This 8 Can Taco Soup is an easy weeknight meal that also makes for a great freezer meal! Ground beef, seasoning and 8 cans found in your pantry make up this simple and delicious soup!

1 lb low fat ground beef
1 (16 ounce) can pinto beans + liquid
1 (15 ounce) can corn + liquid
1 (15 ounce) can black beans + liquid
1 (14.5 ounce) can French style green beans + liquid
1 (15 ounce) can chili beans + liquid
1 (14 ounce) can stewed tomatoes + liquid
1 (10 ounce) can mild Rotel tomatoes + liquid
1 (4 ounce) can green chilies + liquid
1 packet taco seasoning mix or 2 Tablespoons homemade
1 (1 ounce) packet ranch dressing mix
2 cup beef broth
Sour Cream (optional)
Cheese (optional)
corn chips (optional)

Steps:

  • In a large dutch oven or pot, brown ground beef until cooked through.
  • If using a higher fat ground beef, drain now and return to pot.
  • Add taco seasoning & ranch seasonings to ground beef and mix well.
  • Add pinto beans, corn, black beans, green beans, stewed tomatoes, Ro*tel tomatoes & green chilies to ground beef. Mix well.
  • Add beef broth and mix again.
  • Bring to a boil, then lower the heat to a simmer and cook for 30 minutes, allowing all the flavors to meld.
  • Remove from oven and serve immediately with sour cream, cheese & corn chips.

2 14.5 oz cans diced tomatoes
1 15 oz can tomato sauce
1 15.25 oz can black beans, undrained
1 15.5 oz can dark red kidney beans, undrained
1 15.5 oz can pinto beans, undrained
1 15 oz can corn, undrained
1 4 oz can diced green chiles, undrained
1 oz package taco seasoning

Steps:

  • Pour all of the opened cans with liquids into a large 4-5 quart pot. Turn the heat to medium high and bring the soup to a low boil.
  • Cover and turn the heat down to low, allow to cook for 15 minutes before serving.

2 lbs ground beef (80/20 mix)
2 15 Ounce cans of diced tomatoes
1 10 can Mexicorn (drained)
1 15 oz Can Chili Beans
1 15 oz Can Black Beans (drained)
1 15 oz Can Navy Beans (drained)
1 15 oz Can Light Red Kidney Beans
1 15 oz Can Rotel Tomatoes and Diced Green Chilis
1 32 oz box of Beef Broth
1 packet of medium taco seasoning
1 packet of Hidden Valley Ranch Seasoning.
1 tsp kosher salt
1 tsp black ground pepper
1 tsp chili powder
1 Tbs garlic powder
1 Tbs onion powder

Steps:

  • Brown the ground beef in the bottom of a large stock pot over medium heat until the meat is no longer pink.
  • Open the cans and drain according to the ingredient list. Add the cans to the stock pot. Add the beef broth, taco seasoning, ranch packet, salt, pepper and chili pepper, garlic and onion powder. .
  • Heat over medium to medium high heat until heated through.
  • Serve hot with shredded cheddar cheese, sour cream, scallions and corn chips (instead of crackers).

1 (10 ounce) can green enchilada sauce
1 (14 ounce) can chicken broth
1 (1 ounce) packet taco seasoning mix

Steps:

  • Spray slow cooker with nonstick cooking spray.

This is a quick 'n easy soup to put together. My husband and I especially enjoyed this soup the next day, as the seasonings seem to meld together in the soup a bit more. We also enjoyed the soup along with grilled cheese sandwiches.

3/4 c diced onion
2 pkg Old El Paso 25% Less Sodium Taco Seasoning Mix (1 oz. each)
1 pkg Hidden Valley Original Ranch Salad Dressing & Seasoning Mix (1 oz.)
2 can(s) beef broth (14.5 oz. each)
1 can(s) diced tomatoes with basil, garlic & oregano (14.5 oz.)
1 can(s) (mild) diced tomatoes & green chilies (10 oz.)
1 can(s) Bush's Light Red Kidney Beans, drained & rinsed (16 oz.)
1 can(s) Bush's Pinto Beans, drained & rinsed (16 oz.)
1 can(s) black beans, drained & rinsed (15 oz.)
1 can(s) whole kernel corn, drained (15.25 oz.)

Steps:

  • 1. In a large kettle or Dutch oven, add the ground beef and onion. Cook the ground beef till it browns, and the onion is tender. Drain off any excess grease.
  • 2. Add the cooked beef back to kettle, then sprinkle the packets of taco seasoning mix and ranch dressing mix, over the meat. Stir well to incorporate the seasonings into the meat.
  • 3. Add the beef broth and canned tomatoes.
  • 4. Add remaining ingredients into the kettle; stir, and simmer the soup (uncovered) for about an hour. Stir the soup occasionally while it's simmering.
  • 5. Ladle soup into bowls and serve.
