My family really doesn't like meatloaf much, but this recipe is one they like! The A.1 sauce gives it a little zing and it has a good texture.

2 lbs ground beef
2 tablespoons A.1. Original Sauce
1 cup dry breadcrumbs
2 eggs
3/4 cup milk
3 tablespoons parsley flakes
1 small onion, minced
1/4 cup carrot, shredded
1 (8 ounce) can tomato sauce
2 tablespoons A.1. Original Sauce

Steps:

  • For the sauce, simply mix the two ingredients together.
  • Mix all meatloaf ingredients together with half of the sauce mixture. Blend well. Pat meatloaf into a 9x5x3" loaf pan, or shape into a loaf in a shallow baking pan. Spread remaining sauce mixture over the top of the meatloaf. Bake in a 400 degree oven for one hour.

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

MOMS MEATLOAF RECIPE

1 pound Ground beef
2 Eggs
1/2 Onions, diced
1/2 cup Bread Crumbs
1/2 cup Ketchup, divided
2 tablespoons Worcestershire, divided
Salt and Pepper
Optional: Garlic Powder
Optional: Parsley for garnish

Steps:

  • Preheat oven to 375 degrees
  • In a small bowl mix together 1/4 cup of the ketchup and 1 tablespoon Worcestershire sauce, mix together and set aside for later basting.
  • Throw 1 pound of ground beef 80/20 fat content into a big bowl. Break up into chunks and salt and pepper. Just give the salt shaker a couple of good shakes, and a little more with the pepper. If you like garlic shake in a bit of garlic powder, NOT garlic salt.
  • Dice up ½ a medium onion and toss into the bowl.
  • Squirt in ketchup, probably about ¼ cup to start.
  • Shake in Worcestershire sauce until it just smells right, about 1 tablespoon. It's a personal preference with the amount. If you really have no idea how much to use then give the bottle a couple of good shakes to start.
  • In a small bowl, lightly beat two eggs and mix into the ground beef mixture
  • Pour in a ½ cup of plain bread crumbs.
  • Use a wooden spoon to get everything mixed up nicely. Compress into a big ball.
  • Line a baking sheet with parchment paper and plop the meatloaf onto the lined baking sheet and mold the meatloaf into a rectangle.
  • Put the meatloaf into the oven and bake for about 15 minutes then baste with the ketchup Worcestershire sauce. Continue cooking for a total of 60 minutes. Use a thermometer to check the internal temperature reaches 165 degrees to ensure it's fully cooked.
  • I like a little crispy to the sides so I broil at the end for a couple of minutes. Watch it so you don't burn the top.

2 lbs ground turkey
8 slices bacon
1 egg
1/2 medium green pepper
1/2 medium sweet pepper (Red, Yellow, Or orange)
1/2 medium onion
1 large carrot
1/2 cup A.1. Original Sauce
1 cup breadcrumbs (add gradually as needed, you may need less depending on consistency)
3 teaspoons onion powder
3 teaspoons garlic powder
1 1/2 teaspoons poultry seasoning
2 teaspoons salt
2 teaspoons pepper
2 teaspoons paprika
1/2 cup A.1. Original Sauce
1 spray cooking spray

Steps:

  • Chop onion, sweet pepper, and carrot. I leave them fairly large but you can finely dice if you choose.
  • Cut bacon into cubes, about the same size as your cut vegetables.
  • In large bowl,.
  • Add meat, bacon, vegetables, egg, spices, and 1/2 cup A1 sauce. Mix these ingredients together then add breadcrumbs until meatloaf will hold together when shaped.
  • Spray large loaf pan (can use 9x13 if you don't have a loaf pan). Form meatloaf and cover. Cook covered 45 minutes at 350*.
  • Take cover off meatloaf, drain excess juice (lots of juice will be made from bacon and vegetables). Cook uncovered an additional 30 minutes.
  • Brush remaining A.1. on meatloaf and finish cooking last 15 minutes. Allow to sit for 10 minutes after removing from the oven before cooking so juices can set.
  • Cut and serve.

This is actually a recipe of my grandmother's that I have sized down. Her recipe feeds about a dozen people, but now that I am living on my own, the recipe makes way more food than is necessary for the amount of people I need to serve. So I tried sizing it down, and it worked, because there wasn't anything left for leftover. (This recipe can easily be doubled, tripled, or even quadrupled to meet your families needs.)

1 lb ground beef, thawed
1 egg
1/3 cup oatmeal
1 cup chopped onion (about one large onion)
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/4 teaspoon lemon pepper (regular pepper will also work)
1/4 teaspoon kosher salt (regular salt will also work, kosher is what we prefer)
1/4 cup ketchup

Steps:

  • Preheat oven to 350 degrees.
  • In medium mixing bowl, break beef into small chunks.
  • Add egg, oatmeal, onion, spices, and ketchup.
  • Mix until well blended (you can mix with your hands, but if you prefer not to use that method, a large mixing spoon or rubber spatula will also work just fine).
  • Smooth mixture into regular sized bread pan.
  • If you like having a sauce on top, smooth some extra ketchup over the top of the uncooked meatloaf (this step is optional).
  • Place in oven for 35 to 40 minutes, or until meat is cooked all the way through.

1/2 cup ketchup
1/4 A.1. Original Sauce
2 -3 tablespoons steak seasoning
3/4 Cheez-It crackers
3/4 cup ketchup, use for topping
1/4 A.1. Original Sauce, use for topping

Steps:

  • Pre-heat oven to 350 degrees. Mix all ingredient in a med bowl. Place in an ungreased 13X9 baking dish. Cover and place in oven for 1 hour (internal temp 155-160 degrees).

  • Mix ketchup and A1 in small mixing bowl. Spoon on top of hot meatloaf and place back in oven for 15 minutes. Let meatloaf rest atleast 10 minutes before serving.

When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

1 tablespoon butter
¼ cup minced onion
2 cloves garlic, minced
1 ½ teaspoons salt
1 ½ teaspoons freshly ground black pepper
2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 ½ tablespoons sour cream
1 ½ tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
¼ cup milk
3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
  • In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
  • Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
  • In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.
