2 eggplants
2 teaspoons dried mint
2 tomatoes, peeled, seeded and chopped
1 garlic clove, chopped
pepper, to taste
12 ounces goat cheese

Steps:

  • Preheat the grill. Place the eggplants in a grill pan, then grill them, turning regularly until the skin is charred and blistered.
  • Preheat the oven to 400°F.
  • When the eggplants are cool enough to handle, peel them and chop the flesh.

I love eggplant and I decided to make a layered eggplant side dish without the breading that one typically sees with this type of presentation. I use a square baking dish for this treat.

2 tablespoons butter (or margarine)
1 eggplant (medium sized)
8 ounces marinara sauce
8 ounces mozzarella cheese (fresh)
1 tablespoon parmesan cheese

Steps:

  • Slice eggplant cross wise into desired thickness. (I cut it in 1/8 am inch slices / not critical).
  • Place slices on paper towels and sprinkle with salt to help remove the extra moisture for about 15 minutes.
  • Use more paper towels and press each slice to remove moisture.
  • In a skillet, saute eggplant slices for 2-3 minutes on each side.
  • Add a layer of sauteed eggplant slices to the baking dish, and
  • place a dollop of marinara sauce over each slice.
  • Then top each slice with a tablespoon worth of mozzarella.
  • Repeat these steps until the whole eggplant is sauteed and layered in the dish.
  • Sprinkle with Parmesan cheese and bake in a 350 degree F oven for 15 minutes.

2 lbs eggplants (long slender type)
olive oil (for frying)
5 tablespoons of chopped fresh basil
5 garlic cloves, minced
1 lb of ripe tomatoes, diced
1/2 lb feta cheese, crumbled
sea salt
fresh ground black pepper

Steps:

  • Wash the eggplants and remove stems. Cut lengthwise into 1/2 inch slices. Fry lightly (until soft and gently browned) in 1/4 inch of oil.
  • Preheat the oven to 355°F (180°C).
  • Layer the eggplant in the bottom of a baking dish.
