1-1/4 pounds tomatoes (5 large), cut into 1/2-inch slices, seeded
1/2 cup thinly sliced green onions
2 tablespoons minced fresh basil
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup reduced-fat mayonnaise
1/2 cup shredded reduced-fat cheddar cheese
2 bacon strips, cooked and crumbled
2 tablespoons shredded Parmesan cheese

Steps:

  • Unroll crust into a 9-in. pie plate; flute edge. Refrigerate 30 minutes. Preheat oven to 400°., Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is golden brown, 10-15 minutes. 2 c bisquick
1/2 c milk
3 large tomatoes
1/2 c grated sharp cheddar cheese
3 basil leaves-chopped
1 c mayonnaise (i use dukes for this recipe)
1/2 fresh lemon juice
kosher salt and fresh ground pepper to taste

Steps:

  • 1. Mix Bisquick and milk together for pie crust. Press into a 9" pie pan.
  • 2. Peel and core tomatoes.
  • 3. Slice tomatoes and drain on parchment paper. Once drained, place tomato slices in the pie shell. The pie will puff so don't fill your pie shell too full.
  • 4. Mix mayo, shredded ches, salt, pepper, basil, and lemon juice together.
  • 5. Spread mayo mixture over tomatoes. Use real mayo, not Miracle Whip. Dukes brand works well.
  • 6. Sprinkle with additional salt and pepper if you'd like.
  • 7. Bake at 350 degrees.
