2 acorn squash, halved and seeded
1 pinch ground cinnamon
¼ cup butter
2 teaspoons salt
1 pinch brown sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Place acorn squash, cut-side down, on a baking sheet.
  • Bake in the preheated oven for 30 minutes. Flip squash and sprinkle cinnamon into the center and dot with butter. Continue baking until flesh can be easily pierced with a fork, about 30 minutes more.

1 acorn squash - halved lengthwise, seeded, and cut into 3/4-inch slices
2 tablespoons olive oil
½ teaspoon salt
⅛ teaspoon ground black pepper
2 tablespoons honey
1 teaspoon ground cinnamon
1 ounce crumbled blue cheese
2 green onions, thinly sliced
12 smoked almonds, chopped

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Cover a baking sheet with aluminum foil and spray with nonstick cooking spray.

1 14-ounce container extra-firm tofu, drained and crumbled
2 tablespoons extra-virgin olive oil
1 orange or yellow bell pepper, chopped
4 scallions, sliced
Kosher salt and freshly ground pepper
3 cloves garlic, finely chopped
1 tablespoon chili powder
2 teaspoons ground cumin
3/4 cup corn-and-black bean salsa
1 1/2 cups shredded pepper jack cheese (about 6 ounces)
Shredded lettuce, fresh cilantro and/or diced tomato, for topping

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil; set aside. Place the acorn squash in a microwave-safe bowl with 1/4 cup water. Loosely cover with plastic wrap and microwave until fork-tender, about 15 minutes.
  • Meanwhile, spread the tofu on a large plate and press out the excess moisture with paper towels; set aside. Heat the olive oil in a large skillet over medium-high heat. 2 teaspoons olive oil
1/2 teaspoon black pepper, divided
1 cup black beans, drained and rinsed
1/2 cup pine nuts, toasted
6 ounces tomatoes, coarsely chopped

1 teaspoon ground cumin
1/2 cup shredded monterey jack cheese (may sub Vegan cheese for a great Vegan meal)

Steps:

1 acorn squash, cut in 1/2
3 Tbsp butter, melted
1 Tbsp tex mex sweet salt ***see note
3 Tbsp lemon honey jam (or regular honey)

Steps:

  • 1. Cut squash in half--Don't remove the seeds or the membrane. Bake face-up in a preheated 425 oven for 45 minutes.
  • 2. Remove, let cool. Remove seeds and membrane. Melt butter in microwave. Drizzle over squash halves.
  • 3. Melt the Lemon Honey Jam in the microwave and spoon over squash halves.
  • 4. NOTE: I got the Tex-Mex Sweet Salt as a gift for Christmas. It's a great mix of cinnamon, with cayenne, orange peel, sea salt, ginger, cloves and more.
