FRENCH LENTILS WITH CHARD

French Lentils with Chard image

This hearty one-dish vegetarian meal is meant to appeal to families that include a mix of meat-eaters and vegetarians. A great pot of beans or lentils, even when you add to it a bunch of chard from the farmers' market, costs no more than $4 to make, and it feeds four to six people. This combo of lentils and greens is inspired by a classic preparation for the tasty French Le Puy green lentils that traditionally includes salt pork and/or bacon and sausage. For this vegetarian version, I don't insist on Le Puy lentils, although I highly recommend them. Meat eaters in the family might want to accompany this with sausage, cooked separately or with the lentils. I recommend topping the lentils with goat cheese or feta.

Time 1h10m

Yield Serves 4 to 6

Number Of Ingredients 11

1 tablespoon extra virgin olive oil
1 onion, chopped
2 carrots, chopped
1 celery stalk, chopped
4 large garlic cloves, minced
1 pound lentils, preferably imported green lentils, washed and picked over 2 1/4 cups
A bouquet garni made with 2 bay leaves, a Parmesan rind and a sprig or two each of thyme and parsley
Salt
freshly ground pepper
1 bunch Swiss chard (3/4 to 1 pound), stemmed, washed and coarsely chopped
Freshly grated Parmesan, crumbled goat cheese or feta for serving

Steps:

  • Heat the olive oil over medium-high heat in a heavy soup pot or Dutch oven. Add the onion and cook, stirring, until it begins to soften, about 3 to 5 minutes. Add the carrot and celery and cook, stirring, until all the vegetables are tender, about 5 minutes. Add the garlic and continue to cook, stirring, until fragrant, 30 seconds to a minute. Add the lentils, 2 quarts water and bouquet garni. Bring to a boil, reduce the heat, and simmer 40 minutes. Add salt and pepper to taste. Remove the bouquet garni.
  • Stir the chard into the simmering lentils. Cook another 10 minutes or so, until the lentils and greens are tender. The chard should be tender but still bright. Taste, adjust seasonings and serve, passing the cheese at the table for sprinkling. Alternatively, transfer to an oiled baking dish, top with rounds of goat cheese, crumbled feta or grated Parmesan, and heat through in a medium oven.

A SOUP OF LENTILS, BACON, AND CHARD

A Soup of Lentils, Bacon, and Chard image

Categories     Steam     Bacon     Lentil     Chard     Simmer     Boil

Yield enough for 4

Number Of Ingredients 11

a large onion
olive oil
garlic - 3 or 4 cloves
unsmoked bacon or pancetta - a good handful, chopped
flat-leaf parsley - a small bunch
chard - a large bunch
Puy or Castelluccio lentils - 1 1/4 cups (250g)
stock or, at a push, water - 4 cups (a liter)
a bay leaf - optional
juice of a lemon
mint - a small bunch

Steps:

  • Peel the onion and chop it finely, then let it soften in a deep pan over medium to low heat with a little olive oil. Peel the garlic, slice it thinly, then add to the onion with the chopped bacon or pancetta. Chop the parsley and stir it in.
  • Wash the chard thoroughly, set aside four beautiful stalks and their leaves, then separate the remaining stalks and leaves. Chop the stalks coarsely and set the leaves aside. Add the chopped chard stalks to the onion and bacon and continue cooking,
  • Wash the lentils thoroughly, then stir them into the onion and bacon. Pour over the stock or water and bring to a boil, skimming off any froth that comes to the surface. You can add a bay leaf or two if you like. Decrease the heat so that the lentils simmer merrily, then almost cover the pot and simmer until they are tender, but far from collapse-about thirty minutes, depending on your lentils.
  • Tear the reserved chard leaves up a bit. Stir them into the soup. Steam the reserved whole leaves and stalks until tender.
  • Season the soup with salt, black pepper, lemon juice, and the mint leaves, tasting as you go. Ladle the hot soup into warm bowls, add the steamed chard, and serve with more lemon and mint for those who want it.

A Soupy Delight: Lentils, Bacon, and Chard

There's nothing quite like a good soup on a chilly day, and if you're looking for a comforting and hearty option, you can't go wrong with a lentil-based recipe. Lentils are packed with protein, fiber, and other essential nutrients, making them a healthy and filling addition to any meal. When combined with bacon and chard, you get a soup that's not only delicious but also nutritious, so let's explore what makes this recipe stand out.

The Goodness of Lentils

Lentils are legumes that have been cultivated for thousands of years all around the world. They come in various colors and sizes, from green and brown to red and yellow, and are easy to cook and versatile enough to use in a wide range of dishes. Lentils are a fantastic source of plant-based protein, which is essential for building and repairing tissues, muscles, and bones. They also contain complex carbohydrates, fiber, iron, folate, and potassium, among other nutrients, that promote heart health, digestive health, and overall well-being.

The Magic of Bacon

Bacon is a type of cured meat that's made from pork belly or back cuts. It's often used as a flavoring in many dishes due to its salty, smoky taste and crispy texture. However, bacon is also high in fat and sodium, so it's not the healthiest ingredient to use in large amounts. Nonetheless, a few strips of bacon can add a depth of flavor to soups, stews, and sauces that's hard to match. In this recipe, the bacon is fried until crisp and then used as a topping for the soup, which gives each bowl a crunchy and savory touch.

