1 medium baking potato
1 teaspoon olive oil
½ teaspoon salt
2 teaspoons butter
1 pinch freshly ground black pepper
¼ cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Scrub the potato, and pierce the skin several times with a knife or fork. Rub the skin with olive oil, then with salt.
  • Place the potato in the preheated oven, and bake for 90 minutes, or until slightly soft and golden brown. Slice the potato down the center, and serve with butter and black pepper. Sprinkle shredded Cheddar cheese over the top, if desired.

4 lb. large Yukon gold potato es (about 12), cut into 1/4 inch-thick strips

  • Heat oven to 400ºF.
  • Cover rimmed baking sheet with foil; spray with cooking spray. Mix oil and dry rub until blended.
  • Spread potatoes onto prepared baking sheet. Drizzle with oil mixture; toss to evenly coat potatoes. Spread to form even layer on baking sheet.

TWICE BAKED POTATOES



Twice Baked Potatoes image

These potatoes still taste buttery and rich but are much lighter than the full fat version by using a small amount of butter to saute sweet leeks and some chive flavored reduced fat cream cheese. This is a great side dish for any time of year and for special gatherings, like Thanksgiving. Simply double the recipe, or halve the potatoes after the first bake and the dish serves more.

4 medium russet potatoes, about 6 ounces each
1 teaspoon vegetable oil
Kosher salt
1 tablespoon unsalted butter
2 leeks, (white and light green parts), halved lengthwise and thinly sliced
Freshly ground black pepper
2 cloves garlic, minced
2 teaspoons freshly chopped thyme
4 ounces 1/3-less fat chive-and-onion flavored cream cheese
1/2 cup skim milk
1 tablespoon chopped fresh parsley, plus extra for garnish

Steps:

  • Preheat the oven to 375 degrees F. Rub the potatoes with the oil and season generously with kosher salt. Place on a baking sheet and bake until the potatoes are very tender on the inside and crisp on the outside, about 1 hour, 15 minutes. Let stand 5 minutes.
  • Meanwhile, heat the butter in a large nonstick skillet set over medium heat. Add the leeks and season with salt and pepper, cook until soft, about 6 to 8 minutes. Add the garlic and thyme and cook until fragrant, 1 minute. Cool slightly.
  • Cut lengthwise, opening down the center of each potato, stopping about 1-inch from each end. Scoop out the insides into a large bowl, keeping about 1/4-inch shell of potato next to the skin.
  • Add the leek mixture, cream cheese and milk to the potato and mash well with a fork until combined but slightly chunky. Stir in the chopped parsley. Spoon the filling back into the potato shells, about 1/2 cup of filling for each potato and place back on the baking sheet. Bake until heated through and the tops are lightly browned, 20 to 25 minutes. Garnish with extra parsley.

From the Good Eats episode: This Spud's for you. I was looking for information on how long to bake potatoes in the oven and came across this basic recipe from Alton Brown. Perfect potatoes every time! I wanted to include it here so I can add it to my Cookbook.

1 -4 russet potato
canola oil (or any oil you prefer, a lighter type works best)
kosher salt (regular salt works too if you don't have Kosher Salt)

Steps:

  • Heat oven to 350 degrees.
  • Wash potatoes thoroughly with a stiff brush and cold running water.
  • Dry, then using a standard fork poke 8 to 12 deep holes all over the potatoes.
  • Place in a bowl and coat lightly with oil.
  • Sprinkle with salt
  • Place potatoes directly on top rack in middle of oven. Place a baking sheet on the lower rack to catch any drippings.
  • Bake 1 hour or until skin feels crisp and inside feels soft.
  • NOTE: If you're cooking more than 4 potatoes, you'll need to extend the cooking time by up to 15 minutes.

  • Preheat oven to 450.
  • Scrub potatoes under running water; dry them, and rub the skin of each with the oil and a little salt. Pierce the skin of each in three or four places with the tines of a fork.
