1 tablespoon butter, divided
1 cup diced red potatoes
1 ½ cups chopped onion
6 eggs, beaten
salt and ground black pepper to taste
8 (7 inch) whole wheat tortillas
1 pound cooked and crumbled turkey bacon
1 ½ cups shredded low-fat Cheddar cheese
1 large avocado, thinly sliced
½ cup salsa, or as needed
½ cup reduced-fat sour cream, or as needed

Steps:

  • Melt 1 1/2 teaspoons butter in a skillet over medium heat. Cook and stir potatoes in hot butter until tender, 10 to 15 minutes. Transfer potatoes to a bowl.
  • Melt remaining butter in the same skillet over medium-high heat. Saute onion in hot butter until onion is soft and translucent, 5 to 10 minutes. Transfer onion to a bowl.
  • Beat eggs, salt, and pepper together in a bowl. Reduce heat under skillet to medium. Cook and stir eggs in hot skillet until set, 3 to 5 minutes; transfer to a plate.
  • Spread tortillas out onto a work surface. Spoon potatoes, onion, eggs, bacon, Cheddar cheese, avocado, salsa, and sour cream in a line across the middle of a tortilla. Fold opposing edges of each tortilla to overlap the filling. Roll 1 of the opposing edges around the filling into a burrito.

Bacon, Bean, Eggs, Taco Tots Burritos image

The breakfast burrito is basically the best breakfast foods all wrapped in one tortilla. Eggs are layered with refried beans, pico and cheese. Then, instead of hashbrowns, tots with taco spice. Why should breakfast be limited to one meal a day when it's this good?

1 bag extra-crispy tater tots, Ore-Ida preferred brand
2 teaspoons ground cumin
1 teaspoon chili powder
1/2 teaspoon granulated garlic
1/2 teaspoon granulated onion
Salt and pepper
12 slices bacon
1 small white or red onion
2 to 3 jalapeno peppers
2 cloves garlic
5 plum or 4 vine tomatoes
2 to 3 scallions
2 limes
A handful of cilantro leaves, chopped
Neutral oil, such as peanut or safflower
1 can pinto beans, drained
1/2 pound Pepper Jack, cheddar or Monterey Jack, or a 4 ounce block of 2 of the 3
12 eggs
Hot sauce, chipotle Tabasco preferred brand, or other hot sauce
6 large flour tortillas, 10 to 12 inches

Steps:

  • Preheat oven to 425 degrees F.
  • Gather your ingredients.
  • Line a sheet pan with parchment and arrange the tots in a single layer. Place tray in oven and bake 20 to 25 minutes; give the pan a shake once.
  • Combine about 1 teaspoon cumin, chili powder, granulated garlic and onion, about 1 teaspoon salt and 1/2 teaspoon black pepper in small dish. When tots come out of oven toss with spices.
  • Arrange bacon on slotted pan or rack lined baking sheet lined with foil. Bake bacon 15 to 18 minutes on rack below tots until brown and crispy.
  • Peel and finely chop the onion. Seed and finely chop the jalapeno peppers. Peel garlic. Set a third of the onion, the pepper and garlic aside for the beans.
  • Seed and small dice the tomatoes. Finely chop the scallions, whites and greens.
  • Place onions and peppers in a bowl; add salt and juice of 1 lime. Grate in garlic, then add tomatoes, scallions and cilantro; toss to combine.
  • Heat a small skillet over medium heat. Add oil, 2 turns of the pan, then reserved veg. Sweat while you make beans.
  • Add beans to the food processor with a little water. Add about 1 teaspoon of ground cumin and juice of 1 lime.Transfer beans to the skillet and heat through.
  • Remove bacon, cool to handle then chop. Grate cheese on large holes of box grater.
  • Crack eggs into bowl and whisk up with salt, pepper and about 2 teaspoons of chipotle hot sauce.
  • Char tortillas over flame on gas burner or in a dry pan over high heat, stainless or cast iron, blistering them about 30 seconds to 1 minute on each side.
  • Heat a large nonstick skillet over medium-high heat and add oil, 2 turns of the pan. Scramble the eggs to desired doneness.
  • Build burritos: beans, eggs, cheese, chopped bacon, taco tots, pico de gallo. Tuck in sides and wrap and roll the burritos tightly. Cut each in half to serve.

Betty Crocker's Great Grilling cookbook shares a recipe! Brushing the folded burritos with barbecue sauce before grilling is a bit unusual, but the wonderful flavor is well worth it!

1 boneless beef top round steak, about 1 inch thick (1 lb)
1 can (5 1/2 oz) spicy eight-vegetable juice
2 tablespoons lime juice
1 tablespoon vegetable oil
1/4 teaspoon salt
1 medium orange, peeled, chopped
1/2 cup chopped peeled jicama
1/4 cup chopped tomatillas
1/4 cup chopped red onion
2 tablespoons chopped fresh cilantro or parsley
1 tablespoon lime juice
1 teaspoon honey
1/4 teaspoon salt
1 small serrano chile, seeded, finely chopped (1 tablespoon)
6 flour tortillas (10 inches in diameter)
1 cup shredded Cheddar cheese (4 oz)
1 medium onion, chopped (1/2 cup)
1 medium tomato, chopped (3/4 cup)
1 medium avocado, chopped
3/4 cup spicy barbecue sauce

Steps:

  • With fork, pierce beef several times on both sides. In shallow nonmetal dish or resealable food-storage plastic bag, mix all remaining beef ingredients. Add beef; turn to coat with marinade. Cover dish or seal bag; refrigerate, turning beef occasionally, at least 8 hours but no longer than 24 hours.
  • In small nonmetal bowl, mix all salsa ingredients until blended. Cover; refrigerate at least 2 hours to blend flavors.
  • Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat. Wrap tortillas in heavy-duty foil.
  • Remove beef from marinade; discard marinade. Place beef on grill rack. Cover and grill beef over medium heat 25 to 30 minutes for medium doneness, turning once. Add packet of tortillas for last 5 minutes of grilling, turning occasionally, until warm.
  • Cut beef across grain into thin slices. Place beef, cheese, onion, tomato and avocado on center of each tortilla. Fold one end of tortilla up about 1 inch over filling; fold right and left sides over folded end, overlapping. Fold remaining end down. Brush burritos with barbecue sauce.
  • Grill burritos uncovered over medium heat 5 minutes, turning once, until hot. Serve burritos with salsa.
