JEN'S HEARTY THREE MEAT CHILI
You have never had chili like this before! I am always being asked to make it for football games or just anytime friends and family get together! It is a compilation of many recipes I have tried over the years. Betcha' you've never had chili like this before!

Steps:
- Cook and stir sausage in a large skillet over medium heat until browned. Drain; place sausage in a pot large enough to hold all ingredients. In same skillet, cook and stir onion with ground beef over medium heat until beef is browned and onions are tender; drain and add to the large pot.
- In same skillet, cook and stir stew beef over medium heat until browned. Without draining, pour stew beef into the large pot.
- Pour tomatoes, beer, and water into the pot with meats. Stir in chili powder, red pepper, white pepper, sugar, and cinnamon. Season to taste with salt and black pepper. Simmer until stew beef is very tender, at least 2 hours, stirring occasionally and adding more water as needed. If you prefer a thicker chili, thicken as needed with tomato paste. If using kidney beans, add them 10 minutes before serving, just in time to heat through.

CHILE LOVERS SPICY THREE MEAT CHILI
A unique chili using a mixture of meats. It is spicy and loaded with flavor. The name of this recipe used to be Chili Colorado, but I challenged my new friend, Chef #383557, to make and rename the recipe for me after he pointed out that it was not a typical Chili Colorado recipe. (Please see his delightful review. I changed the measurement of the stew meat because if his review and because I also prefer more of this meat in my chili. I also like his idea for marinading the stew meat.) It was all in good fun and I am pleased with the new name. Thank you Bruce! Thank you also too all the reviewers of this recipe.

Steps:
- Marinate stew meat with jalapeno juice, onion powder, and garlic powder.
- Refrigerate 24 hours.
- Brown hamburger with onion, garlic, bell pepper and 1/2 tablespoon cumin.
- Brown sausage.
- Remove stew meat from marinade and brown.
- Mix all the meat together.
- Add tomato sauce, tomatoes, drained beans, jalapenos, chili powder, 3 tablespoons cumin, cayenne, oregano, green chilies, salt, sugar, and Tabasco.
- Cook on medium heat for 2 hours.

- In a soup kettle or Dutch oven, cook the beef, pork and sausage over medium heat until no longer pink; drain. Add the onions, celery, green pepper and garlic; cook for 8-10 minutes or until vegetables are tender. , Stir in the remaining ingredients. Bring to a boil. - Heat a Dutch oven over medium heat. Season the chuck roast with salt and pepper. Add the oil to the pot and sear the chuck roast until browned, 7 to 8 minutes. Remove from the pot. Add the ground beef and chorizo and cook until browned, 7 to 8 minutes; drain off excess fat if necessary. Add the garlic, onion and jalapeno and cook for 2 minutes, then return the chuck roast back to the pot with the beer, tomatoes and tomato paste.
- Using scissors, snip the guajillo chiles into small strips. Add to the pot and bring to a boil. Mix in the chili powder, cumin, oregano, bay leaves and 2 tablespoons salt. Reduce to a simmer and simmer for 1 1/2 hours.
- Remove the bay leaves. Add the beans to the pot. Combine the masa and 1/2 cup water in a small bowl, then stir the mixture into the pot. Continue to simmer until the chili thickens slightly, an additional 15 minutes.
- Serve with fixins: diced tomatoes, cubed avocado, grated Cheddar, sour cream, lime wedges and cilantro leaves.
3-ALARM SOUTHWESTERN SAUSAGE & BEEF CHILI
Well there isn't much of a story besides I love chili and love to experiment with new recipes and making things up on my own, and this is what I came up with. My child loved it and I hope you love it as much as we did!

- 1. First, you're going to need a large pot or a stock pot, and a frying pan for this recipe.
- 2. Brown the sausage and the beef in the frying pan, either together or separately, making sure it isn't clumping up by chopping it finely with spatula. I also have used a fork and knife to cut it up while cooking to make it finer. Don't overcook meat, just brown it so there is no pink color. It's still going to cook more in the chili.
- 3. Add 4 cans of tomatoes to the large pot, and add meat and all other ingredients. BE SURE to DRAIN the BEANS and CORN or it will be too watery. Cook for 3 hours (no good chili is cooked quickly - it has to simmer on a low heat for AT LEAST 3 hours if not more.) This way all of the ingredients get a chance to mesh together and create the delicious taste.
- 4. The red pepper flakes are listed as optional - this is a very spicy chili if you use the red pepper flakes - but my child still ate it so it must be pretty good. I like spicy so it didn't bother me. I do recommend the flakes but you may want to scale down on them if you have a "finicky" eater. Enjoy!
- 5. The multi-grain tortilla chips are to eat with the chili. My child likes to scoop it up with the chips. It's also a nice way to balance out the spicy flavor, the chips soften it up a bit. And, they are healthy!
DELILAH'S WICKED 12 ALARM CHILI
This recipe features 12 different kinds of peppers, including 9 varieties of hot peppers. It's mad, wicked good, but not for the faint of heart. It's extra hot and spicy, just the way I like it! It can be served over macaroni or pasta, or simply eaten by itself

- Place the ground beef and sausage in a skillet over medium-high heat. Cook until crumbly and evenly browned, about 10 minutes. Drain.
- Place the ground beef, sausage, tomatoes, kidney beans, chili beans, black beans, black-eyed peas and cola in a large, heavy pot, and simmer over medium heat.
- Place the red , yellow and green bell peppers, yellow and red onions, and garlic on top of the bean and meat mixture. Cover and steam for at least 15-20 minutes, then stir inches.
- Stir in the jalapeno, chipotle, serrano, habanero, banana, cherry, Anaheim, and cayenne peppers.
- Season with chili powder, cumin, red pepper flakes, and taco seasoning, and desired amount of salt, black pepper ground red pepper. Cover, and simmer over medium heat, stirring occasionally, for 1-2 hours.

7 ALARM CHILI
I love the heat associated with chili and when I think chili, I think an immense amount of heat, equally balanced with flavor. This can all be done in a Crock Pot, which is my actual recommendation, but you need to par cook or sear the meats before placing them into the Crock Pot. You'll need a large Crock Pot for this chili, which contains beef chuck, ground beef, hot Italian sausage and bacon, plus canned beans and plenty of hotness from chiles.

- Par cook and/or sear the meats.
- In a 6-Qt. Crock Pot layer as follows: onions, garlic, jalapenos, habaneros, kidney beans, black beans, chipotle peppers, crushed tomatoes, ground beef, chopped bacon, hot Italian sausage & beef chuck.
- In a blender, combine the beef broth with the mole sauce and pour the mixture over top.
- Mix together all the spices and set aside.
- Cook everything but the spices in the Crock Pot at low setting for 8 hours.
- Five hours into cooking add the spices and cover with juices from the mixture.
- When done cooking, carefully mix together in the Crock Pot, or transfer contents to a 7.5-qt stock pot and mix everything together.
- Serve and enjoy.
