2 lbs ground beef
2 tablespoons salad oil
1 large green pepper, diced
2 (15 ounce) cans tomato sauce
1 large onion, chopped
2 (6 ounce) cans tomato paste
1 garlic clove, crushed
2 cups hot water
1 teaspoon salt
1 1/2 teaspoons sugar
1/2 teaspoon oregano
1/4 teaspoon cayenne pepper

Steps:

  • Heat oil in a large skillet.
  • Brown meat, onion, garlic, and green pepper.
  • Add tomato sauce, paste, water and seasonings.
  • Heat until bubbling, lower heat and simmer 30 minutes.
  • Stir occasionally.
  • Its ok to let simmer beyond 30 minutes until ready to serve.
  • Left over portions freeze well, thaw and reheat as needed.

Coarse salt and ground pepper
1 1/2 pounds sweet or spicy Italian sausage
1 teaspoon extra-virgin olive oil
1 medium yellow onion, diced small
2 cans (28 ounces each) whole peeled tomatoes
1 pound spaghetti

Steps:

  • Set a large pot of salted water to boil. Remove sausage meat from casings and roll into 24 balls. In a large saucepan or Dutch oven, heat oil over medium-high. Add sausage and cook until browned all over, about 5 minutes. Using a slotted spoon, transfer meatballs to a plate. Add onion to pan and cook, stirring frequently, until softened, about 5 minutes. Add tomatoes, breaking them up as you go, and season with salt and pepper; bring sauce to a boil and cook 5 minutes.
  • Add pasta to water and cook according to package instructions. Meanwhile, add meatballs to sauce and rapidly simmer until sauce is slightly thickened, about 7 minutes. Reserve 8 meatballs and 1 1/2 cups sauce to make Spinach and Meatball Calzones at another time. Drain pasta, then toss with remaining sauce and meatballs.

30-Minute Pasta Sauce image

This is my original pasta sauce. It's different than those that are simmered all day, but it's better than jarred sauce, and it's quick. You can also play around with the seasonings to suit your own taste. DO NOT - please - cut the amount of olive oil. Trust me on this. It sounds like a lot, but it's not, really, when you add all the pasta.

1/4 cup olive oil
1 pinch red pepper flakes
1 pinch fennel seed (optional)
6 -10 garlic cloves, minced
1 (28 ounce) can tomatoes, with the juice, chopped (I do it with a pair of scissors)
2 teaspoons dried basil
2 teaspoons dried marjoram
1 teaspoon dried oregano
1 pinch salt

Steps:

  • Heat the oil in a large skillet.
  • Add the pepper, fennel and garlic and saute a couple of minutes just until the garlic is golden (not brown!).
  • Add the tomatoes with their juice, the herbs and salt.
  • Stir to combine, bring to a good simmer, turn the heat to low and let cook, uncovered, for about 20 minutes.
  • Mix with cooked pasta and serve.
  • Note 1- add as little or much garlic as you like- we like a lot.
  • The same with the other ingredients- add the herbs you want in the amounts you want.
  • You can saute 1/2 of an onion with the garlic if you like it.
  • Note 2- You can substitute fresh herbs, but if you do double the measurement, and add them during the last few minutes of cooking.
  • Note 3- add some raw, peeled shrimp to the sauce for the last five minutes for shrimp pasta.

3 tablespoons olive oil
⅓ cup onion, diced
2 cloves garlic, minced
5 tablespoons tomato paste
28 oz crushed tomato
1 teaspoon dried oregano
1 teaspoon dried basil
salt, to taste
pepper, to taste

Steps:

  • In a pot over medium heat, add the olive oil, onion, garlic, and tomato paste. Cook for 5-7 minutes or until the tomato paste has caramelized.
  • Add the canned tomatoes, dried oregano, and dried basil. Reduce heat to a simmer and cook for 15-20 minutes or until the desired thickness.
  • Add salt and pepper to taste.
  • Enjoy!
