This is probably #2 of my Top Ten all time favorites. The recipe won Harold Freeman of Phoenix $150 in a newspaper contest probably 20 years ago. He should have easily won $500, as I've made many life long friends equally addicted to Harold's tipsy bread. I usually make it in mini foil pans for gifts. Don't skip the special cheese spread, as It really adds the lagniappe! Try it soon, and maybe we can each chip in another $5 to bring Harold his just reward for a great recipe!

1 cup pitted dates, chopped small dice
1/4 cup tequila
1/4 cup orange-flavored liqueur (such as)
triple sec or Cointreau liqueur
1/2 cup warm water
1 teaspoon lemon zest
1 teaspoon lime zest (use a microplane grater if you have one)
2/3 cup brown sugar, firmly packed
2 tablespoons shortening
1 large egg
2 cups all-purpose flour, sifted
1 teaspoon baking soda
1 teaspoon salt
2/3 cup pecans, chopped
1 (8 ounce) package cream cheese, softened
1/4 cup butter, softened
2 teaspoons powdered sugar
1 tablespoon orange-flavored liqueur
1 tablespoon lime zest

Steps:

  • In a small bowl, combine dates, tequila, orange liqueur, water, lemon and lime zest; set aside. In large mixer bowl, beat sugar, shortening and egg until fluffy. In another bowl, combine flour, soda and salt. Add to creamed mixture alternately with date mixture, using low to medium speed. Stir in pecans.
  • Turn into greased 9" x 5" by 2-1/2" loaf pan. Bake at 350 degrees for 50-60 minutes, or until toothpick inserted in center comes out clean. Or, bake 3 or 4 mini loaf pans 30-35 minutes. Turn out on wire rack to cool. Slice thin and serve with cream cheese spread.
  • CREAM CHEESE SPREAD:.
  • In small mixer bowl, beat cream cheese, butter and sugar until smooth. Stir in liqueur and lime zest. Makes 1-1/4 cups.
  • Bread freezes well.

Ice cubes
3 ounces tequila
2 ounces freshly squeezed lime juice
1 ounce Simple Syrup, recipe follows
1/2 to 1 teaspoon orange liqueur
1 tablespoon Lime-salt-sugar, recipe follows
1 cup sugar
1 cup water
Zest of one lime
2 tablespoons kosher salt
2 tablespoons sugar

Steps:

  • Fill a cocktail shaker with ice. Add tequila, lime juice, Simple Syrup and orange liqueur. Cover and shake until mixed and chilled, about 30 seconds. (In general, the drink is ready by the time the shaker mists up.) Place Lime-salt-sugar on a plate. Press the rim of a chilled rocks or wine glass into the mixture to rim the edge. Strain margarita into the glass.
  • Put the sugar and water in a small saucepan. Cook over low heat, stirring, until the sugar dissolves. (Alternatively, heat in the microwave.) Store in a sealed container in the refrigerator for up to 1 month.
  • Blend together lime, salt and sugar in a small blender or mini food chopper.

THE PERFECT MARGARITA



The Perfect Margarita image

Mastering the margarita requires a certain amount of practice, but once you dial-in your perfect ratio, it's a really easy cocktail to replicate. The classic recipe is 3 parts tequila, 2 parts triple sec, and 1 part freshly squeezed lime juice, and you should probably start off pretty close to that, but my personal favorite proportions are 4-3-2.

1 lime wedge
1 pinch coarse sea salt to taste
1 large ice cube
ice
2 fluid ounces white tequila
1 ½ fluid ounces triple sec
1 fluid ounce freshly squeezed lime juice
1 slice lime

Steps:

  • Moisten the rim of a glass with a lime wedge. Sprinkle salt onto a plate. Lightly dip the moistened rim into the salt. Place a large ice cube in the glass and freeze the prepared glass until ready to serve.
  • Fill a cocktail shaker with fresh ice. Add tequila, triple sec, and lime juice. Cover and shake vigorously until outside of the shaker has frosted. Strain into the prepared glass and garnish with a slice of lime.