The Versatility of Chard

Chard is a leafy green vegetable that's related to beets and spinach. It's also known as Swiss chard, silver beet, or rainbow chard, depending on the variety. Chard has a mild and slightly bitter taste that pairs well with savory and sweet flavors alike. Its leaves and stems are great sources of vitamins A, C, and K, as well as minerals like magnesium, calcium, and potassium. Chard is a versatile ingredient that can be used in salads, sandwiches, stir-fries, and soups, and adds a colorful and nutrient-dense element to any dish.

The Harmony of Ingredients

When you combine lentils, bacon, and chard in a soup, you get a balance of flavors, textures, and nutrients that's hard to resist. The lentils provide a creamy and earthy base that's loaded with protein and fiber, while the bacon adds a crispy and salty contrast that elevates the dish. The chard brings a fresh and slightly bitter note that complements the other ingredients and adds a pop of color to the soup. Moreover, this recipe is easy to customize and can be adjusted to suit your taste preferences and dietary needs. You can use different types of lentils, swap bacon for turkey or chicken, and add other vegetables or spices as desired.

The Recipe

While this content doesn't include a recipe, you can easily find one online or in a cookbook that suits your needs. Look for a lentil soup recipe that includes bacon and chard, and follow the steps closely to get the best results. You'll typically need ingredients such as lentils, bacon, chard, onion, garlic, chicken or vegetable broth, tomatoes, carrots, celery, and herbs like thyme or parsley. The process usually involves sautéing the bacon and vegetables, adding the liquids and lentils, and simmering everything until the lentils are tender and the flavors have melded together. The chard is added near the end and cooked briefly until wilted. You can serve the soup with crusty bread, crackers, or a dollop of sour cream or yogurt, and enjoy a warm and satisfying meal that's both healthy and delicious.

In Conclusion

A soup of lentils, bacon, and chard is a perfect example of how you can combine simple and nutritious ingredients to create a flavorful and hearty dish. Lentils are rich in protein and fiber, bacon adds a touch of smokiness and crunch, and chard brings a fresh and vibrant element to the soup. Making a soup of lentils, bacon, and chard can be a healthy and delicious addition to any meal plan. Lentils, being a great source of protein and fiber, make this soup a hearty and filling choice. Bacon brings in a rich smoky flavor to the soup, while chard adds a punch of green nutrition. Below are some valuable tips to help you make the best soup of lentils bacon and chard.

1. Choose the right lentils

There are many types of lentils available in the market, but for this soup recipe, it is best to use brown lentils. Brown lentils have a mild, earthy flavor that complements the other ingredients in the soup. They also hold their shape well when cooked, making them an excellent choice for soups.

2. Use a good quality bacon

The flavor of the bacon is a crucial element in this soup recipe. Therefore, it is vital to use good quality bacon. Look for thick-cut, smoked bacon, which has a more intense smoky flavor. Avoid using lean or turkey bacon as they won't render enough fat or flavor to give the soup a rich taste.

3. Preparing chard

Chard is a nutrient-dense vegetable, and it provides an excellent addition to this soup recipe. Before adding chard to the soup, remove the leaves from the stems, wash them thoroughly, and chop them into bite-size pieces. Chard stalks can also be sliced and added to the soup, as they have a similar texture as celery.

4. The importance of broth

The broth you choose is a crucial factor in making this soup. Use vegetable broth if you want to keep it vegetarian, or use chicken broth if you want to add more depth of flavor. You could also use a combination of both for a more complex flavor. Make sure to use low-sodium broth, or else, the soup might end up being too salty.

5. Garlic and onion

Garlic and onion are the foundation of flavor used in many soup recipes. This lentil, bacon, and chard soup are no different. Use fresh garlic and onion to add depth of flavor to the soup. Garlic can be chopped or minced, while onions can be diced or sliced.

6. Adding tomatoes

Tomatoes are acidic and provide a tangy flavor to this soup. Use canned crushed tomatoes, or if using fresh ones, blanch them to remove the skin before adding to the soup. Tomatoes also contain lycopene, an antioxidant that can help improve heart health.

7. Add other vegetables

To make this soup even more nutritious, add your favorite vegetables like carrots, celery, and bell pepper. These also add more depth of flavor and make the soup more filling. If using vegetables other than chard, make sure to chop them into bite-size pieces.

8. The importance of seasoning

Seasoning is key to any recipe, and this soup is no different. Salt, black pepper, and paprika bring out the flavor of the soup, and add some heat to it. Adjust the seasoning to your taste, but be careful not to add too much salt, especially if using bacon, which can be quite salty.
In conclusion
Making a soup of lentils, bacon, and chard is a healthy and delicious way to get more nutrients into your diet. Carefully selecting the right ingredients, including brown lentils, good quality bacon, and fresh chard, is essential in making this soup. Choosing a flavorful broth, garlic, and onion, and adding other vegetables will enhance its flavor and nutritional value. Finally, adjust the seasoning to your taste to create a satisfying bowl of soup.
