3 cups chopped yellow onions (2 large onions)
2 tablespoons good olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon fresh thyme leaves (1/2 teaspoon dried)
1/3 cup Worcestershire sauce
3/4 cup chicken stock
1 1/2 teaspoons tomato paste
5 pounds ground turkey breast
1 1/2 cups plain dry bread crumbs
3 extra-large eggs, beaten
3/4 cup ketchup

Steps:

  • Preheat oven to 325 degrees F.
  • In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.
  • Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) Serve hot, at room temperature, or cold in a sandwich.

MEATLOAF:
1/2 white onion, chopped
1 carrot, peeled, chopped
1/2 red bell pepper, chopped
1/2 cup arugula
2 cloves garlic, minced
2 (20-ounce) packages JENNIE-O® Lean Ground Turkey
1 cup gluten free breadcrumbs
1 teaspoon ground thyme
1 teaspoon chili powder
1 teaspoon freshly ground pepper
1 teaspoon salt
1/2 cup plain unsweetened almond milk
1 egg
olive oil spray
GLAZE:
1/2 cup ketchup
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce
1 teaspoon cumin
1 teaspoon honey
2 tablespoons chopped flat leaf parsley

Steps:

  • Heat oven to 350°F. In food processor, combine onion, carrot, red bell pepper, arugula and garlic. Pulse to chopped. In large bowl, combine ground turkey and onion mixture. Using hands, work ingredients in gently. In medium bowl, combine bread crumbs, thyme, chili powder, pepper and salt. Mix well. In small bowl, combine almond milk and egg, whisk to combine. Sprinkle dry mixture over meat and gently mix in, add the wet mixture and continue to gently mix until just combined. Do not over mix. Spray large foil or parchment lined baking sheet with olive oil spray and shape meat into a 6-inch by 11-inch x 1 ½-inch rectangle in the middle of the pan. For glaze, in a small bowl mix together ketchup, Worcestershire sauce, hot sauce, cumin and honey and brush over meatloaf top and sides. Bake 1 hour 30 minutes and until 165°F. as measured by a meat thermometer in the center. Always cook to well-done. Let stand at room temperature for 5 minutes before slicing. Sprinkle with freshly chopped parsley.

1/4 cup finely chopped green bell pepper

1/4 cup shredded reduced-fat sharp Cheddar cheese (1 oz)
1/4 cup Progresso™ Italian style bread crumbs
1 1/2 teaspoons Italian seasoning
1 teaspoon ketchup
1/2 teaspoon salt
1/2 teaspoon pepper
1 egg, slightly beaten
1 1/4 lb ground turkey breast
1/2 cup ketchup
1 tablespoon packed light brown sugar
1 teaspoon yellow mustard

Steps:

  • Heat oven to 350°F. Spray 8x4-inch loaf pan with cooking spray.
  • In 12-inch nonstick skillet, heat oil over medium-high heat. Cook onion, bell pepper and garlic in oil 3 minutes, stirring occasionally. Cool.
  • In large bowl, mix cheese, bread crumbs, Italian seasoning, 1 teaspoon ketchup, the salt, pepper, egg and onion mixture. Crumble turkey over mixture; stir just until blended. Pack mixture into loaf pan.
  • Bake 35 minutes. In small bowl, mix 1/2 cup ketchup, the brown sugar and mustard. Spread over meatloaf. Bake 5 minutes longer or until meat thermometer inserted in center reads 160°F. Let stand 10 minutes before cutting.

It's really a delicious recipe with a ingredient I never thought of using to hold the meatloaf together along with the regular egg whites. I use Recipe #236938 for my rice.

2 lbs lean ground turkey
1 cup onion, diced
1/2 cup celery, diced
1 tablespoon minced garlic
1 cup white rice, cooked
2 egg whites
1 cup tomato sauce (no sodium added)
1/2 teaspoon oregano
1/2 teaspoon thyme (I use basil )
1/2 teaspoon black pepper
1/4 cup freshly chopped fresh parsley (I use 1Tbs. Parsley flakes)
1/4 cup no-salt-added tomato sauce

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, mix together ground turkey, onion, celery, and minced garlic.
  • Add in the spices, oregano,thyme,black pepper, and parsely. Mix up well.
  • Blend in the cooked rice, egg whites and 1 cup of tomato sauce.
  • Place in a lightly greased loaf pan. (May need 2 loaf pans depending on how big your loaf pan is).

After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

¾ cup crushed buttery round crackers
½ cup milk
1 small onion, chopped
1 egg

1 small zucchini, finely chopped
1/4 cup finely chopped onion
4 cloves garlic, finely chopped
2 eggs, beaten
1 pound ground chicken

1 1/2 cups Progresso™ panko crispy bread crumbs
1/4 cup grated Parmesan cheese
1/4 cup ketchup
Salt
Freshly ground black pepper
1/2 cup ketchup

Steps:

  • Heat oven to 350°F. Heat olive oil in a sauté pan over medium high heat. Add the zucchini, onions, and garlic. Sprinkle with salt and pepper. Sauté for about 5 minutes or until onions are softened. Set the mixture aside to cool.
