Forget the cheese, these golden and sweet quesadillas are filled with a chocolate hazelnut and fruit surprise.

Four 8-inch flour tortillas, cut in half
1 large egg, beaten
1/2 cup chocolate hazelnut spread
Eight 1/4-inch-thick slices of fresh fruit such as banana, strawberry or plum or 8 marshmallows
3 tablespoons unsalted butter, melted
Confectioners' sugar, for dusting

Steps:

  • Lay 1 tortilla half on a clean work surface with the rounded side closest to you. Brush the edges of the tortilla with egg. Place 1 tablespoon of chocolate hazelnut spread in the center of the tortilla and place a piece of fruit or marshmallow on top. Fold one side of the tortilla half way over the filling so that the corner is in the 6-o'clock position, press to seal. Fold the other side over the filling so that the two edges overlap slightly and the corner is also in the 6-o'clock position, press to seal. The quesadilla will look like a triangle-shaped hand pie. Repeat with the remaining tortilla halves and fillings.
  • Melt half the butter in a large nonstick skillet over medium heat and cook half of the quesadillas until deep golden brown, about 2 minutes per side. Transfer to a paper towel-lined plate. Wipe the skillet clean and repeat with remaining butter and quesadillas. Dust with confectioners' sugar before serving.

10 (10 inch) flour tortillas
2 teaspoons melted butter or 2 teaspoons melted margarine
confectioners' sugar or cinnamon sugar
1 (21 ounce) can Comstock brand pie filling (any variety) or 1 (21 ounce) can Wilderness brand pie filling (any variety)
1 (12 ounce) container soft low-fat cream cheese (optional)

Steps:

  • Lightly brush one side of a tortilla with butter.
  • Spread the tortilla with a thin layer of cream cheese, if desired.
  • Spread about 1/4 cup pie filling on one-half of the tortilla, then fold the tortilla in half, pressing slightly to seal the edges.
  • In a large skillet on medium-low heat, cook the tortilla until lightly browned (about 4 min.); turn and brown the other side.
  • To serve, dust with confectioners' sugar or cinnamon-sugar.
  • Each quesadilla may be served whole or cut into 3-4 wedges before serving.
  • Serve hot.

One of my favorite quick, breakfast treats. You can make it gluten-free by using corn tortillas! Top this delicious quesadilla with honey, maple syrup, powdered sugar, or whipped topping. Serve as either breakfast or dessert!

1 Honeycrisp apple, diced
2 tablespoons light corn syrup
1 tablespoon honey
1 tablespoon maple syrup
1 pinch ground cinnamon, or more to taste
1 pinch brown sugar
2 11-inch flour tortillas

Steps:

  • Heat a large skillet over medium-low heat. Cook apple, corn syrup, honey, maple syrup, ground cinnamon, and brown sugar in hot skillet, stirring every few minutes, until apples are slightly softened and caramelized, 8 to 10 minutes. Transfer apple mixture to a bowl.
  • Place 1 tortilla in the same skillet over medium-low heat; spread apple mixture on top of tortilla. Top with remaining tortilla. Cook until the bottom tortilla is golden brown, 1 to 3 minutes. Carefully flip the quesadilla and cook until the other tortilla is golden brown, 1 to 3 minutes more.

2 granny smith apples, thinly sliced
1/2 cup dried sweetened cranberries
1 teaspoon cinnamon sugar
1 teaspoon lemon juice
7 tablespoons butter or 7 tablespoons margarine, divided
6 10-inch flour tortillas
1 (8 ounce) package cream cheese, softened
1/4 cup powdered sugar
1/2 cup caramel sauce
1/2 cup chopped pecans, toasted

Steps:

  • In a mixing bowl, add the first 4 ingredients; toss to combine.
  • In a big non-stick skillet, melt 1 tablespoon butter over medium heat.
  • Add in apple mixture and saute/stir for 5 minutes or until tender.
  • Transfer apple mixture to a plate or bowl and set aside.
  • Clean skillet.
  • Spread 1 tablespoon butter evenly on 1 side of each tortilla.
  • In a small bowl, mix together the cream cheese and powdered sugar until smooth.
  • Spread the cream cheese mixture even on the non-buttered side of each tortilla.
  • Top with apple mixture.
  • Fold each tortilla in half, over apple mixture.
  • In a heated skillet over medium heat, cook tortillas for about 2 minutes on each side or until golden brown.
  • Drizzle caramel sauce over each quesadilla and sprinkle with pecans.

Your kids can prepare this simple, easy and tasty snack. They sort of remind us of pancakes. We liked the blueberries heated up - tasted like a hot blueberry jam. Cinnamon sugar sprinkled on top is delicious! A treat the whole family will enjoy.

1 package whole wheat Flatout "fold-it" bread
1 tub "mixed berry" spreadable cream cheese, 8 oz
1 or 2 cups fresh blueberries
2 Tbsp cinnamon
1/2 c granulated sugar

Steps:

  • 1. Wash blueberries; drain/dry/set aside. Any fresh berry or fresh fruit will work... you may have to slice/dice larger fruit; not too thick in order for even heating, without burning outside of quesadilla.
  • 2. Spread layer of cream cheese over one entire side of the flatbread. Pita pockets, tortillas, etc. are great to use. Also, any spreadable cream cheese flavor [plain or otherwise] works!
  • 3. Place however many berries you want onto one half of the flatbread.
  • 4. Then "fold-it" and slightly press down w/palm of hand [or wide spatula]. The girls really loved this whole part of the recipe!
  • 5. Add a little canola baking spray on the griddle [or pan that you use]. Grill on pre-heated/medium heated stove-top cast iron griddle [or whatever you use for making quesadillas/grilled cheese sandwiches] until cheese has melted around the berries/fruit or until outside is golden/a slight bit crisp.
  • 6. After quesadillas have been grilled, place them on a platter and lightly sprinkle a small amount of cinnamon/sugar mixture over the top side .... or as w/my little gals, they wanted to dip into a very small amount on a plate of their own.
