Bleu Cheese Cracker Spread image

This is one of my offerings that family and friends expect of me when we gather. There is a secret to it, which I inform them of. Another is: leave out the Bleu Cheese and replace with Garlic and Chives. I normally provide both Bleu Cheese and Garlic. I'm way overdue in attempting to create a sweet one with Pineapple,...

Provided by Gary Hancq

Categories     Spreads

Time 15m

Number Of Ingredients 4

1 pkg philadelphia brand cream cheese 8 oz.
1/2 to 2/3 stick butter (the secret)
2 to 4 oz bleu cheese or gorganzola (italian bleu)
crackers assorted or bread crisps

Steps:

  • 1. Allow Cream Cheese and Butter to set out at room temp about an hour to soften some.
  • 2. In medium bowl mix Cream Cheese and Butter until well combine and smooth. Add in Bleu Cheese and again mix until smooth. I use 2 oz. Totally incorporate Bleu Cheese.
  • 3. You're done. Cover and refrigerate. Remove from fridge one hour before serving. The Butter content will harden and it will flake rather than spread unless allowed to approach room temperature.
  • 4. I normally make both Blue Cheese and the Garlic and Chive and provide both.
  • 5. For Garlic and Chive: Replace Bleu Cheese with 1/2 teaspoon Powdered Garlic and 1/4 cup minced Chives or Green Onion Tops. I use Powdered Garlic for control. Fresh Garlic can be overpowering and hard to control. Mix Cream Cheese and Butter and then combine the Garlic and Chives.
  • 6. I've yet to attempt the sweet variety, but know it would be a hit as well. See Note.
  • 7. Note: I inform every one it is loaded with Butter so they can indulge at their own risk. A Tasty Risk. I use a lot of Butter and Extra Virgin Olive Oil in a lot of my offerings, but I don't indulge in them three times a day every day. Moderation Is A Virtue. And a Healthy One In All Circumstances.

CHEESE CRACKERS

Cheese Crackers image

Cheddar crackers. Cheese wafers. Coins, biscuits, straws and crisps. Known by many names and claimed by many grandmothers, they are all the same, delicious thing: a savory, addictive, shortbread cookie. The key to any short dough - that distinctive tender sandy crumbly texture - is the high fat-to-flour ratio, and this version not only relies on butter but also counts on the delicious fats that come from sesame seeds, block Cheddar and even the oil from the pecans. For a remarkable distinction among the many, many versions of these to be found, toast them until just passing golden into brown, and see how that in itself sets these apart.

Categories     easy, quick, snack, crackers and chips, appetizer

Time 50m

Yield About 6 dozen crackers

Number Of Ingredients 10

1 1/3 cups all-purpose flour
1 cup loosely packed grated Cabot Farms Vermont white Cheddar (about 3 ounces)
2/3 cup loosely packed grated pecorino Romano cheese (about 1 ounce)
1 teaspoon kosher salt
1/2 teaspoon cayenne
8 tablespoons (1 stick) cold unsalted butter, cut into 1/4-inch cubes
1 large egg yolk
1/3 cup pecans, finely chopped (about 3 tablespoons)
3 tablespoons untoasted white sesame seeds
2 tablespoons ice water

Steps:

  • Add the flour, both cheeses, salt and cayenne to the bowl of a food processor, and pulse until combined.
  • Scatter the cold butter chunks on top, and pulse again to form coarse crumbs.
  • Add egg yolk, pecans and seeds, and pulse to combine thoroughly, yielding a coarse grainy meal.
  • Transfer mixture to a large stainless-steel bowl. Sprinkle the ice water on top, and knead briefly to bring the dough together, as you would a pie dough.
  • Divide the dough into thirds, and roll each into a neat, 8-inch-long cylinder that is about the width of a silver dollar. Wrap each log in plastic wrap, and twist the ends tightly in opposite directions, forming a perfect and compact torchon. Refrigerate until well chilled and completely firm; overnight is ideal.
  • Heat the oven to 375. Line two large baking sheets with parchment paper or nonstick baking mats. Unwrap the dough, discarding plastic wrap, and slice the logs into thin coins, each about the width of a pencil.
  • Arrange the coins in neat rows on the prepared sheets, making sure they're not quite touching one another. This dough won't expand or flatten after baking.
  • Bake until golden at their centers and just starting to toast at their edges, about 20 minutes. Check them midway through baking, and rotate sheets if your oven bakes unevenly.
  • Transfer the baking sheets to wire racks to cool. Once they are fully cooled, transfer coins to an airtight container, where they will keep for up to 3 weeks.

Bleu cheese is a type of cheese that is known for its distinctively strong, pungent flavor. The texture of the cheese is crumbly and it is often used as a topping, dressing, or spread for various dishes. Bleu cheese cracker spread, in particular, is a popular recipe that is enjoyed by many. It is easy to make, requires few ingredients, and can be served as an appetizer or snack. However, to make a truly addictive bleu cheese cracker spread, there are several tips that can be followed.

Tip 1: Choose the right type of bleu cheese

The type of bleu cheese used in the recipe can greatly affect the taste and texture of the spread. When selecting a bleu cheese, it is important to look for a high-quality product that is fresh and has a strong flavor. Some popular types of bleu cheese include Roquefort, Gorgonzola, and Stilton. It is also recommended to avoid pre-crumbled bleu cheese as it can have a drier texture and may not melt well in the spread. Instead, opt for a block of bleu cheese and crumble it yourself.

Tip 2: Add complementary flavors

While bleu cheese is already flavorful on its own, adding complementary flavors can enhance the taste of the spread. Some popular ingredients that go well with bleu cheese include garlic, herbs such as thyme and rosemary, and lemon juice or zest. Incorporating these flavors can balance out the strong taste of the bleu cheese and create a more dynamic spread.

Tip 3: Experiment with different textures

The texture of the bleu cheese cracker spread is an important factor that can affect the overall enjoyment of the dish. Experimenting with different textures can create a more interesting and satisfying experience. For example, adding chopped nuts such as walnuts or pecans can add a crunchy texture to the spread. Alternatively, mixing in cream cheese or sour cream can create a smoother and creamier texture.

Tip 4: Use quality crackers

The crackers used to serve the bleu cheese spread are just as important as the spread itself. High-quality crackers can enhance the flavor and texture of the spread, while low-quality crackers can detract from its taste. It is recommended to choose crackers that are sturdy and have a neutral flavor, such as water crackers, crostini, or baguette slices. Avoid using crackers that are too thick or flavored, as they can overpower the taste of the spread.

Tip 5: Serve with complementary foods

In addition to crackers, serving the bleu cheese spread with complementary foods can create a more well-rounded experience. Some popular pairings with bleu cheese include sliced pears, apples, or figs as well as cured meats such as prosciutto or salami. Serving the spread with these foods can add additional flavors and textures to the dish, creating a more complex and enjoyable experience for the palate.

Conclusion

Bleu cheese cracker spread is a simple and delicious recipe that can be enjoyed by many. To make a truly addictive bleu cheese cracker spread, it is important to choose the right type of bleu cheese, add complementary flavors, experiment with different textures, use quality crackers, and serve with complementary foods. By following these tips, it is easy to create a bleu cheese cracker spread that is sure to impress and delight anyone who tries it.
