THE BEST MEATLOAF I'VE EVER MADE

The Best Meatloaf I've Ever Made image

When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

MEAT LOAF

Meat Loaf image

Nothing says classic comfort like Ina Garten's Meatloaf recipe from Barefoot Contessa on Food Network.

Provided by Ina Garten

Categories     main-dish

Time 1h25m

Yield 6 servings

Number Of Ingredients 12

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

Time 1h10m

Yield 2 meatloaves, 6-8 serving(s)

Number Of Ingredients 9

2 lbs ground meat, I like to use a mix of ground turkey and ground beef
3/4 cup breadcrumbs, plain
1 medium onion, chopped fine
1/2 cup ketchup
2 eggs
3 tablespoons onion soup mix (one packet)
1/2 cup ketchup
3 tablespoons brown sugar
2 teaspoons mustard

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, combine meat, bread crumbs, onion, ketchup, eggs, and onion soup mix.
  • Use your hands to squish all of the ingredients together until all of the ingredients are well combined.
  • Form the meat mixture into two "loaves." At this point, I usually wrap one of the loaves in press and seal freezer wrap and toss it in the freezer. However, if you have a larger family, you'll probably want to cook both.
  • Put the two loaves in a 13x9 baking pan and bake for 45 minutes.
  • While the loaves are baking, mix up the sauce by stirring the ketchup, the brown sugar, and the mustard together until smooth. Set aside.
  • After 45 minutes, take the meat loaves out and spread the sauce over the tops.
  • Placed the sauced loaves back in the oven and bake for another 15 minutes or until cooked through.
  • Let the meat loaves cool for 5 - 10 minutes before cutting them.
  • Enjoy!
  • P.S. To cook a frozen meatloaf, take the frozen meat loaf out the day before you want to cook it and let it thaw in the refrigerator. Cook as stated above.
  • P.S.S. This meatloaf pairs wonderfully with my super yummy corn casserole!

Meatloaf is a favorite dish of many people worldwide, and for good reason! It is a versatile dish that can be customized to suit personal preferences and tastes. Meatloaf is a great meal to prepare for any occasion or when you want to cook up something special for your family or friends. A well-made meatloaf is packed with flavor, juicy, and super delicious. In this article, we will be discussing some valuable tips to help you make a really tasty meatloaf recipe.

Choose the Right Meat:

Choosing the right meat for your meatloaf recipe is crucial. The majority of people use ground beef for their meatloaf recipe, but other meats like ground pork, chicken, or turkey can also be used. It is essential to find high-quality meat that has a good fat content. A meatloaf that is made from lean meat tends to become dry and less tasty. An ideal ratio of fat to meat is about 80:20, where 80% of the meat is lean, and 20% is fat.

Don't Overwork the Meat:

One of the most common mistakes people make when making meatloaf is overworking the meat. Overworking the meat causes the proteins to break down, resulting in a dense and tough meatloaf. To avoid this, mix the ingredients together as little as possible. Just combine the ingredients until they are mixed without pressing or squishing the meat too much. A gentle mix is enough to combine the ingredients and will result in a juicy, tender meatloaf.

Add Vegetables:

Adding vegetables to your meatloaf mixture can provide an additional depth of flavor and nutrition. Vegetables like onions, garlic, carrots, and celery are commonly used in meatloaf recipes. These vegetables can be sauteed or finely chopped and added to the meat mixture before baking. The vegetables also act as a binding agent, helping to keep the meatloaf moist and falling apart. Adding vegetables to your meatloaf recipe also makes it a healthier option.

Use Breadcrumbs:

Breadcrumbs are a crucial ingredient in the meat mixture as they act as a binding agent, helping to hold the meatloaf together. Breadcrumbs also add substance and texture to the meat mixture. It is important to use fresh breadcrumbs as stale ones don't absorb moisture well and can result in a dry and tough meatloaf. You can either grate bread slices or pulse them in a food processor to create fresh breadcrumbs.

Seasoning:

To make a really tasty meatloaf, you need to get the seasoning right. A meatloaf requires a generous amount of salt, pepper, and herbs. It is important to taste the mixture before forming it into a loaf and adjust the seasoning as required. You can use any herbs of your choice like parsley, thyme, rosemary, or any other seasoning that you like. Different herbs will add depth of flavor to your meatloaf.

Cooking Techniques:

The cooking technique you use on your meatloaf can have a significant impact on the taste and texture of the dish. Baking is the most common technique used for meatloaf. However, there are other techniques like grilling, smoking, and slow cooking that can also be used. If baking, put your meatloaf in the center of the oven to make sure it cooks evenly.

Basting:

Basting your meatloaf while it cooks is an excellent way of keeping it moist and adding flavor. As the meatloaf cooks, it loses moisture, and basting helps to replace the moisture. You can use a combination of ketchup, Worcestershire sauce, or BBQ sauce to baste your meatloaf. Apply a generous amount of the sauce mixture to the top of the meatloaf about 20-30 minutes before it is done cooking.

Resting and Serving:

After taking your meatloaf out of the oven, let it rest for 10-15 minutes before slicing and serving. This allows the meatloaf to rest, letting the juices settle, and making it easier to slice. Slicing the meatloaf while it is hot can cause it to fall apart as it is tender at that moment. This is a crucial step for making a perfect meatloaf.
Conclusion:
Meatloaf is a classic and popular dish that everyone loves. Following some valuable tips while making meatloaf can make a significant impact on its taste, texture, and overall cooking experience. These tips include choosing the right meat, not overworking the meat, adding vegetables, using breadcrumbs, seasoning, cooking techniques, basting, and resting and serving. These tips will help you make a really tasty meatloaf recipe that everyone will love.
