Time 35m

Yield 2

Number Of Ingredients 13

1 tablespoon olive oil
12 ounces sweet bulk Italian sausage
1 stalk celery, diced
½ yellow onion, chopped
¾ cup dry elbow macaroni
¼ cup tomato paste
3 cups chicken broth, or more as needed, divided
Salt and freshly ground black pepper to taste
¼ teaspoon crushed red pepper flakes, or to taste
¼ teaspoon dried oregano
3 cups chopped Swiss chard
1 (15 ounce) can cannellini (white kidney) beans, drained
¼ cup grated Parmigiano-Reggiano cheese, plus additional for serving, or to taste

Steps:

  • Heat oil in a skillet over medium-high heat. Brown sausage while breaking it into small pieces, about 5 minutes. Reduce heat to medium. Add diced celery and chopped onion. Cook until onions are translucent, 4 to 5 minutes. Add dry pasta. Cook and stir 2 minutes.
  • Stir in tomato paste until evenly distributed, 2 to 3 minutes. Add 3 cups broth. Raise heat to high and bring to a simmer. Add salt, black pepper, pepper flakes, and oregano. When soup comes to a boil, reduce heat to medium and let it simmer about 5 minutes, stirring often. Check soup consistency and add more broth, if needed.
  • Place chopped chard in a bowl. Cover with cold water and rinse the leaves; any grit will fall to the bottom of the bowl. Transfer chard to colander to drain briefly; add to soup. Cook and stir until leaves wilt, 2 to 3 minutes.
  • Stir in white beans; continue cooking and stirring until pasta is perfectly cooked, another 4 or 5 minutes. Remove from heat and stir in grated cheese. Serve topped with grated cheese, if desired.

In this article, we’ll share some valuable tips that you can use to make the Abel & Cole sausage pasta fagioli with spinach recipe. What is Abel & Cole Sausage Pasta Fagioli with Spinach Recipe? Before we dive into the tips, let's first talk about what the Abel & Cole sausage pasta fagioli with spinach recipe is all about. This is a classic Italian dish that combines pasta, beans, sausage, and spinach for a hearty and flavorful meal. The dish is particularly popular in the Tuscany region of Italy, where it is often referred to as pasta e fagioli. In Italy, it is typically made with cannellini beans and small pasta such as ditalini or elbow macaroni. However, in the Abel & Cole recipe, the beans are replaced with red lentils, which makes the dish lighter and also adds some nutritional benefits. Now that we know what the dish is, let’s move on to the tips that can help you make it perfectly. 1. Choose Quality Ingredients The key to making any dish great is to use quality ingredients. When it comes to this recipe, make sure to use good quality sausages, preferably from a local butcher. This will ensure that the sausages are fresh and flavorful. Similarly, use good quality pasta, preferably a short pasta such as fusilli or rotini, which will hold the sauce and beans well. Also, use fresh spinach and good quality vegetable stock, which will add depth and flavor to the dish. 2. Sauté the Sausages Well Before adding the sausages to the dish, make sure to sauté them well in a pan. This will help to render out the fat and also get a nice brown crust on the sausages. You can cut the sausages into small pieces or crumble them, depending on your preference. 3. Toast the Garlic Garlic is an essential ingredient in this dish and adds a lot of flavor. To get the most out of the garlic, make sure to toast it a little before adding it to the dish. This will help to bring out the natural oils in the garlic and give it a nutty flavor. 4. Cook the Pasta and Beans Separately To ensure that the pasta and beans cook evenly, it’s best to cook them separately. Cook the pasta in a large pot of salted water until al dente. Drain and set aside. Similarly, cook the beans or lentils in a separate pot until tender. 5. Use the Pasta Water One of the secrets to making a great pasta dish is to use the pasta water. This starchy water can add body and texture to the sauce and also helps to bind everything together. Make sure to save a cup of pasta water before draining the pasta. 6. Add Herbs and Spices To add depth and complexity to the dish, it’s a good idea to add some herbs and spices. In the Abel & Cole recipe, they use bay leaves, rosemary, and thyme to add flavor. You can also add some red pepper flakes for a little heat. 7. Don’t Overcook the Spinach Spinach is a delicate green and can easily become mushy if overcooked. To avoid this, make sure to add the spinach to the dish towards the end of the cooking process. This will ensure that the spinach retains its texture and bright green color. 8. Serve with Crusty Bread This dish is hearty and filling and goes well with some crusty bread on the side. You can toast the bread and rub it with a garlic clove for some added flavor. The bread is perfect for dipping into the sauce and also helps to soak up any extra liquid. Conclusion The Abel & Cole sausage pasta fagioli with spinach recipe is a delicious and hearty dish that is perfect for cold winter nights. By following the tips mentioned in this article, you can make this dish perfectly and impress your family and friends. Remember to choose quality ingredients, sauté the sausages well, toast the garlic, cook the pasta and beans separately, use the pasta water, add herbs and spices, don’t overcook the spinach, and serve with crusty bread.
