SALMON BAKED IN CORN HUSK image

4 whole ears corn
4 5-6 salmon filets- skin removed
pepper to taste
1/4 cup olive oil
1/4 cup white wine
1 med leek, white part only chopped
4 fresh sprigs thyme
2 tbsp unsalted butter
1/2 red onion diced
1 small red pepper, diced
1 tbsp capers drained

Steps:

  • Preheat oven to 350 Carefully peel back the corn husk and snap the cob at the base, leaving the husk the silk and any attached. Discard ant blemishes. Season the filets. Fold back a few leaves of the corn husks and tusk in a filet. Drizzle with a little olive oil and white wine. Srinkle with leeks. Garnish the salmon with a sprig of thyme. Tie husk with strips of the corn husk or twine. Place on baking sheet and bake for 20 minutes. While it is baking melt butter over medium heat and saute red onion till translucent (3-4 min.) Add red pepper and cook till soft and then add corn and capers and cook til corn heated through approx 4 to 5. To serve fold back the top pf the corn husk to display the salmon inside. Spoon the red onion saute over or longside the salmon and serve immediately.
