From Australian BH&G Diabetic Living to give that boring salad some zing and flavour. These are all 1 portion dressings and would take about 2 minutes each (have put prep time for making 1)

2 tablespoons fat-free mayonnaise (97% fat free)
1/2 teaspoon lemon zest (finely grated)
1 tablespoon lemon juice (freshly squeezed)
2 teaspoons red wine vinegar
1 tablespoon boiling water
black pepper (freshly ground to taste)
1 teaspoon chives (freshly chopped)
1 teaspoon orange zest (finely grated)
1 tablespoon orange juice (freshly squeezed)
1 tablespoon lemon juice (freshly squeezed)
1/2 teaspoon extra virgin olive oil
1 teaspoon coarse grain mustard (wholegrain mustard specified)
1 tablespoon parsley (finely chopped)
black pepper (freshly ground to taste)
1 tablespoon lime juice (freshly squeezed)
1 tablespoon apple juice (100% juice)
2 teaspoons soy sauce (salt-reduced)
1 teaspoon sesame oil
2 teaspoons sesame seeds
1/2 teaspoon coriander (fresh chopped)
1/4 teaspoon chili (red fresh or to taste)
1 tablespoon apple juice (100% juice)
1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard
black pepper (freshly ground to taste)

Steps:

  • CREAMY DRESSING - mix first 6 ingredients in a small bowl and then stir in chives.
  • CITRUS DRESSING - whisk all ingredients till combined in a small bowl.
  • ASIAN DRESSING - whisk together lime juice, apple juice, salt-reduced soy sauce and sesame oil and then stir in fresh coriander and chilli.
  • APPLE AND MUSTARD DRESSING - whisk together apple juice, balsamic vinegar and Dijon mustard in a small bowl and then season with freshly ground black pepper.

1/4 cup white-wine vinegar
1 tablespoon Dijon mustard
1/4 teaspoon salt
1/2 teaspoon pepper
Pinch of sugar
3/4 cup extra-virgin olive oil

Steps:

  • In a small bowl, whisk together vinegar, mustard, salt, pepper, and a pinch of sugar.
  • Slowly add oil, whisking until emulsified, or shake the ingredients in a jar, or whirl them in a blender.
