1 onion, chopped
2 (1 ounce) packets taco seasoning mix
2 (1 ounce) packets ranch dressing mix
2 (16 ounce) cans shoepeg corn
2 (10 ounce) cans diced tomatoes with green chile peppers (such as RO*TEL®)
1 (15 ounce) can red kidney beans
1 (15 ounce) can black beans
1 (15 ounce) can pinto beans
1 (14.5 ounce) can chicken broth
1 (14.5 ounce) can diced tomatoes

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef and onion in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Stir taco seasoning mix and ranch dressing mix into the ground beef; add shoepeg corn, diced tomatoes with green chile peppers, red kidney beans, black beans, pinto beans, chicken broth, and diced tomatoes. 3 chicken breast, cooked and diced
1 large onion, chopped
2 pkg ranch salad dressing mix
2 pkg taco seasoning mix
1 can(s) yellow corn, drained
2 to 3 c chicken broth
15 oz can black beans
15 oz can pinto beans
15 oz can kidney beans
14 1/2 oz can whole tomatoes
10 oz can tomatoes with green chiles
cheese, shredded (fat free for healthier version)
sour cream (fat free for healthier version)
green onions

Steps:

  • 1. Boil chicken with 3 chicken bouillon cubes and onion. Drain reserving 2 or 3 cups of broth. Chop chicken, add salad dressing mix, taco seasoning mix, corn, reserved broth, black beans, pinto beans, kidney beans, tomatoes and green chiles; mix well. Bring to boil, reduce heat. Simmer, covered for 2 hours.

2 lb ground beef (or ground turkey)
1 medium onion, chopped
1 can(s) Rotel tomatoes, do not drain
1 can(s) diced tomatoes, do not drain
1 can(s) black beans, drain and rinse well in colander
1 can(s) pinto beans, drain well
2 can(s) Shoepeg corn, drain (you can substitute a can of cream style corn)
2-3 c chicken or beef broth
1 pkg taco seasoning mix
1 pkg dry Ranch Dressing mix
minced garlic, about a teaspoon, or to taste
Shredded cheese, sour cream, sliced chilies, or whatever toppings you prefer

Steps:

  • 1. Saute meat, onion, and garlic, until meat is no longer pink and onion and garlic are translucent; drain well. Place in large stock pot. Add all other ingredients. Simmer 2 hours on stove top or in crockpot for several hours on low. Add more chicken broth, beef broth or water if needed.
